PERFECT SCRAMBLED EGGS

- Whisk the eggs: Whisk 3 large eggs, 1 pinch of kosher salt, 1 grind of black pepper and 3 tablespoons whole milk together until light and foamy.
- TIP: Odds are you're going to be serving these on a plate. If so, I strongly suggest you park an ovensafe one in a low oven or in hot water while you're cooking. Cold plates suck the heat right out of food.
- Add to the pan: Add 1 tablespoon unsalted butter to a 10-to-12-inch nonstick skillet and put it over high heat. When the butter bubbles (after about a minute), pour the eggs straight into the middle of the pan, which will force the butter to the edges, where it's needed.
- Scramble the eggs: Stir slowly with a rubber or silicone spatula. As soon as curds (big soft lumps) of eggs begin to form, drop the heat to low and shift from stirring to folding the curds over on themselves while gently shaking the pan with the other hand.
- Let rest: As soon as no more liquidous egg is running around the pan, kill the heat and gently transfer the scramble to the warmed plate. Let the eggs rest for 1 minute to finish cooking before serving.

All microwaves cook differently even if they are of the same size and wattage. You might need to adjust your cooking time. After you cooked your first batch, you'll know what time is best for your specific microwave and personal taste.

- Lightly oil the inside of a medium microwave safe bowl. Add the eggs, milk, salt and pepper into the bowl and beat until egg whites and yolks are evenly mixed.
- Cover with a microwave safe lid or plate.
- Microwave on High for 30 seconds. Stir the egg mixture and cover again.
- Microwave on High for 30 seconds again. Stir the egg mixture and cover again. Continue microwaving in 15 second intervals until cooked to your preference.
- Add cheese on top and cover for about 1 minute or microwave for about 15 seconds to melt the cheese. Season with additional salt and pepper if desired.

- Use a fork to beat eggs together. Melt butter in medium nonstick skillet over low heat. Add egg mixture. Using a heatproof flexible spatula, gently pull eggs to the center of the pan and let the liquid parts run out under the perimeter. Cook, continually moving eggs with the spatula, just until eggs are set, 1 1/2 to 3 minutes. Season with salt and pepper; serve hot.

- Crack four eggs into a bowl, add 30ml (2 tbsp) of milk and a pinch of salt and black pepper.
- Beat the mixture lightly with a whisk or fork.
- Melt 1 tbsp of butter in a medium size fry pan on a low heat and when it starts foaming, pour in the eggs and leave to set for 60-90 seconds.
- Using a spatula, gently pull the eggs from the edges of the pan into the centre. Turn and tilt the pan so the runny eggs take up the available space and again gently pull it towards the centre. This gentle pulling towards the centre of the pan makes lovely, light ribbons of egg.

SCRAMBLED EGGS IN THE MICROWAVE (GREAT FOR WORK!)
I can only eat so much oatmeal and peanut butter toast without getting bored. I started making scrambled eggs in the microwave to break up the breakfast monotomy at work! I serve these alongside a piece of whole wheat toast and a glass of vegetable juice. In order to cut down on unhealthy cholesterol but keep the healthy protein, I use only one egg yolk; three works fine too (just increase the water [or milk] to 3 T). I'll sometimes make these at home when I need a quick breakfast.
