SAUTEED SCALLOPS & SHRIMP PASTA

I created this tempting seafood pasta for my wife. It's a terrific meal served with crusty sourdough. If you don't like spice, skip the red pepper flakes. -George Levinthal, Goleta, California

Number Of Ingredients 14

8 uncooked shrimp (16-20 per pound), peeled and deveined
6 sea scallops (about 12 ounces)
1/2 teaspoon seafood seasoning
3 tablespoons unsalted butter, divided
1-1/2 cups (about 3 to 4 ounces) small fresh mushrooms, halved
1/2 cup frozen peas, thawed
1/4 cup finely chopped shallots
1/3 cup white wine or chicken broth
4 ounces uncooked angel hair pasta
1/4 cup plus 1 tablespoon chopped fresh parsley, divided
2 large garlic cloves, minced
1/4 to 1/2 teaspoon crushed red pepper flakes
1/4 teaspoon salt
2 tablespoons grapeseed oil

Steps:

  • Pat shrimp and scallops dry; sprinkle with seafood seasoning., In a small skillet, melt 1 tablespoon butter over medium heat. Cook and stir mushrooms about 3 minutes. Add peas; cook until vegetables are tender, about 3-4 minutes. Remove. Add shallots and 1 tablespoon butter; cook and stir until starting to soften, 1-2 minutes. Stir in wine; reduce heat to medium-low and simmer, uncovered, until ready to serve., Meanwhile, in a large saucepan, cook pasta according to package directions; drain, reserving 1/2 cup pasta water. Return pasta to pan. Over low heat, stir in 1/4 cup parsley, garlic, pepper flakes, salt, mushroom mixture and remaining butter, adding enough reserved pasta water to moisten., In a large skillet, heat oil over medium-high heat. Add scallops and shrimp; sear until scallops are golden brown and firm and shrimp turn pink, about 2-3 minutes on each side. Combine with pasta and sauce; sprinkle with remaining parsley., ,

Our scallop starter gratin is an indulgent way to start off Christmas day. Creamy and delicious, even those who don't like seafood will fall in love.

150ml milk
3 bay leaves
5 peppercorns
½ onion, peeled and left in one piece
25g unsalted butter
25g flour
250ml double cream
100g grated mature Cheddar
200g lobster meat (raw is best, but pre cooked works too)
250g raw scallops
60g breadcrumbs (either buy straight from the shops or make your own using stale bread)

Steps:

  • Put the milk, bay leaves, peppercorns and onion into a pan and heat gently, ensuring it doesn't boil, then set aside for 1 hour to infuse. Strain into a jug. Melt the butter in a different pan, stir in the flour, cook for about two minutes, then gradually whisk in the milk. Cook until the sauce has thickened. Now whisk in the cream and half the cheese.
  • Heat the oven to 200C. Divide the seafood between 4 ovenproof dishes or one shallow dish. Pour over the sauce. Mix together the breadcrumbs and remaining cheese, and sprinkle over the top of seafood. Bake for 15 to 20 minutes until the top is a little golden and the cheese has melted.

  • make the dressing,whisk together the chopped cilli,garlic.parsley,lime zest and juice and olive oil,season to taste.
  • cook the prawns and scallops in separate frying pans after heating them up first,when the prawns start turning pink add some of the dressing and stir together.
  • when the scallops start going brown on one side turn them over then add some of the dressing and stir,cook until firm then serve the prawns and scallops together

⅓ cup white wine
¾ cup vegetable stock
1 teaspoon chopped fresh ginger
1 clove garlic, minced
1 small carrot, chopped
½ leek, chopped
10 sea scallops, halved
⅓ pound tiger prawns, peeled and deveined
½ cup unsalted butter, cubed
chopped fresh chives for garnish
salt and pepper to taste

Steps:

  • Bring the wine, vegetable stock, ginger, and garlic to boil in a skillet. Mix in the carrot and leek, and reduce heat to low. Simmer 5 minutes. Mix in scallops and prawns. Stir in the butter cubes. Continue cooking until butter is melted and scallops and prawns are opaque. Sprinkle with chives, and season with salt and pepper to serve.

I've long been a fan of scallops with bacon, and scallops with chilli, and this is my combination of the two, using chorizo - the sausages, not the salami - to ooze its paprika-hot orange oil over the sweet, white scallops. It's quicker than the speed of light to make and quite as dazzling. For US cup measures, use the toggle at the top of the ingredients list.

Yield Serves: 4 as a main, 8 as a starter

Number Of Ingredients 4

110 grams chorizo
400 grams small scallops (halve them to make 2 thinner discs if they are very fat)
juice of ½ lemon
4 tablespoons chopped fresh parsley

Steps:

  • Slice the chorizo into rounds no thicker than 3mm / 1/8 inch. Heat a heavy-based pan on the hob and, when hot, dry-fry the chorizo rounds until crisped on either side (the chorizo will give out plenty of its own oil); this should take no more than 2 minutes. Remove the chorizo to a bowl and fry the scallops in the chorizo-oil for about 1 minute a side. Return the chorizo to the pan with the scallops, add the lemon juice and let bubble for a few seconds before arranging on a serving plate and sprinkling with lots of parsley.
