¾ cup water
¼ cup rice vinegar
¼ cup ketchup

This is a very simple Carolina style vinegar based BBQ sauce. A friend of the family gave us this recipe several years ago and after a few tweaks and additions, this is the best BBQ sauce that I've ever had. You combine all of the ingredients and then enjoy. This is easily scaled up or down.

This sauce is more sweet than sour, but still has a good "twang" all the same. I used pineapple chunks because I had some leftover fresh pineapple in the freezer. You can used canned, if that's what you have, but the taste just doesn't compare to the fresh! If you prefer your sauce a bit less sweet, use canned pineapple and reduce the amount of brown sugar. We just loved this recipe, so I thought some of you might, too.

1 cup fresh pineapple chunk
1/3 cup water
3 tablespoons cornstarch
4 tablespoons vinegar

  • Place the fresh pineapple chunks, water, and cornstarch in a food processor.
  • Blend the pineapple mixture using medium to short pulses until the mixture is quite liquid.
  • Place the pineapple mixture in a small saucepan.
  • Add remaining ingredients to the sauce pan.
  • Cook over medium heat until thick. Be sure to stir constantly because the high sugar content will make it more likely to stick.

Steps:

  • Combine water and white sugar in saucepan, bring to a boil.
  • Add ketchup, return to boil.
  • Dissolve cornstarch in cold water.
  • Add cornstarch mixture to boiling mixture slowly, stirring constantly.
  • Remove from heat and continue stirring until thickened.

vegetables or peanut oil (for deep frying)
2 tablespoons light soy sauce

1 tablespoon light soy sauce
1 tablespoon tomato ketchup
1 1/2 tablespoons vegetable oil
1 green pepper, coarsely chopped

1 small carrot, finely sliced

  • combine the marinade ingredients in a bowl.
  • add spareribs, let marinade for at least 20 minutes.

  • heat enough oil in wok to deep fry spareribs.
  • deep fry ribs for about 8 minutes.
  • drain and set aside.
  • remove all but 1 tablespoon of oil from wok.
  • then stir fry the green pepper, onion, and carrot for about 3 minutes, remove from wok and set aside.
  • add 1 tablespoon of oil to wok.
  • fry the garlic and ginger root until fragrant.
  • add the sauce mixture, bring to a boil.
  • add the pineapple chunks, let boil for about 2 minutes.
  • add the ribs, bell pepper, onion, and carrot.
  • stir until warn through, and serve immediately.
