Olallieberry Crisp (or any kind of berry crisp) Recipe - (3.9/5) image

Number Of Ingredients 9

4 cups fresh berries, washed, drained well (I use locally grown olallieberries, but you can use any combination that you like)
1/3 cup granulated white sugar
2 teaspoons lemon juice
1/3 cup flour
1/3 cup packed brown sugar
1/2 teaspoon cinnamon
3/4 cup quick cooking rolled oats
Pinch of salt
1/2 stick softened butter, 4 tablespoons

Steps:

  • Preheat oven to 375°F In a large bowl, add lemon juice and sprinkle sugar all over the berries. Stir, very gently, so as not to bruise or crush the berries. Place the berries into a buttered casserole (or oven-proof dish). Pat the berries, gently, to get an even surface. TOPPING/CRISP: In a bowl, add flour, brown sugar, cinnamon, quick rolled oats and salt. Add softened butter. Using either a fork, or your fingertips, incorporate the butter to make your topping. With the tip of a fork, smooth out the topping to distribute evenly over the berries. Place the dish on a baking sheet (in case of spillage)and place onto the middle rack of the oven. Bake at 375°F for approximately 45 minutes The crisp should have a golden top and there will be some "shrinkage". Allow to cool, completely. Serve with fresh whipped cream or homemade vanilla ice cream.

1 ½ cups fresh blackberries
1 ½ cups fresh raspberries
1 ½ cups fresh blueberries
4 tablespoons white sugar
2 cups all-purpose flour
2 cups rolled oats
1 ½ cups packed brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 ½ cups butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, gently toss together blackberries, raspberries, blueberries, and white sugar; set aside.
  • In a separate large bowl, combine flour, oats, brown sugar, cinnamon, and nutmeg. Cut in butter until crumbly. Press half of mixture in the bottom of a 9x13 inch pan. Cover with berries. Sprinkle remaining crumble mixture over the berries.
  • Bake in the preheated oven for 30 to 40 minutes, or until fruit is bubbly and topping is golden brown.

2 cups fresh blueberries (12 ounces)
2 1/2 cups fresh raspberries (18 ounces)
2 cups fresh strawberries, halved, or quartered if large
1/2 cup granulated sugar
3 tablespoons cornstarch
1 1/2 teaspoons grated lemon zest (2 lemons)
3 tablespoons freshly squeezed lemon juice
3/4 cup all-purpose flour
3/4 cup granulated sugar
1/2 cup light brown sugar, lightly packed
1/2 cup old-fashioned oats, such as Quaker
3/4 teaspoon ground cinnamon
3/4 teaspoon kosher salt
1/4 pound (1 stick) unsalted butter, diced, at room temperature
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F. Place 6 creme brulee dishes on a sheet pan lined with parchment paper.
  • In a large bowl, toss together the blueberries, raspberries, strawberries, 1/2 cup granulated sugar, the cornstarch, lemon zest, and lemon juice. Divide the mixture evenly among the creme brulee dishes, including any juices that collect.
  • For the crumble, combine the flour, granulated sugar, brown sugar, oats, cinnamon, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix it on low speed until the mixture is crumbly. Pinch it with your fingers until it makes large crumbles and distribute it on the berries (it will not cover them entirely). Bake for 35 to 40 minutes, until the juices are bubbly and the topping is browned. Serve warm with a small scoop of vanilla ice cream.

This is our version of Chudleigh's Apple Blossoms. Nothing beats theirs, but this is a good 2nd choice if you can't get them. Freezes well for OAMC so feel free to double the recipe and make some for another day. :)

4 apples, peeled, cored, and cubed small (northern spy or Granny Smith)
1 teaspoon lemon juice
1/2 teaspoon cornstarch
1/4 teaspoon cinnamon
4 tablespoons butter
1 cup brown sugar
1 1/2 cups self-rising flour
4 tablespoons vegetable oil
water, to mix
1 egg, mixed with
1 tablespoon water (to make an egg wash)
8 teaspoons rolled oats
8 teaspoons coarse sugar (or sugar in the raw)

Steps:

  • Preheat oven to 400° and line a baking sheet with parchment paper or a silpat.
  • FILLING: mix all filling ingredients together in a small bowl. Set aside.
  • CARAMEL: Heat caramel ingredients over medium heat; Bring to boil, stirring constantly; Let boil for about 2 minutes. Remove from heat and cool to room temperature, stirring occasionally.
  • DOUGH: Mix the flour and oil together in a bowl, and mix in just sufficient cold water to make a firm (but not sticky) dough. Divide dough into 8 equal pieces. Then roll out each into a 5-6" disc.
  • ASSEMBLY: Place 1/8th of apple filling onto center of each dough round. Fold up edges of dough up towards the center, making a cup around the filling (you could use a jumbo muffin tin for this too). Brush with eggwash.
  • To each blossom, sprinkle 1 tsp of rolled oats followed by a drizzle of caramel topping into tops of apple filling. Follow with a light sprinkle all over with sugar in the raw.
  • Bake at 400F for 25-30 minutes or until heated through. Cool on wire rack.

  • Preheat over to 400°F. TOPPING: In a medium bowl mix flour and sugar. Using a pastry blender, cut in butter until mix is crumbly. FILLING: In a small saucepan, combine sugar, cinnamon and cornstarch, then add water. Cook over medium heat until mix boils and thickens, stirring constantly. Stir in vanilla. ASSEMBLY: Place berries in a 2 quart. baking dish. Stir in hot cornstarch mix. Crumble topping over fruit. Bake 40 to 45 minutes or until topping is browned and crispy.
