Scalloped Corn is a classic side dish that pairs perfectly with almost any side dish. Made with creamed corn, sweet corn, eggs, Ritz crackers, and paprika.

30 ounces creamed corn
15 ounces canned sweet corn (, drained)
3 large eggs
1 cup Ritz crackers (, divided)
1/2 cup unsalted butter (, divided)
1/2 teaspoon kosher salt
1/2 teaspoon paprika
1/4 teaspoon coarse ground black pepper

Steps:

  • Preheat oven to 350 degrees and spray a 2-quart baking dish with vegetable oil spray.
  • In a large bowl whisk together creamed corn, canned sweet corn, eggs, 1/2 cup Ritz crackers, 1/4 cup unsalted butter, salt, paprika and black pepper.
  • Pour into baking dish.
  • Mix remaining 1/2 cup Ritz crackers with remaining 1/4 cup melted butter.
  • Sprinkle cracker mixture over corn.
  • Bake for 35-40 minutes until crackers are golden brown.

3 (15 ounce) cans creamed corn
2 eggs
1 cup crushed saltine crackers
½ cup butter
½ teaspoon paprika
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter one 8x11x2 inch casserole dish.
  • In a medium sized mixing bowl, combine the creamed corn, eggs, 1/4 cup of the melted butter and 1/2 of the cracker crumbs. Pour mixture in into the prepared dish.
  • In a small bowl, mix the remaining melted butter, cracker crumbs, paprika and pepper. Sprinkle crumb topping over the casserole.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, until topping browns slightly and corn is bubbly around the edges.

2 tablespoons good olive oil
1/2 cup chopped red onion
1 small orange bell pepper, 1/2-inch diced
2 tablespoons unsalted butter
Kernels cut from 5 ears yellow or white corn (4 cups)
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons julienned fresh basil, minced fresh chives, and/or minced fresh parsley leaves

Steps:

  • Heat the olive oil over medium heat in a large saute pan. Add the onion and saute for 5 minutes, until the onion is soft. Stir in the bell pepper and saute for 2 more minutes.
  • Add the butter to the pan and allow it to melt. Over medium heat, add the corn, salt, and pepper and cook, stirring occasionally, for 5 to 7 minutes, until the corn just loses its starchiness. Season to taste, gently stir in the basil or other green herbs, and serve hot.

2 tablespoons butter
¼ cup chopped onion
¼ cup chopped green bell pepper
2 tablespoons all-purpose flour
1 teaspoon salt
½ teaspoon paprika
¼ teaspoon dry mustard
1 pinch ground black pepper
¾ cup evaporated milk
1 (14 ounce) can whole kernel corn
1 egg, slightly beaten
⅓ cup cracker crumbs
1 tablespoon melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 2 tablespoons butter in a large skillet over medium heat. Cook and stir onion and bell pepper in melted butter until the onions are translucent, 5 to 7 minutes. Stir flour, salt, paprika, and mustard into the onion mixture, reduce heat to low, and continue cooking until the mixture is bubbling, 2 to 3 minutes. Gradually stream evaporated milk into the mixture while stirring; bring to a boil for 1 minute. Add corn and egg; stir. Pour into a casserole dish.
  • Mix crackers and 1 tablespoon melted butter together in a bowl; sprinkle evenly over corn mixture.
  • Bake until golden brown, 30 to 35 minutes.

2 eggs, beaten
1/2 cup crushed saltines (about 14 crackers)
1/4 cup grated carrot
1/4 cup chopped sweet red pepper
1/4 cup butter, melted
1/4 cup evaporated milk
1 tablespoon chopped celery
1 tablespoon chopped onion
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup shredded cheddar cheese
Paprika

Steps:

  • In a large bowl, combine the first 11 ingredients. Spoon into four greased 8-oz. baking dishes. Sprinkle with cheese and paprika. Bake, uncovered, at 350° for 25-30 minutes or until set.

1 egg, beaten
1 c skim milk (or your choice)
1 c saltine crackers, coarsely crushed (about 22 2-inch square crackers), divided
1/4 tsp salt
1/8 tsp pepper
1 can(s) 16.5 oz. can cream-style corn
1/4 c onion, chopped fine
1 jar(s) 2-oz. jar diced pimento, drained
1 Tbsp vegetable oil
1 Tbsp fresh parsley, chopped

Steps:

  • 1. Heat oven to 350 degrees. Combine egg, milk, 2/3 cup cracker crumbs, salt and pepper in a medium bowl. Stir in corn, onion and pimento. Pour into an ungreased 1-qt casserole dish.
  • 2. Combine remaining 1/3 cup cracker crumbs with oil in a small bowl. Toss to coat. Sprinkle over corn mixture.
  • 3. Bake at 350 degrees for 1 hour or until a knife inserted in center comes out clean. DO NOT OVERBAKE. Sprinkle with parsley. Let stand 5-10 minutes before serving.
