Scandinavian Almond Cake image

I got this recipe when I bought a cool looking pan. It's meant to go in there, but would work just as well in a loaf pan. This cake is very almondy and moist!

1 1/4 cups sugar
1 egg
1 1/2 teaspoons almond extract
2/3 cup milk
1 1/4 cups flour
1/2 teaspoon baking powder
1/2 cup butter, melted

Steps:

  • Preheat oven to 350.
  • Spray pan with cooking spray/Pam and flour.
  • Beat sugar, egg, extract, and milk well. Add flour and baking powder. Add butter.
  • Bake for 40-50 minutes. Edges must be golden brown.
  • Cool in pan overnight before removing. Cake will break if removed too soon.
  • Sprinkle with icing sugar.

1/2 teaspoon baking powder
1/2 teaspoon fine sea salt
1 1/4 cup sugar
1 egg
2 teaspoons pure almond extract
2/3 cup whole milk
1/2 cup unsalted butter (1 stick, melted and cooled)
powdered sugar (for serving, if desired)

Steps:

  • 1. Preheat oven to 350 degrees. Grease and flour the cake pan or spray with nonstick baking spray. Place prepared pan on a rimmed baking sheet.
  • 2. Whisk flour, baking powder and salt in a medium bowl. Set aside.
  • 3. In a large bowl, whisk together sugar, egg, almond extract and milk. Add flour mixture and whisk until mixed well. Add butter and mix until fully combined.
  • 4. Pour batter into prepared pan. Place cookie sheet with pan on top into the oven. Bake for 35-45 minutes or until edges are golden brown and toothpick inserted into center comes out clean.
  • 5. Let cake rest in the pan for 10 minutes before inverting onto a serving tray. Allow the cake to cool to room temperature. Sprinkle with powdered sugar if desired and serve.

220 grams almond meal (about 2 cups)
110 grams sugar (about 1/2 cup)
50 grams powdered sugar (about 1/3 cup, heaping)
6 tsp milk
113 grams butter (1 stick), (unsalted and softened)
1/2 tsp bitter almond extract
3 medium eggs, (room temperature)
1 tbsp cardamom seeds
2 & 1/2 tbsp sugar

Steps:

  • Preheat your oven to 180°C (350°F).
  • Grease the cake tins generously and dust them with flour, then set them aside.
  • Start with the almond paste by using a food processor and combining the almond meal, sugar, powdered sugar, and milk.
  • Pulse to combine, then check the consistency of the paste. Make sure it's not too wet.
  • Add eggs, softened butter, and bitter almond extract.
  • Mix until you get a smooth almond cake batter.
  • Spoon about 2 to 3 teaspoons of cake batter into each tin.
  • Place the tray in the middle of the oven for 30 to 35 or until the top has turned golden.
  • Ground the cardamom seeds and combine them with 2 & 1/2 tablespoons of sugar.
  • Remove the almond cakes from the tins carefully and roll them in the cardamom and sugar mixture.
  • Serve and enjoy your Swedish almond cakes!

1 cup sugar
1 egg
2/3 cup milk
1 1/2 tsp almond extract
1/2 tsp baking powder
1 1/4 cup flour

slivered almonds
fresh berries
sprinkles

Steps:

  • This cake is traditionally made in a Rehrucken/Almond Cake Loaf Pan. If you don't have one you can double the recipe and bake it in a bundt cake pan instead. Whichever pan you are using prepare it by coating the pan with cooking spray.
  • Preheat the oven to 350 F.
  • Melt butter in the microwave.
  • Beat together sugar, milk, egg, and almond extract,
  • Stir the baking powder and flour into the milk mixture.
  • Mix in melted butter until thoroughly combined.
  • Fill the prepared pan with cake batter.
  • Bake the cake at 350° for 40-50 minutes or until toothpick inserted comes out clean.
  • Set the cake pan on a rack to completely cool. Do not try to remove the cake while it is warm as it might crack. When cooled, place pan upside down and tap. Sides can be loosened with a silicone or wooden tool. Don't use metal since it can scratch the pan.
  • Decorate the cake by sprinkling powdered sugar on top along with slivered almonds. You could also top it with fresh berries, sprinkles, whipped cream or ice cream.

  • In a small saucepan bring the cream to a gentle simmer. Gradually pour hot cream into the egg yolk mixture while constantly whisking. Transfer the mixture back into the saucepan and cook until thicken, stirring constantly.
  • In a large bowl beat softened butter. Gradually add chilled cream and whisk until combined. Add 2-3 tablespoons at the time.
  • Place 1 cake layer on a place or a cake stand, the spread a layer of cream, then top with the second layer cake. Spread the cream on top and sides of the cake.
  • Decoration: toast almond flakes on a dry pan, allow them to cool. Then, decorate the side and top of the cake with toasted almond flakes.
