I truly enjoy trying new recipes and baking hearty casseroles like this one for my family. This dish is easy to prepare, and baking the chops with the potatoes give the whole meal great flavor. - Susan Chavez, Vancouver, Washington

Ingredients

5 cups thinly sliced peeled potatoes
1 cup chopped onion
Salt and pepper to taste
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 cup sour cream
6 pork loin chops (1 inch thick)
Chopped fresh parsley

Steps:

In a greased 13-in. x 9-in. baking dish, layer half of the potatoes and onion; sprinkle with salt and pepper. Repeat layers. Combine the soup and sour cream; pour over potato mixture. Cover and bake at 375° for 30 minutes. , Meanwhile in a nonstick skillet, brown pork chops on both sides. Place chops on top of casserole. Cover and bake for 30 minutes. Uncover and bake 15 minutes longer or until chops are tender. Sprinkle with parsley.

Ingredients

5 potatoes, peeled and thinly sliced
1 onion, quartered then sliced
2 ½ cups Cheddar cheese, shredded
1 cup milk
3 tablespoons butter
salt and pepper to taste
5 pork chops

Steps:

Preheat oven to 350 degrees F (175 degrees C).
Place the sliced potatoes and sliced onion in a greased 9x13 inch baking dish; mix gently. Cover the potatoes and onions with cheese. Fill dish with milk halfway. Place butter in several places on top of the cheese. Place the pork chops on top. Salt and pepper to taste. Bake 60 minutes or until potatoes are tender. Turn pork chops over halfway through cooking.

5 medium potatoes, peeled and sliced
2 (14 3/4 ounce) cans cream-style corn
butter (dot here and there)
salt (to taste)
pepper (to taste)
milk (tiny amount in corners)
2 boneless pork chops

Steps:

Place peeled and sliced potatoes in a greased 11x7x2 baking dish.
Pour cream corn over potatoes.
Dot with butter.
Season with salt and pepper to taste. Add tiny amount of milk to each of the corners. Top with pork chops.
Bake in 350* oven for 1 to 1 1/2 hours or until potatoes are tender.

2 boxes Betty Crocker™ scalloped potatoes
2 cups frozen whole kernel sweet corn
1/4 cup grated Parmesan cheese
3 3/4 cups water
2 cups half-and-half
1 1/2 cups Progresso™ plain panko crispy bread crumbs
1/4 cup butter, melted
2 teaspoons chopped fresh rosemary leaves, if desired

Steps:

Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Place potatoes (from scalloped potato boxes), frozen corn and Parmesan cheese in baking dish.
In 3-quart saucepan, heat water to boiling; stir in sauce mixes (from scalloped potato boxes); stir with whisk until sauce mix is dissolved. Stir in half-and-half. Pour over potatoes and corn in baking dish. Bake 30 to 35 minutes or until potatoes are tender.
Meanwhile, in small bowl, mix Topping ingredients. Stir potatoes and corn; sprinkle topping over potatoes. Bake 7 to 10 minutes longer or until topping is golden brown. Let stand 5 minutes before serving (sauce will thicken as it stands).
