CAPE BRETON OATCAKES

This is the best oatcake recipe. It has the perfect balance between salt and sweet. This recipe comes from the Cape Breton Highlands in Nova Scotia. It is a traditional treat as we have a strong Scottish culture in this province.

2 cups flour
2 cups rolled oats
1 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup shortening
1/2 cup cold water

Steps:

  • Stir together flour, oats, brown sugar, baking powder, and salt.
  • Rub in shortening with fingertips until crumbly.
  • mix in water with a fork until a ball forms, divide in half.
  • On a floured surface roll out to 1/2" to 1/4" thickness.
  • Traditionally they are cut into 2 1/2 inch squares, then triangles but some people like circles. your choice.
  • bake on a greased baking sheet at 350 degrees for 15 minutes or until lightly browned.

These slightly sweet rounds are a cross between a cookie and a cracker. Eat them plain or with jam for breakfast, or top them with cheese for a snack.

1 1/2 cups old-fashioned oats
1 cup all purpose flour
1/2 cup sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chilled solid vegetable shortening, cut into pieces
1/4 cup buttermilk

Steps:

  • Preheat oven to 350°F. Butter 2 heavy large baking sheets. Place oats in large bowl. Sift flour, sugar, baking soda and salt into same bowl. Using fingertips, rub in shortening until mixture resembles coarse meal. Add buttermilk; stir until dough forms. Transfer dough to floured surface. Roll out dough to 1/4-inch thickness. Using 2 1/2-inch round cookie cutter, cut out rounds. Arrange on prepared sheets, spacing apart. Gather scraps, reroll and cut out additional rounds.
  • Bake oatcakes until edges are pale golden, about 12 minutes. Transfer baking sheets to racks and cool 5 minutes. Transfer cakes to racks; cool completely. (Can be prepared 3 days ahead. Store in airtight container at room temperature.)

These Scottish oat cakes make a lovely, wholesome breakfast or afternoon snack. Not too sweet, these Scottish oat cakes are wholesome and healthy.

1 1/2 cups scottish oatmeal, such as Bob's Red Mill Scottish Oatmeal
1/2 cup whole wheat flour
3/4 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 cup butter or 1/4 cup margarine, melted
1/2 cup hot water

Steps:

  • Preheat oven to 325 degrees F. Grease a baking sheet.
  • Place all but two tablespoons of the Scottish oatmeal in a bowl with flour, sugar, salt and baking powder. Stir until combined.
  • Add butter and stir until evenly distributed. With a fork, mix in water, just until moistened. Pat dough into a ball, and then flatten slightly. Sprinkle reserved 2 tablespoons oats on a board. Roll dough out 1/4 inch thick. With a 2 to 3 inch round cutter, cut dough into rounds. Re-roll and cut scraps. Place oatcakes about 1/4 inch apart on prepared baking sheet.
  • Bake at 325°F until Scottish oatcakes are golden, approximately 25 minutes. Let cool on a rack. Enjoy plain, or serve with jam or cheese.

  • If you're making your own medium oatmeal with steel-cut oats, measure out 2 cups of oats. Grind in a food processor or blender until the it is the texture of cornmeal. Measure out 1 2/3 cups (235g), and set aside a little extra for dusting.
  • Pour 1 2/3 cups (235g) of Scottish oatmeal into a mixing bowl and add the butter, salt, and baking soda. Gradually stir in enough boiling water until a pasty, but not sticky, dough is formed and the mix is well blended.
  • Turn out the dough onto a surface lightly dusted with some of the extra oatmeal. Knead gently a few times, then roll out the dough to 3-5 mm thick. Cut the dough into rounds, re-rolling the scraps as needed.
  • Heat a 10-inch cast iron skillet over medium heat until hot, then lightly butter it and evenly space 6-7 oatcakes in it. Cook them for 10-15 minutes on each side, then remove to a wire rack to cool. Repeat with the remaining ones.
