SEAFOOD MAC AND CHEESE



Seafood Mac and Cheese image

Mac and cheese is already terrific on its own, but it's truly decadent with the addition of seafood! Lobster or shrimp work best.

1 lb elbow macaroni
1/2 cup unsalted butter, divided
1/2 cup flour
3 cups whole milk, room temperature
1 cup heavy cream, room temperature
4 cups grated Gruyère cheese
2 cups grated sharp cheddar cheese
1 tsp coarse salt
1 1/2 lb cooked lobster, crab, and/or shrimp, etc.
1 cup panko breadcrumbs

Steps:

  • Preheat the oven to 375F.
  • Coat a 2-quart baking dish with cooking spray (or lightly coat it with butter).
  • Cook the pasta just to al dente, according to the package directions.
  • Meanwhile, melt 6 tbsp of the butter in a large pot over medium heat. Add the flour, then whisk constantly until it's fully combined, about 30 seconds. Slowly add the milk and cream, whisking constantly, until it's combined and smooth, about one minute more. Reduce the heat to low.
  • Stir in the shredded cheeses, one handful at a time, stirring to combine completely between additions. Remove from the heat and gently stir in the cooked pasta and lobster meat. Pour the mixture into the prepared baking dish.
  • Melt the remaining 2 tbsp butter and mix it with the panko bread crumbs. Sprinkle them on top of the mac and cheese.
  • Bake for about 30 minutes, or until the seafood mac and cheese is hot throughout and the breadcrumbs are golden brown. Serve immediately.

Grown up Mac & Cheese With Bay Scallops image

This is a yummy new recipe that I created today. I was thinking about making a pasta alfredo with some sauteed scallops, but things got out of control & my husband LOVED the results.

1 lb bay scallop
1/4 cup butter
3 tablespoons flour
1 cup milk (or more as needed)
1 medium sweet onion, thinly sliced
1 teaspoon minced garlic
1 cup of finely shredded cheese (I used a mixture of cheddar and muenster today because it's what I had in the house)
2 tablespoons goat cheese (to garnish)
2 cups of small penne pasta
salt and pepper, as needed

Steps:

  • Set pot of water to boil for the pasta & add pasta when water is at a rolling boil.
  • In a large pan over medium heat, heat onion and butter until onions are soft, sweet and lightly brown - add garlic at the end as it cooks much faster than onion.
  • Sprinkle the flour over the top of them and stir to make a roux. Add the milk a little at a time while stirring constantly. Don't panic if it's a little lumpy because you are making a cheese sauce anyway.
  • After thoroughly rinsing the bay scallops (they tend to be sandy) add them to the sauce in the pan and cook until the scallops are opaque. Add salt and pepper to taste.
  • Once the scallops are done, add the cheese and stir it up.
  • To plate, I garnished with goat cheese and fresh cracked pepper - very tasty addition.

1/4 cup Cream Sherry wine
Kosher salt, for the pasta water
1 tablespoon Vegetable oil
1 lb cavatappi or elbow macaroni
1 quart milk
8 Tbs unsalted butter, divided
1/2 cup all-purpose flour
12 oz Gruyere cheese, grated (4 cups)
8 oz extra-sharp Cheddar, grated (2 cups)
1/2 tsp freshly ground black pepper
1/2 tsp nutmeg
2 lbs Fresh Sea Scallops
1 1/2 cups fresh white bread crumbs (5 slices, crusts removed)

Steps:

  • 1 Remove the crust from the bread and place in the bowl of a food processor fitted with a steel blade. Pulse for 30 seconds or so until the bread crumbs are relatively fine. 2 Preheat the oven to 375 degrees F. Drizzle oil into a large pot of boiling salted water. Add the pasta and cook according to the directions on the package, 6 to 8 minutes. Drain well. Meanwhile, heat the milk in a small saucepan, but don't boil it. In a large pot, melt 3/4 of the butter and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. Still whisking, add the hot milk and cook for a minute or two more, until thickened and smooth. Off the heat, add the Gruyere, Cheddar, the pepper, cream sherry and nutmeg. Add the cooked macaroni and scallops and stir well. Place the mixture in 6 to 8 individual baking dishes. Melt the remaining butter, combine them with the fresh bread crumbs, and sprinkle on the top. Bake for 30 to 35 minutes, or until the sauce is bubbly and the macaroni is browned on the top. This mac and cheese is a fantastic one-dish meal -- it's so rich and creamy and cheesy, all you'll need is a simple green salad to serve alongside, and your menu is set. Lobster works well in this recipe, but if that seems too luxurious, use any combination of seafood you like.

1 pound elbow macaroni
6 tablespoons butter
1/2 medium onion, finely chopped
1 garlic clove, minced
1/3 cup all-purpose flour (spooned and leveled)
3 cups whole milk
1/8 teaspoon ground nutmeg
1 pound coarsely chopped cooked lobster, shrimp, crawfish, or crabmeat, or a combination
4 cups (1 pound) mixed grated cheeses, such as Parmesan, cheddar, Swiss, and fontina
1/2 cup panko breadcrumbs

Steps:

  • Preheat oven to 400 degrees. In a large pot of boiling salted water, cook macaroni 2 minutes less than al dente. Drain; rinse with cold water. Set aside.
  • While pasta is cooking, melt butter over medium in a large saucepan. Transfer 2 tablespoons melted butter to a medium bowl, and reserve. Add onion and garlic to pan; cook until softened, 3 to 5 minutes. Add flour; cook, stirring, 1 minute. Add milk; whisk until smooth. Bring to a boil; reduce to a simmer, and cook until sauce has thickened, 2 to 3 minutes. Season with 3/4 teaspoon salt, 1/2 teaspoon pepper, and nutmeg.
  • Remove pan from heat. Fold in seafood, macaroni, and cheese; transfer to a shallow 4-quart baking dish. To bowl with reserved melted butter, add breadcrumbs and Creole seasoning; toss, and scatter over macaroni mixture. Place baking dish on a rimmed baking sheet. Bake until topping is golden and sauce is bubbling, 15 to 20 minutes. Let cool 5 minutes before serving.
