CLASSIC AMERICAN MEATLOAF

2 tablespoons extra-virgin olive oil, plus more for baking dish
1/2 cup finely chopped scallions (white and green parts)
1/4 cup grated carrots
1/4 cup finely chopped onion
1 teaspoon dried thyme
1 teaspoon ground cumin
1/2 teaspoon sweet paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup ketchup
2 teaspoons gelatin
2 pounds ground beef chuck
1/2 pound ground pork
2 large eggs, beaten
1/2 cup dried bread crumbs
Kosher salt and freshly ground black pepper
1/2 cup ketchup
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard

Steps:

  • To make the meatloaf: Preheat the oven to 375 degrees F. In a small skillet, heat the oil over medium heat. Add the scallions, carrot and onion and cook until softened, about 10 minutes. Add the thyme, cumin, paprika, and garlic and onion powders. Cook until fragrant, about 1 minute. Scrape into a large bowl and let cool completely.
  • Meanwhile, heat the ketchup in the microwave until just warm to the touch. Sprinkle the gelatin over the ketchup and whisk to remove clumps. Add to the cooled vegetable mixture, then add the beef, pork, eggs, and bread crumbs. Season with salt and pepper and mix just to combine. Coat a 9x13-inch baking dish with oil and form the meat mixture into a loaf.
  • To make the glaze: In a measuring cup, stir together the ketchup, Worcestershire, and mustard. Brush a little glaze on the meatloaf and bake until the internal temperature reaches 160 degrees F, about 1 hour 15 minutes, brushing three or four times with the glaze until you've used it all. Let meatloaf rest at least 15 minutes before slicing.

2 teaspoon Worcestershire sauce
1 medium yellow onion, finely chopped
1 tablespoon kosher salt
1 1/2 teaspoon garlic salt
1 teaspoon freshly ground black pepper
1 teaspoon ground white pepper
1 teaspoon granulated sugar
1 teaspoon dry mustard
1 1/4 pound ground pork
12 ounce ground chuck
Mashed potatoes and gravy

Steps:

  • Preheat the oven to 350°. Spray a 9-by-5-inch loaf pan with nonstick spray and line with parchment paper, allowing 2 inches of overhang on each of the long sides. In a large bowl, combine the breadcrumbs with the applesauce, Worcestershire sauce, onion, kosher and garlic salts, black and white peppers, sugar and mustard; stir to form a paste. Add the pork and beef and, using your hands, gently mix until well blended. Scrape the meatloaf mixture into the prepared pan and press the mixture down slightly to remove any air pockets. Bake until the meatloaf is lightly browned and an instant-read thermometer inserted in the center registers 165°, about 1 hour. Cool the meat loaf on a wire rack for 15 minutes. Remove the meatloaf from the pan, cut into thick slices, and serve with mashed potatoes and gravy. Make Ahead: The meat loaf can be refrigerated for 4 days. Gently reheat before serving.

2 (10.75 ounce) cans condensed tomato soup, divided
1 cup uncooked instant rice
1 onion, chopped
2 cloves garlic, minced
1 tablespoon Italian seasoning
1 egg
½ green bell pepper, chopped
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, thoroughly mix together the ground beef, half of one can of tomato soup, instant rice, onion, garlic, Italian seasoning, egg, and green bell pepper; season with salt and black pepper. Reserve remaining tomato soup. Form the meat mixture into a loaf, and place into a 9x13-inch baking dish.
  • Bake the loaf in the preheated oven until browned and an instant-read meat thermometer reads 160 degrees F (70 degrees C), about 30 minutes. Remove from oven, and cover the loaf with the remaining 1 1/2 cans of tomato soup. Return to oven, and bake until the soup is hot and beginning to form a glaze on the meat, about 10 minutes.

It is rare for me to come up with a recipe that is just too good not to write down. Usually, when I cook, I like to play around with the ingredients and so I rarely make something the same way twice. But this meatloaf was as close to perfect as I could imagine. I tried to be specific in my directions but there is no way to determine ahead of time how wet the mixture will be after adding the vegetables. How wet is too wet is hard to describe, but it is better to err on the side of moisture, I'd think.

2 tablespoons butter
¾ cup diced yellow onion
2 cloves garlic, minced
¾ cup diced green bell pepper
2 ½ pounds ground sirloin
1 cup seasoned bread crumbs

⅓ cup ketchup
1 tablespoon white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 9x13-inch baking pan.
  • Melt butter in a saucepan over medium heat; saute onion and garlic until onion is translucent, 5 to 10 minutes. Add green bell pepper to onion mixture and saute until bell pepper is softened, about 3 more minutes.
  • Mix sirloin, bread crumbs, salt, and black pepper together in a large bowl with your hands; add vegetable mixture and loosely mix. Mix egg into sirloin mixture; add oats if mixture is too wet. Transfer sirloin mixture to the prepared baking pan and form into a loaf.
  • Bake in the preheated oven for 20 minutes. Whisk ketchup, sugar, honey, and hot sauce together in a bowl; brush over meat loaf. Do you really need another meatloaf recipe? Better make room for this one because you won't want to miss out on this vegetable-studded gem. From "Mrs. Rowe's Restaurant Cookbook: A Lifetime of Recipes from the Shenandoah Valley". I diced a whole small onion, omitted the green pepper, and baked in a 9" x 13" pan for 45 minutes. Makes a great cold meatloaf sandwich. Add 1/2 cup diced cooked carrots for color if you like. TIP: Try placing slices of stale bread in the bottom of the pan, under the meat mixture, to absorb grease. Discard bread after baking.

This is my sister-in-law's recipe for meatloaf. She shared with me for a family cookbook. It is sweet so you might want to cut back some on the brown sugar, I only use about 3/4 cup. Hope you enjoy it

1 cup breadcrumbs
1/2 cup ketchup
1/4 cup milk
1 medium onion, chopped
1 1/2 teaspoons salt

1 cup brown sugar, packed
1/2 cup water
1/2 cup apple cider vinegar
2 teaspoons yellow mustard

Steps:

  • In a large mixing bowl, combine ground chuck, eggs, bread crumbs, ketchup, milk, onion, salt and pepper.
  • Mix well.
  • Place and form mixture into greased loaf pan or baking dish.
  • In medium bowl, combine brown sugar, water, vinegar and mustard. Mix well. Pour over meat mixture.
  • Bake uncovered at 400°F approximately 1 hour.

4 eggs
1 onion, chopped
¼ cup barbeque sauce
¼ cup mustard

¼ cup Parmesan cheese
2 tablespoons sriracha sauce

2 tablespoons malt vinegar
1 (1.25 ounce) packet meatloaf seasoning mix
1 tablespoon salt
1 tablespoon garlic powder

5 pounds ground beef, broken into small chunks
2 pounds sausage, broken into small chunks
1 cup bread crumbs, or more as needed
2 tablespoons barbeque glaze (such as Jack Daniel's®)
2 tablespoons barbeque sauce

2 tablespoons ketchup
1 teaspoon Worcestershire sauce

Steps:

  • Mix salsa, eggs, onion, 1/4 cup barbeque sauce, 1/4 cup mustard, 1/4 cup ketchup, Parmesan cheese, sriracha sauce, soy sauce, malt vinegar, meatloaf seasoning mix, salt, garlic powder, and black pepper together in a large bowl. Stir beef and sausage into salsa mixture until thoroughly mixed. Add enough bread crumbs to bring meatloaf mixture together.
  • Line a container with plastic wrap. Pack meatloaf mixture into the container. Chill until set, 3 to 4 hours.
  • Preheat smoker to 250 degrees F (121 degrees C) according to manufacturer's directions.
  • Line a wire rack with aluminum foil. Position in a cake pan lined with aluminum foil. Use plastic wrap to lift meatloaf onto the prepared wire rack.
  • Smoke meatloaf until no longer pink in the center, about 3 hours.
  • Combine barbeque glaze, 2 tablespoons barbeque sauce, 2 tablespoons mustard, 2 tablespoons ketchup, and Worcestershire sauce in a small bowl. Baste meatloaf with topping.
  • Continue smoking until an instant-read thermometer inserted into the center reads 185 degrees F (85 degrees C), 1 to 2 hours more.

  • Remove pan from oven. Using long spatula, remove meat loaf from the pan. Place roasting pan on stove over high heat. In a small bowl, whisk flour with 2 tablespoons water. Whisk slurry into gravy. Bring liquid to boil and cook for a few minutes, stirring constantly. Season gravy with salt and pepper.
  • Slice meatloaf into 8 slices. Serve 2 slices per person with gravy.

1 large egg
1/4 pint milk
300 g white bread, cubed
1 tablespoon Dijon mustard
1/8 teaspoon dried thyme
1/8 teaspoon dried basil
1/8 teaspoon grated nutmeg
1 tablespoon parsley, finely chopped
1 medium onion, finely chopped
100 g celery, finely chopped
225 g bacon lardons, cooked
700 g minced beef
200 g ground pork
1 tablespoon Worcestershire sauce
3 slices smoked streaky bacon
1 red bell pepper, deseeded and chopped
1 yellow bell pepper, deseeded and chopped
35 ml olive oil
15 ml white wine vinegar
1 tablespoon sherry wine vinegar
1 teaspoon sugar

Steps:

  • Beat the egg and milk together and pour over the bread, let stand for 15 minutes.
  • Mash bread really well with a fork, season with salt and pepper and add the mustard, herbs, onion, celery and bacon lardons.
  • Mix well then add the meat and the Worcestershire sauce.
  • Chill for at least 2 hours, overnight is better.
  • Preheat oven to 350°F, turn the mixture into a 12x5.5-inch loaf tin and top with the bacon slices.
  • Cook for 55 minutes, take out of oven and let stand for 5 minutes before slicing.
  • To make the sauce, fry the peppers until soft, whiz in a blender with the other ingredients until smooth.
  • Pass through a sieve and season.
