- Combine milk and soup in a microwave safe 2 quart casserole dish.
- Add in all other ingredients, stirring to coat.
- Cover and microwave on high for 10 minutes.
- Stir and then microwave for another 12 minutes, or until potatoes are tender.
BAKED SCALLOPED POTATOES
A warm and cozy comfort food that goes great with anything, fancy or plain. Use whatever type of condensed cream soup you like. I normally use broccoli, mushroom, or chicken depending on the accompanying entree. Use any milk, but not cream or half and half.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 2 quart casserole dish.
- Layer potatoes and onions into the casserole dish. Combine soup, milk and pepper in a bowl, then pour soup mixture over the potatoes and onions. The soup mixture should almost cover the potatoes and onion, if it does not add extra milk.
- Cover dish and bake in preheated 375 degrees F (190 degrees C) oven for 60 minutes or until the potatoes are cooked through. At 30 minutes, remove the casserole from the oven and stir once before returning the dish to the oven. Remove from oven and serve.

SCALLOPED POTATOES (MICROWAVE RECIPE)
All I can say is: I-Heart-Velveeta! A note: Be careful not to make this dish too deep with layers (I'd stick to two if possible). Since this is a microwave recipe, you can't foil the top, and if it's too deep, the top will start to overcook before the potatoes on bottom are soft.

- 1. Grease baking dish (1 1/4 qt dish). Arrange about 1/2 of the potatoes in the bottom of the dish.
- 2. Combine salt and flour.
- 3. Sprinkle 1/2 of the flour and salt mixture on the potatoes in the dish.
- 4. Sprinkle 1/2 of the cheese on top of the potatoes.
- 5. Repeat layering with remaining potatoes, salt/flour, and cheese.
- 6. Dot with butter.
- 7. Pour milk over top.
- 8. Cook in microwave 11 - 13 minutes or until potatoes are tender.
EASY MICROWAVE SCALLOPED POTATOES
This came from a recipe book given to me by my grandmother-in-law. I like it because it cooks in about 1/2 the time of regular (oven) scalloped potatoes, and tastes basically the same. Great for weeknights when time is at a premium, or if you have no room in the oven. (Note, I noticed other recipes for scalloped potatoes call for cheese or other ingredients - this is scalloped potatoes like my mom used to make, basically just white sauce and potatoes. We always eat ours with lots of ketchup on top!)

- Put margarine (or butter) into LARGE glass bowl, and microwave on High for 1 minute, or until melted. (If you really like cleaning your microwave, feel free to use a smaller bowl.).
- Blend in flour, salt & pepper. Gradually stir in milk.
- Microwave on High 8-10 minutes, stirring after 4 minutes.
- Layer half the potatoes and onion in a greased 2-quart casserole dish. Top with half the prepared sauce, then the rest of the potatoes and onion, then the rest of the sauce.
- Cover and microwave on High 20 minutes, or until done. (Cooking times will depend on the strength of your microwave; I think ours is in the 1,200-watt range, and 20 minutes usually works just fine for us).

- In a saucepan, melt the butter. Stir in flour, salt and pepper until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in cheese until melted. In a 2-1/2-qt. microwave-safe dish coated with cooking spray, layer a third of the potatoes, onion and cheese sauce. Repeat the layers twice. Cover and microwave on high for 25-30 minutes, stirring every 5 minutes until the potatoes are tender.

- Butter a large flat microwave-safe casserole dish (I used a Corning Ware dish about 10" square.) Place half the potatoes in the dish. Top with half the cheese and remaining potatoes.
- In a 4-cup microwavable measuring glass, combine milk, butter, salt, pepper, onion and garlic. Heat on HIGH for 2 to 3 minutes until butter is melted and milk is steaming hot (watch carefully nearing end of time to avoid boiling mixture.) Pour over potatoes in casserole dish.
- Remove cover. Top casserole with remaining cheese. Cook on HIGH 1 minute uncovered to melt cheese. (Note: If casserole dish can withstand an oven broiler, skip the microwave in this step and brown under an oven broiler 3-4 minutes or until top surface just begins to brown. (I rimmed the edges and handles of my Corning Ware dish with a double layer of heavy-duty foil for this. Wish I had a butane food torch on hand instead!)
