Steps:
- Chop onion and sauté in 1 stick margarine until very soft.
- Drain and reserve margarine.
- Mix raw pork, ground round, cooked onion, 1/4 box finely crushed cracker crumbs, and 2 eggs. Form patties with 1 1/2 to 2 tablespoon meat.
- Crush another quarter box of the saltines into very fine crumbs, coat each meatball in the crumbs and gently flatten very slightly.
- Fry in reserved margarine, keeping margarine level in pan to at least 1/4 inch.
- Drain and enjoy.

This recipe is my grandfather George Franek's. He passed away recently, but this is one dish from his legacy.

- Preheat oven to 375 degrees F (190 degrees C). Mix the onions and celery together in the bottom of a large roasting pan.
- In a large bowl, thoroughly mix together the veal and pork with your hands; lightly mix in cream of mushroom soup, cracker crumbs, bread crumbs, evaporated milk, eggs, salt, marjoram, onion flakes, and pepper until well combined. Form the mixture into meat balls, dipping your hands in water between making the balls. Place the meat balls gently into the roasting pan on top of the onions and celery; cover the pan with foil.
- Bake in the preheated oven for 1 hour and remove foil. Carefully separate the meat balls where they have stuck together and return the pan to the oven until the meat balls are browned, turning every 15 minutes, 30 to 45 additional minutes.

- Saute 1 chopped onion in 1 tablespoon butter. Transfer the onion to a bowl. Add the ground meat, grated garlic cloves, breadcrumbs, egg, mustard, thyme or marjoram, ¾ teaspoon salt, and some pepper to the onions in the bowl. Mix well with your hand. Form 15 meatballs. Wet your hands a few times in between, it will be much easier to form the balls.
- Pour the stock/broth in a larger saucepan or a deeper skillet. Bring to a boil, turn the heat down, add the meatballs, cover, and simmer for 15 minutes or until the meatballs are cooked through. Remove the meatballs with a slotted spoon and keep them warm. Strain the liquid into another pot.
- Wipe the saucepan or the skillet with kitchen paper. Melt the remaining tablespoon butter and fry the second chopped onion for about 3 minutes.
- In the meantime clean the mushrooms with kitchen paper and slice them. Add them to the pan and continue cooking for 3 minutes.

- Melt one tablespoon butter in a skillet, add the onion and sauté till tender and translucent, about 5-7 minutes. Remove from the heat.
- In a large bowl, combine the beef, cooked onions (do not rinse the skillet, as you can use the same one for cooking the meatballs), cooked rice, salt, pepper, and egg, and gently mix together without over working the meat. Using a scant 1/4 cup for each, shape the meat mixture into balls.
- Melt another tablespoon of butter in the same skillet over medium heat. Add the meatballs and brown on each side, turning gently after nicely browned. This will take about ten minutes total.
- Pour the sauce over the meatballs, sprinkle with the brown sugar, salt and pepper, and gently mix around slightly.
