SCOTCH BONNET TOMATO SALSA



Scotch Bonnet Tomato Salsa image

Can be prepared in 45 minutes or less.

Yield Makes about 2 cups

Number Of Ingredients 8

2 garlic cloves
1 lime, the peel cut away with a serrated knife
2 scallions, chopped coarse
1/2 Scotch bonnet chili (available at specialty produce markets) or 1 serrano chili, seeded (wear rubber gloves)
1 tablespoon fresh lime juice, or to taste
6 large plum tomatoes, seeded and chopped
3 tablespoons vegetable oil
2 tablespoons chopped fresh coriander

Steps:

  • In a food processor chop fine the garlic, the lime, the scallions, and the chili, add the lime juice, the tomatoes, the oil, and the coriander, and purée the mixture. Serve the salsa with tortilla chips or with grilled meat or fish.

1 teaspoon vegetable oil
18 fresh Scotch Bonnet peppers, sliced and seeded
6 fresh jalapeno peppers, sliced
6 cloves garlic, crushed
½ cup minced onion
¾ teaspoon salt
2 cups water
¼ cup distilled white vinegar
2 tablespoons white sugar

Steps:

  • In a large sauce pan over medium-high heat, combine oil, peppers, garlic, onion, and salt; cook for 5 minutes, stirring frequently.
  • Pour in water, and cook for 20 minutes, or until the ingredients are soft. Stir frequently. Remove from heat, and allow mixture to cool to room temperature.
  • Transfer the mixture to a blender, and puree until smooth. Pour in vinegar and sugar; blend until mixed. Keep refrigerated .
