PAPRIKA CHICKEN SCHNITZEL WITH FRIED EGGS (HOLSTEIN)

Paprika Chicken Schnitzel with Fried Eggs (Holstein) image

This past holiday season I visited Vienna for the first time with my mom, brother and husband. We all had our fill of schnitzel. Back home, I combined elements from a few versions and a twist or 2 of my own. This dish can be made with veal, chicken or pork cutlets.

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 14

4 pieces chicken breast
Salt and freshly ground black pepper
Flour
6 eggs, divided
2 cups seasoned bread crumbs
2 tablespoons sweet paprika
A handful flat-leaf parsley, leaves chopped
1 lemon, zested and juiced, divided, plus wedges for serving
4 to 5 tablespoons extra-virgin olive oil, divided
1 jar roasted red peppers, thinly sliced
1 tablespoon butter
1 heart romaine lettuce, shredded
8 anchovy fillets
4 tablespoons capers

Steps:

  • Preheat oven to 200 degrees F. Place a baking sheet in oven to keep cooked cutlets crisp.
  • Butterfly the chicken breast pieces across the breast but not all the way through, open the meat up and set into a plastic food storage bag or 2 pieces waxed paper. Gently pound out each piece into very thin, large cutlets. Pile cutlets on a plate and season with salt and pepper.
  • Arrange a station for breading: flour, 2 beaten eggs, bread crumbs mixed with paprika, parsley and the zest of a lemon.
  • Heat just enough oil to coat the bottom of a large nonstick skillet over medium to medium-high heat.
  • Bread 2 cutlets in flour, then egg, then bread crumb mixture and cook 2 to 3 minutes on each side, transfer to oven, add a bit more oil, if necessary, and repeat. Keep the cooked cutlets hot in the warm oven. Wipe pan clean, add 1 tablespoon extra-virgin olive oil heat then add roasted red peppers, season with salt and pepper and wilt them 4 to 5 minutes.
  • While cutlets are in oven and peppers are cooking up, heat 1 tablespoon of butter in a medium skillet over medium heat. Add 4 eggs and fry to desired doneness, season with salt and pepper.
  • Arrange some lettuce on each dinner plate, top with 1 cutlet, and some of the lemon juice over top. Arrange some roasted red pepper strips, 2 anchovy fillets, 1 tablespoon capers and a fried egg, sunny-side up or over easy on top of the cutlets. Serve with lemon wedges.

VEAL CHOP HOLSTEIN SCHNITZEL

Veal Chop Holstein Schnitzel image

Provided by Anne Burrell

Time 2h

Yield 4 servings

Number Of Ingredients 14

Four 1-inch thick boneless veal chops, butterflied
Kosher salt
1 cup flour
6 eggs
2 cups breadcrumbs
Peanut or other neutrally flavored oil
4 tablespoons (1/2 stick) unsalted butter
Anchovy Caper Sauce, recipe follows
1/4 cup olive oil
2 anchovy fillets
2 cloves garlic, smashed
1 tablespoon capers, chopped
2 tablespoons unsalted butter
1 tablespoon fresh parsley leaves, chopped

Steps:

  • Place the butterflied veal chops in between layers of plastic wrap and gently pound with the flat side of a meat mallet. Sprinkle the chops generously with salt.
  • Set up a standard breading procedure: In 3 large dishes, set up one with the flour, one with 2 eggs beaten with 2 tablespoons water and one with the breadcrumbs.
  • Dust each chop in the flour and shake off the excess. Dip each chop in the egg mixture and then run through the breadcrumbs. Place the breaded veal on a sheet tray and let them hang out in the fridge for at least 1 hour to allow the breading to set.
  • Preheat the oven to 200 degrees F.
  • Add enough oil to coat a large saute pan until it is a depth of 1/4-inch. Add 2 tablespoons butter and bring the pan to a medium heat. Working in batches, fry the veal chops until they are golden brown on both sides, about 6 minutes total. Drain each chop on paper towels and salt each one as they come out of the oil. After the second chop, change out the oil and butter and fry the 2 remaining chops. Reserve the cooked chops in the warm oven.
  • Coat a nonstick saute pan lightly with oil and fry the remaining 4 eggs sunny side up. The whites should be cooked and the yolks should be warm and runny, cook for 4 to 5 minutes.
  • Top each chop with a sunny side up egg and pour over some of the Anchovy Caper Sauce. Serve immediately.
  • Wine Pairing Suggestion: Gruner Veltliner
  • In a small saute pan, add the olive oil, anchovy filets and garlic. Set the pan over medium heat and allow the garlic to brown lightly and the anchovy fillets to melt. Once the garlic is golden, it has fulfilled its garlic destiny; remove it and discard. Add in the chopped capers. Melt in the butter and finish the sauce with the parsley as you are ready to plate.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 12

5 tablespoons olive oil, divided
2 tablespoons sour cream
2 tablespoons prepared horseradish
1 large onion, thinly sliced
4 boneless pork chops (about 12 ounces total)
1/2 cup unbleached all-purpose flour
2 large eggs
1 cup panko breadcrumbs (Japanese breadcrumbs)
6 tablespoons eggplants or 6 tablespoons pepper, spread ajvar*
4 ciabatta rolls or 4 other crusty rolls, halved horizontally
4 romaine lettuce leaves, torn in half crosswise
serve with a roasted pepper and eggplant spread, available at Middle Eastern markets

Steps:

  • Whisk 2 tablespoons oil, sour cream, and horseradish in small bowl. Season to taste with salt and pepper.
  • Heat 1 tablespoon oil in heavy large skillet over medium-high heat. Add onion and sauté until beginning to soften and brown, stirring often, about 8 minutes. Reduce heat to medium-low and cook until onions are very soft and deep golden brown, stirring often, about 20 minutes. Transfer to bowl. DO AHEAD Horseradish sauce and caramelized onion can be made 1 day ahead. Cover separately and chill.
  • Place rack on rimmed baking sheet. Place pork between 2 sheets of plastic wrap, spacing apart. Using flat side of meat tenderizer or mallet, pound to thickness of 1/4 inch. Place flour in 1 shallow bowl. Beat eggs in another shallow bowl. Place panko in third shallow bowl. Sprinkle pork with salt and pepper. Working with 1 pork chop at a time, dredge both sides in flour, shaking off excess; dip in eggs to coat. Transfer to panko and press to coat pork all over. Place on prepared rack. DO AHEAD Can be made 1 hour ahead. Let stand at room temperature.
  • Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add pork to skillet and cook until golden brown and cooked through, about 3 minutes per side, adding more oil by tablespoonfuls if needed. Transfer pork to paper towels.
  • Spoon 1 1/2 tablespoons ajvar onto each roll bottom; top each with 2 tablespoons caramelized onion. Place pork atop onion, then top with lettuce. Spoon 1 rounded tablespoon horseradish sauce onto cut side of each roll top. Place roll tops on sandwiches and serve.
