Steps:
- Thaw potatoes slightly.
- Add onion to melted butter and cook slowly until soft. Cool slightly.
- Mix sour cream, mushroom soup, and milk in a large bowl.
- Add butter and onion and mix well.
- Mix in cheese.
- Spray a 9 x 13" baking dish.
- Bake at 350F for about 1 hour until bubbling and golden on top.

This is a family comfort food. It tastes so good, but needs to be eaten in moderation as it is extremily rich. Serve with sausage or ham and corn. A variation on this dish uses any cream soup for a different flavour.

HOMEMADE HASH BROWNS
I love homemade hash browned potatoes. Sometimes good hash browns are hard to come by in a restaurant so I came up with my own recipe. I use red or Yukon Gold potatoes for these. For best results, prepare the potatoes using my recipe #77231 recipe.before making these. Figure one medium potato per serving. This gives the potatoes a jump start and prevents them from absorbing a lot of the grease and sticking together. These are really good with gravy on them. Prep time does not include the time for preparing potatoes Cook time is approximate. If you are using a skillet that is NOT non-stick, such as aluminum, preheat it on medium-high heat for 2-3 minutes with nothing in it. Not even oil. Steps:
- Dice or shred the potatoes.
- Fry bacon in a non-stick skillet until crisp.
- Remove bacon from the skillet and drain on a paper towel.
- If there is too much grease, pour some of it into a measuring cup in case you need to use it later.
- Add the chopped onions to the bacon grease.
- Saute' on medium heat until the onions are tender and slightly brown.
- Add the potatoes and mix thoroughly with the onions, using an egg spatula.
- Fry the potatoes turning them over frequently for even cooking.
- If potatoes start to stick to the bottom of the skillet, add more bacon grease or vegetable oil (about 1 tablespoon) Fry until potatoes are a nice golden brown.
- Serve with the fried bacon.

- Preheat oven to 350°F. 2 Thaw frozen hash browns or pre-cook potatoes and chop into 3/8" cubes. 3 Mix all but the parmesan with the potatoes. 4 Transfer this mix to a presprayed 9X13 inch baking dish. 5 Sprinkle the parmesan over the top. 6 Bake at 350F for 60-90 minutes. 7 This is moist, and very flavorful. Make the whole recipe, divide it into two pans and freeze one before cooking for a quick side later. Or, double or triple it for a pot luck or office size serving. Everyone will want the recipe, and more.

- Make clarified butter: Melt the butter in a small saucepan over low heat and cook until the white milk solids separate and rise to the top, about 3 minutes. Turn off the heat and carefully skim off the milk solids with a spoon; discard. Strain the remaining butter through a fine-mesh sieve and set aside (you should have about 1/4 cup clarified butter).
- Peel the potatoes and grate them on the large holes of a box grater into a colander. Squeeze out the excess moisture with your hands, then blot the potatoes dry with paper towels.
- Heat the clarified butter in a large nonstick skillet over medium-high heat. Add the potatoes to the skillet in a few piles and flatten with a spatula; sprinkle with 1 teaspoon salt, a few grinds of pepper and the paprika. Cook, undisturbed, until the potatoes start browning on the bottom, about 5 minutes. Flip, then drizzle with the cream; cook, undisturbed, until absorbed, about 2 minutes. Continue cooking, flipping the hash browns occasionally, until golden brown and crisp all over, about 15 more minutes. Season with salt and pepper.
QUICK HASH BROWNS

- The number of potatoes simply depends upon the number of people you are feeding.
- Wash and do not peel the potatoes. Microwave on high until mostly done. If using 2-3 small red potatoes for two servings this will be about 2 1/2 minutes.
- While microwaving the potatoes fill a bowl with iced water. When potatoes are done drop them into the ice water and cut them lengthwise in half to expedite cooling.
- When just cool enough to handle shred each half without peeling. Keep the peel against your palm while shredding and most of the peel will remain in your hand. Discard the peel and continue with recipe.
- Place shredded potatoes in skillet sprayed with vegetable spray and cook over medium heat until well browned. Flip and repeat.
- (I don't use salt and pepper, I had to include something else here or the system would not let me publish this. Add it if you would like.).
- NOTE: If you want to add other items to these then shred them onto a plate first, add the other items and them place in fry pan. You might want to add some diced onion, bacon or bacon bits, shredded cheese, chives or whatever you might imagine.
