SCHOOL DAYS PEANUT BUTTER CHEWS
Here is the original recipe from the San Diego Unified School District Food Services Department (printed in the local paper). Does anyone remember these goodies? Brings back memories.....YUM!

Steps:
- Combine butter, sugars, peanut butter, eggs and vanilla in a mixing bowl.
- Mix, creaming well.
- Sift together flour, baking powder and salt.
- Add rolled oats and mix well.
- Add dry ingredients to creamed mixture.
- Mix until well blended.
- Spread batter into a greased 12-by-18-inch cookie pan with sides.
- Bake at 350 degrees for 25 to 30 minutes.
- Do not over-bake.
- For the glaze: Combine powdered sugar and peanut butter.
- Gradually add hot water.
- Spread glaze on warm Peanut Butter Chews.
- Cut while warm.
- Cookies will be of a chewy consistency.

Steps:
- In a large saucepan over medium heat, combine corn syrup and white sugar. Bring to a boil, boil for one minute, and remove from heat. Stir in peanut butter until well blended. Mix in cereal until evenly coated. Drop by spoonfuls onto waxed paper.
- In a glass bowl in the microwave, or using a double boiler, melt chocolate chips and butterscotch chips, stirring frequently until smooth. Drizzle on the top of the cookies.

These Lunch Lady Peanut Butter Bars are the EXACT recipe they once served in schools! These peanut butter bars have a soft, chewy peanut butter cookie base, creamy peanut butter center and chocolate buttercream on top. These are the best peanut butter bars of all time!

- Preheat oven to 350 degrees F.
- In a large bowl, cream together butter, sugar and brown sugar together.
- Add vanilla, eggs, and 1 cup of the peanut butter; stir to combine.
- Add oats, flour, baking soda and salt and mix until well combined.
- Spray a baking sheet (half sheet jelly roll pan that is approximately 17.8 x 12.8 x 1 inch) with nonstick cooking spray and spread out dough in an even layer.
- Bake for 15 minutes and remove from oven.
- Drop remaining peanut butter (about 1 1/2 cups) by very small spoonfuls (we use a baby spoon) all over on top of warm bars. Let set for about 5-6 minutes and gently spread when peanut butter has begun to melt. It will spread easily when the peanut butter has softened on the warm bars. Don't try to spread it while still thick.
- Then let the bars cool until peanut butter has set up.
- While cooling, mix together frosting ingredients with a hand mixer until smooth and spread on top of bars.
- Cut into bars and serve.

PEANUT BUTTER CHEWIES
These were a favorite of mine in elementary school in Arkansas. They are very easy to make. My three year old son loves them and they bring back memories for me. They are also good to throw in a zip bag for travel.

- In a large pot melt sugar, corn syrup, and peanut butter together over low heat, stirring frequently and being careful not to scorch. Do not boil.
- Once melted, remove from heat and gently stir in corn flakes.
- Spoon 1/4 cup sized portions onto wax paper with a spoon. You can also butter your hands and shape into balls.

If you attended San Diego City Schools from the 70's through the 90's chances are you're familiar with these bars. I've searched for this recipe for many years and now that I've found it I'm sharing it with the WORLD! I often make these for parties and fundraisers and they're the first to go.

Steps:
- 1. Grease half sheet jelly roll pan / cookie sheet (with sides) and preheat oven to 350F. Mix butter, sugars and peanut butter until smooth and creamy. Add eggs and vanilla and continue to mix until well incorporated.
- 2. In a separate bowl sift flour, salt, and baking soda. Gradually combine with butter mixture ensuring it is mixed well.
- 3. Fold in the oats.
- 4. Press dough into pan and bake for 25 minutes or until the edges are golden brown. Do not over bake.
- 5. While waiting, prepare the frosting. For either the glaze or frosting, toss all the ingredients into one bowl and mix well. Set it aside while the chews are baking. Once the chews are done baking allow to cool for ten minutes then glaze/frost while warm. Cut into bars when completely cooled.
- 6. Yields approximately 24-32 bars. Stays well for up to a week refrigerated in a tightly sealed container.

Steps:
- Preheat oven to 350 degrees F.
- In a mixing bowl, combine butter, sugars, peanut butter and vanilla. Cream until blended.
- Add one egg at a time, beating until blended.
- Sift flour, baking powder and salt together. Add rolled oats (or coconut) and mix.
- Add dry ingredients to creamed sugar butter mixture until blended.
- Spread batter into a greased 12 x 18 sheet pan (Also called a half sheet or 2/3 sheet pan available from restaurant supply houses.).
- Bake for 20 - 25 minutes. Do not overbake. Cookies should have a chewy consistency.
- Remove and cool for 15-20 minutes while you make icing.
- Prepare icing: Combine powdered sugar and peanut butter.
- Add very hot water and beat well until smooth consistency.
- Spread on cookies while still warm. Let them cool another 15-20 minutes before cutting.
- After cutting, remove from pan to finish cooling.
- Can be cut into 2 inch to 3 inch squares. Can make three dozen depending on size of bars.

This is a easy snack. If you use the clear corn syrup this recipe is okay for any child that is on a diet where they cannot have any food coloring, dyes, or such. My ex SIL's son was on a diet for A.D.D. This was one of his favorite treats he could have.

- Line 2 large cookie sheets with waxed paper or foil.
- In 5-quart heavy Dutch oven, heat corn syrup to boiling over medium heat, stirring occasionally. Stir in peanut butter until melted. Stir in cookie mix until well blended. Cook 2 minutes, stirring constantly. (Candy thermometer should read 160°F.)
