1 pound fresh bay or sea scallops
Kosher salt and freshly ground black pepper
All-purpose flour, for dredging
4 tablespoons (1/2 stick) unsalted butter, divided
1/2 cup chopped shallots (2 large)
1 garlic clove, minced
1/4 cup chopped fresh flat-leaf parsley leaves
1/3 cup dry white wine
1 lemon, cut in 1/2

Steps:

  • If you're using bay scallops, keep them whole. If you're using sea scallops, cut each 1 in half horizontally. Sprinkle with salt and pepper, toss with flour, and shake off the excess.
  • In a very large saute pan, heat 2 tablespoons of the butter over high heat until sizzling and add the scallops in 1 layer. Lower the heat to medium and allow the scallops to brown lightly on 1 side without moving them, then turn and brown lightly on the other side. This should take 3 to 4 minutes, total. Melt the rest of the butter in the pan with the scallops, then add the shallots, garlic, and parsley and saute for 2 more minutes, tossing the seasonings with the scallops. Add the wine, cook for 1 minute, and taste for seasoning. Serve hot with a squeeze of lemon juice.

1/4 teaspoon celery seed
1/4 teaspoon paprika

6 ounces shrimp, peeled and deveined

Steps:

  • In large pan over medium heat, melt butter. Add salt, white pepper, celery seed, paprika, lemon juice, Worcestershire sauce, Tobasco, white wine, cocktail sauce and clam juice.
  • Add seafood, stir and bring to a full boil. Add half-and-half and return contents of pan to boil.
  • Place butter in bottom of deep bowl, pour in pan roast, sprinkle with paprika and serve.

Steps:

  • Heat olive oil in a large skillet over medium heat. Add shallot; cook and stir until lightly browned, 1 to 2 minutes. Pour in lemon juice and cook until evaporated, scraping the bottom of the skillet with a wooden spoon to release any browned bits, about 3 minutes.
  • Place scallops 1/2 inch apart in the skillet. Cook until browned on the bottom, about 1 minute. Flip and continue cooking until the second side is deeply browned, about 1 minute more.

12 medium sea scallops
1 teaspoon salt, or more to taste
5 tablespoons clarified butter (ghee), warm
2 tablespoons lemon juice
2 cloves garlic, minced
3 tablespoons clarified butter (ghee)

Steps:

  • Place scallops in a bowl and sprinkle with salt. Cover and let rest in the refrigerator for 30 minutes.
  • Combine 5 tablespoons warm butter, lemon juice, and garlic in a bowl; whisk until combined. Let sit at room temperature for 30 minutes.
  • At the same time, remove scallops from the refrigerator and let come to room temperature, about 20 to 30 minutes.
  • Melt 3 tablespoons butter in a nonstick pan over medium-high heat, making sure it does not smoke. Brush scallops with garlic mixture and add to the pan. Cook until the bottoms begin to sear and turn golden, about 2 minutes. Flip scallops, brush with garlic mixture, and cook another 2 minutes. Remove scallops from the heat and let them continue to cook while they rest, off the heat, for 5 more minutes. Plate and serve.

12 sea scallops, side muscle removed and patted completely dry
Pinch of sea salt
2 tablespoons avocado oil (or other high-heat oil)
2 tablespoons clarified butter (or regular unsalted butter)
Pinch of black pepper
1/4 cup toasted pine nuts, optional garnish
1/2 cup micro greens, optional garnish
1 (16 ounce) jar roasted red peppers, drained, patted dry and roughly chopped
1 tablespoon red wine vinegar
3 cloves garlic
2 tablespoons roughly chopped parsley
1/4 teaspoon (slightly heaping) sea salt
1/8 teaspoon black pepper
Pinch red pepper flakes
2 tablespoons olive oil

Steps:

  • To prepare the roasted red pepper sauce, place all of the ingredients into the bowl of a food processor, and process for a few minutes until completely smooth; pour the sauce into a squeeze bottle or spoon into a serving dish, and keep room temp or in the fridge. (Any unused portion will last for a couple of weeks in the fridge, and is delicious over chicken, beef, shrimp, or veggies.)
  • To sear the scallops, place a large cast-iron or other heavy bottom skillet over medium-high heat, and add in the avocado oil and the clarified (or regular) butter; once melted and the skillet it very hot and pretty much smoking, season the scallops with some sea salt, and working in batches if necessary, place the scallops larger flat-side down into the skillet.
  • Do not disturb the scallops for about 2 1/2 minutes, allowing that first side to get a nice, deep brown char; then, flip the scallops over and allow them to sear, undisturbed, on that second side for about 1 1/2 minutes, or until a golden crust forms on that side and the scallops are medium-rare and slightly firm yet tender when gently pressed.
  • Remove the scallops from the skillet and place onto a large platter to hold. Repeat with another batch, if necessary.
  • To serve, add a couple of generous spoonfuls of the roasted red pepper sauce to the bottom of a plate, and top with 3 scallops; sprinkle over a small amount of the toasted pine nuts as well as some pretty micro greens, and serve while hot. (Alternately, you can spoon or drizzle some of the sauce over top of the scallops, then top with pine nuts and micro greens.)

1-1/4 lbs dry-pack sea scallops
3 teaspoons paprika (see notes)
Salt and freshly ground black pepper
1/2 teaspoon onion powder
2 tablespoons butter
Steamed white rice
Chopped parsley for garnish (optional)
1 12-ounce jar whole, roasted red peppers, drained (see notes)
1/2 teaspoon minced garlic (about 1/2 clove)
2 teaspoons extra virgin olive oil
2 teaspoons sherry vinegar (or red wine vinegar)

Steps:

  • Remove the scallops from the refrigerator, arrange on a plate in a single layer and blot them gently with a paper towel. Set aside.
  • Prepare the seasoning blend by combining the paprika, 1/2 teaspoon salt, a few grinds of black pepper and onion powder in a small bowl. Spread the mixture on a flat plate and set aside.
  • Drain the roasted red peppers thoroughly and add them to the work bowl of a food processor along with the olive oil and sherry vinegar. Pulse until smooth, then season to taste with salt and pepper.
  • Transfer the sauce to a serving dish and set aside.
  • Working with one scallop at a time, lightly press the flat sides of each into the spice mixture and transfer to a dry plate.
  • Add the butter to a frying pan large enough to hold the scallops in a single layer with some room between them, and place on the stove over medium-high heat.
  • As soon as the butter begins to sizzle, swirl it to coat the pan and using tongs, add the scallops to the pan one at a time.
  • Cook for 1-1/2 minutes, then start turning them and cook for an additional 1-1/2 to 2 minutes on the second side. Do not overcook.
  • To serve, plate four servings of rice, spoon some sauce around it on the plate, top with scallops and garnish with parsley if desired.

2 dozen littleneck clams
1/4 cup olive oil
6 large garlic cloves, minced
1 cup clam juice
1 cup white wine
6 tablespoons barbecue sauce (use Mutha Sauce, recipe posted separately on this site)
1 teaspoon crushed red pepper flakes
1 tablespoon Worcestershire sauce
1/2-3/4 lb shrimp, in the shell
1/2 lb sea scallops (preferably dry-packed)
1 tablespoon heavy cream
10 fresh basil leaves, chopped
2 tablespoons fresh Italian parsley, chopped

Steps:

  • Give the clams a good scrubbing, discarding any with cracked or open shells. Set aside.
  • Heat the oil over medium-high heat in a pan that you can cover later.
  • Throw in the garlic and cook for a few minutes.
  • Pour in the clam juice, wine and Mutha Sauce.
  • When the mixture is bubbling, add the clams.
  • Cover and cook til the clams open, 3 to 5 minutes. Pull out the clams as they open and keep them warm. (Throw out any clams that don't open.).
  • Boil and reduce the pan juices over high heat for about 8 minutes.
  • Sprinkle in the red pepper and season up the sauce with Worcerstershire.
  • Toss in the shrimp and scallops. Simmer until they're cooked and have just turned opaque, about 4 minutes.
  • Swirl in the cream and basil.
  • Return the clams to the pan and gently stir together all the shellfish.
  • Sprinkle with parsley and serve steaming hot.

2 teaspoons all-purpose flour, optional, see notes

1 1/2 tablespoons butter
2 garlic cloves, minced
1 cup fresh basil leaves
3 to 4 lemon slices

Steps:

  • Use a paper towel to pat the scallops dry. Dust one side of the scallops with a small amount of flour, and then season with salt and pepper.
  • Heat a wide skillet over medium-high heat. Add the oil to the pan. When the oil is hot and shimmery, carefully place the scallops, seasoned-side-down, into the pan. Cook, without moving them until browned, about 2 minutes.
  • While the first side is browning, dust the unseasoned side of the scallops with a bit of flour and season them with salt and pepper.
  • Flip the scallops - if any stick to the pan, wait a few more seconds then try again, gently wiggling them side to side to help release them.
  • Add the butter and garlic to the pan, and then swirl the butter around the pan as it melts. Cook another minute or two then take the pan off of the heat. Stir in the basil leaves and lemon slices. Serve.

1/4 C water
1 TB chopped Parsley

  • 1. In large skillet, melt 1 TB butter. Add the bread crumbs, season lightly with salt & pepper and cook over moderate heat, stirring until the crumbs are golden & crisp, about 3 minutes. Scrape crumbs onto a plate. 2. Wipe out the skillet. Add the oil and heat until shimmering. Add 1 TB butter & let it melt. Add the scallops, season with salt & pepper and brown over high heat, about 2 mins total. Transfer scallops to large shallow dish. 3. Melt 1 TB butter in the skillet. Add the mushrooms, season with salt & pepper and cook over moderate heat until their liquid is almost evaporated, about 4 mins. Add the shallot and cook, stirring until softened, about 3 mins. Add the lemon juice and cook for 30 seconds. Add the water & simmer for 1 minute. 4. Return the scallops and any accumulated juices to the skillet and season with salt & pepper. Remove from heat and stir in the parsley. Spoon the scallops & mushrooms onto plates, sprinkle with the bread crumbs and serve.

  • 1. In a heavy saucepan over low heat combine clam juice, 2 tablespoons butter, chili sauce, Worcestershire sauce, gin, paprika, celery salt and tobasco; bring just to a simmer. 2. Add scallops and let cook for 30 seconds without simmering (if you see a bubble pull pan off heat for a few seconds). Add cream and milk and continue to heat until simmering until mixture is steaming hot and scallops are opaque, about 2 minutes longer. 3. Place a piece of toast in each of two bowls and then add pan roast, dividing scallops evenly. Float remaining butter on top. 1/2 tablespoon a bowl. Eat immediately.

  • Remove catch muscle if needed. Rinse scallops under cold water and thoroughly pat dry with paper towels or a clean kitchen towel. Season with salt and pepper.
  • Heat grapeseed oil in a large stainless steel, non-stick, or cast iron skillet over medium-high heat. Test the pan’s heat by sprinkling a tiny bit of water in it—if the water evaporates on contact, the pan is ready.
  • Place scallops in the pan in a single layer, leaving about an inch of space between each one and working in batches if necessary. The first scallop should sizzle on contact with the pan; if not, wait a few seconds for the pan to get hot before adding the rest.
