2 apples, Red Delicious or 2 golden delicious apples
2 oranges
1 large bunch seedless grapes
2 bananas
1 cup strawberry
1/2 cup chopped walnuts
1 lemon, juice of
1 tablespoon vanilla
1 tablespoon rum
1/2 pint whipping cream

Steps:

  • Peel apples, oranges and bananas, cut into bite sized pieces.
  • Cut grapes in half.
  • Squeeze lemon juice over fruit.
  • Add vanilla, rum, and walnuts.
  • Chill for several hours.
  • Whip cream; fold into fruit. Decorate with strawberries.
  • Cover and refrigerate until serving time.

1 lemon, juice of
4 tablespoons sugar
1 cup granola cereal

Steps:

  • Mix lemon juice and sugar in a bowl.
  • Cut up fruit into small pieces and place in bowl, mixing after each addition to coat fruit in lemon juice/sugar mixture.
  • Add granola. Stir well and serve immediately.

An entree that transports you to Stockholm; shrimp with hard-boiled eggs, cornichons, fennel, soft buttery lettuce, and boiled baby potatoes. Bonus: Use the same pan to cook the shrimp and the potatoes.

12 ounces baby potatoes, halved (quartered, if large)
Kosher salt and freshly ground pepper
1/4 cup cornichons, sliced lengthwise, plus 2 tablespoons pickling liquid
1 teaspoon Dijon mustard
Pinch of sugar
1/3 cup extra-virgin olive oil
1 small fennel bulb, thinly sliced, plus 1/4 cup chopped fronds
1 pound large shrimp, peeled and deveined
1 head butter lettuce (8 ounces), leaves separated
4 hard-cooked eggs, halved

Steps:

  • Place potatoes in a medium saucepan; add enough water to cover by 1 inch. Add 2 tablespoons salt. Bring to a boil, then reduce heat to medium-high and cook until potatoes are easily pierced with the tip of a knife, 15 to 20 minutes. Meanwhile, whisk together pickling liquid, mustard, and sugar. Whisk in oil; season with salt and pepper. Stir in fennel fronds. Transfer potatoes to a bowl with a slotted spoon, and toss with 2 tablespoons dressing.
  • Return water to a boil; add shrimp. Remove from heat and let stand, stirring occasionally, until shrimp are bright pink and opaque, 2 to 3 minutes. With a slotted spoon, transfer to an ice-water bath until cool. Drain well. Toss lettuce and sliced fennel with 2 tablespoons dressing; arrange on a platter. Top with potatoes, shrimp, cornichons, and eggs. Drizzle with remaining dressing; serve.

This is a recipe that came from a friend that got it from her great grandmother. Because of that we have had to tweak the ingredients. It is something that my kids call for every Thanksgiving and Christmas over and over and you will too. It is amazing and is much better than regular Cranberry Salad.

1 1/2 to 2 c sugar
1 pkg cranberries
1/4 to 1/2 bunch black grapes
1 pt whipping cream
1 c nuts (pecans or english walnuts)
1/2 c sugar for whipping cream
1 tsp real vanilla for whipping cream

Steps:

  • 1. Grind the cranberries and combine with the sugar. Let them sit in your fridge overnight. Drain the next day. Drain very well to get any excess off but leaving the sweet on the cranberries. Take the grapes, wash well and de-seed them, and split in half. I use around 30-50, depending on size of grapes. Enough to make the salad pretty ( a good combination with the cranberries, don't overdo it). You can have this done the night before as well so all you have to do the next morning is whip the cream. Fold in your grapes with the cranberries and nuts. Set aside. The last step is to whip your whipping cream and add the sugar and vanilla. Fold in the whipping cream gently. It will turn to a nice pink cranberry color. Refrigerate until ready to eat.

  • Prepare your vegetables. Peel your carrots (if you want), onions and any bits of the other veg. Also, seed your cucumber. Do this by slicing the cucumber in half length wise, and then use a spoon to scoop out the seeds in the centre.
  • If you have a mandolin, set it on a thin setting and slice up the carrots, fennel, onion and radishes. You can also do this for cucumber, or chop by hand. If you don't have a mandolin, use a good sharp knife and slice your veg very thinly. Place all chopped vegetables into a bowl.
  • Mix the oil, vinegar sugar with a bit of salt and pepper. Wisk and toss with the vegetables. Then set in your fridge for at least 30min.
