Chinese scallion pancake (Cong You Bing, 葱油饼) is not like any other pancake familiar to most of the people. It has a crusty and crispy surface, with scallions sandwiched between layers of pastry inside. It is a refreshing, delightful, and easy to make flatbread.

Number Of Ingredients 12

300g (10.5 oz) of all-purpose flour use
210ml (0.9 cup/7oz) of warm water
1/2 tsp of salt
2 tbsp of all-purpose flour
60ml (1/4 cup) of vegetable oil
Some chopped green onion (about 3-4 stalks)
Salt to sprinkle on the dough
4 tbsp light soy sauce
2 tbsp black vinegar
1 tsp sesame oil
3 tbsp chopped spring onions
1 tsp chili oil (Optional)

Steps:

  • Combine (A) in a mixing bowl. Mix well with a spatula.
  • Continue mixing (or with an electric mixer with the dough hook attached) until it is smooth and stay free from the bowl. Cover and rest for 30 minutes.
  • Mix (B) in a small saucepan. Heat until the oil starts boiling to form a roux. Set aside to cool.
  • Divide the dough into four. Roll each portion thinly into a long rectangle.
  • Apply the roux on the surface but leave about one cm free from the edges.
  • Sprinkle the salt and spring onion as in (C)) on the surface.
  • Roll up the dough like making a Swiss roll. Roll and stretch the dough to form a long rope.
  • Coil the rope to form a round dough.
  • Roll out to about 1/4 inch thick circle. Pan-fried over medium heat until it has charred lines and speckled spots.
  • Flip over and cover the pan for one minute. Remove the cover and continue pan-frying until both sides are golden brown. Remove from heat.
  • To make the sauce, simply combine all the ingredients in (D).

Chinese Scallion Pancake-Simplified Version image

Super easy scallion pancake, no dough kneading, no shaping process

2 cups all-purpose flour ( , measure after shifting)
420-440 ml water
1 cup finely chopped scallion ( , wash and drain well)
pinch of salt
1/8 teaspoon Chinese five spice powder ( , optional)
vegetable oil for frying

Steps:

  • In a large mixing bowl, stir water to flour and keep stirring with an egg whisk. Make sure that the water and flour is combined completely. Set aside for several minutes.
  • Go to the scallion, finely chopped and throw into the bowl with flour and water. Add pinch of salt and five spice powder; continue to stir until everything combined well.
  • Heat up around 2 tablespoons cooking oil in a pan (either big or small, it does not matter). Scoop the mixture and pour into the pan. When pouring over the mixture, do not place all of them in center, swirl it evenly by rotating the spoon to make a basic round pancake. And then use a smaller spoon or your pancake turnover to make the pancake as well distributed as possible. Pan-fry over medium fire for around 2-4 minutes until one side becomes golden brown. Turn over carefully to fry the second side for another 2 minutes. Then fry each side another 1 minute for a darker color and crisper taste.
  • Transfer out and then absorb the extra oil by kitchen paper. Repeat to finish all the pancakes.
  • When serving, as I usually make larger ones because of time issue, cut into small wedges and enjoy with family.

2 cup unshifted all purpose flour
3/4 cup water ( , 1/2 hot boiling water + 1/4 cold water)
1 tbsp. vegetable cooking oil
1 tbsp. cooking oil
2 cup chopped scallion ( , use green part only)
1/2 tsp. salt
1 tbsp. Chinese five spice powder
1 tbsp. light soy sauce
1 tsp. oyster sauce (, optional )
1/2 tbsp. sesame oil
1/4 tsp. salt
1 tbsp. chili oil
chopped green onion and coriander

Steps:

  • Mix salt with all purpose flour.
  • Prepare a large mixing bowl. Dig a small hole in center and then pour the hot water in. Wait for 10 minutes and then stir in the cold water and vegetable oil. Grasp everything to form a ball, cover and rest for 5 minutes and then knead until very smooth (around 3-5 minutes ). The dough should be quite soft. Cover the rest for 20 to 30 minutes.
  • After resting, the dough should be quite easy to roll out. Divide the large dough into 4 pieces and roll each piece into a large around circle. Brush some oil, sprinkle Chinese five spice power and chopped scallion (leave the 1 cm of the edge empty).
  • Roll up the circle into a cylinder. And further roll into the shape of a snail. Cover with wet cloth and rest for 10 to 15 minutes.Roll the snail out to another thin circle.
  • Brush some cooking oil on the pan and move the circle into the pan. Use middle fire to pan-fry until the surface becomes brown around 2-3 minutes. And turn over to fry for another 1 to 2 minutes. Use a spatula to press the circle from time and time especially the central part to ensure the circle is evenly fried.
  • Remove the circle out and cut into wedges.

An easy scallion pancake recipe with just 4 ingredients and 20 minutes of prep. Freezer-friendly & just as good as our traditional scallion pancake recipes!

6-8 scallions
salt ((to taste))
vegetable, canola, or light olive oil ((for brushing and cooking your scallion pancakes))
1 pack store-bought round, white dumpling wrappers ((14 oz. or 400g))

Steps:

  • Take the dumpling wrappers out of the refrigerator, and let them warm up a bit (they don't necessarily have to be at room temperature, but they shouldn't be cold). Wash the scallions and pat them thoroughly dry with a clean kitchen towel. Slice the scallions in half lengthwise and finely chop them.
  • Prepare a small dish of salt and a dish of oil, along with a pastry brush.
  • On a clean work surface, take a dumpling wrapper, brush it with a thin layer of oil, and lightly sprinkle with salt. Then cover with a layer of scallions. Top it with another dumpling wrapper, and lightly press it down. Repeat the process until you have 4-7 layers of dumpling wrappers.
  • Use a rolling pin to roll the layered dumpling skins into a pancake--however thick or thin you like. Rotate the scallion pancake as you roll to get a perfect round shape.
  • Heat a flat-bottomed non-stick or cast iron pan over medium heat. Spread 1 tablespoon oil around in the pan, and add the scallion pancake. Cook each side until golden brown, about 2-3 minutes per side. (Avoid using high heat, as it will burn the pancake without cooking it through).
  • If the pan looks dry after flipping the pancake, you can add another tablespoon of oil.
  • Enjoy these plain or with a dipping sauce! We've found that they go great with our dumpling dipping sauce.

I love these cakes. I serve them with wonton soup or use them as an appetizer or a snack with tea. These can be frozen after frying and reheated in a moderate oven for 10 minutes before serving. Another great recipe from my tattered copy of "Madame Wong's Long-Life Chinese Cookbook".

1 cup flour
1/2 cup water
2 tablespoons vegetable oil
2 teaspoons salt
4 scallions, chopped fine
2 tablespoons vegetable oil

Steps:

  • Put flour on a board; make a well in the center and add the water; mix into a soft, smooth dough and divide into 2 portions.
  • Roll each portion very thin.
  • Brush each with 1 tablespoon of oil; sprinkle with 1 teaspoon salt.
  • Spread half the scallions evenly on each sheet.
  • Roll each portion up like a jelly roll; coil it up so it's lying flat on the board in a spiral.
  • Flatten with a rolling pin until it is 7-inches in diameter.
  • Heat 1 tablespoon of oil in a small saute pan; add the cakes, one at a time, and fry 2 minutes on each side.
  • Cut each cake into 8 wedges (I use a pizza cutter) and serve.

Scallion pancakes are a popular dish in China, and available from restaurants and street vendors. There are many different regional variations. My version is Shanghai-style and is my grandmother's recipe. These can be frozen after step 3, and thawed and finished cooking when ready to eat.

2 cups all-purpose flour
1 tablespoon salt, divided
¾ cup boiling water
½ cup cold water, or as needed
vegetable oil, or as needed, divided
1 bunch green onions (scallions), minced

Steps:

  • Mix flour and 1 teaspoon salt together in a large bowl; pour in boiling water and quickly mix together until water is absorbed. Work cold water, about 1 tablespoon at a time, into flour mixture just until dough forms. Knead dough for 10 minutes. Cover bowl with a damp cloth and let dough rest for 40 minutes.
  • Turn dough onto a lightly floured work surface; divide into 4 equal pieces.
  • Roll 1 piece of dough into a large thin round; brush the top with vegetable oil and sprinkle with about 1/2 teaspoon salt and 1/4 the green onions. Pick up 1 end of the round and roll dough around green onions into a long scroll-shape. Take 1 scroll end and roll dough into a disk. Repeat with remaining dough, letting each disk rest for 10 minutes.
  • Heat about 1 tablespoon vegetable oil in a skillet over medium-low heat. Place 1 disk on a floured surface and roll into a 1/2-inch thick round; cook in the hot oil until golden brown, 2 to 3 minutes per side. Repeat with remaining disks.

Yield Makes 4 scallion cakes. Serves 6 to 8 as apart of a multicourse lunch

Number Of Ingredients 6

2 cups all-purpose flour, plus additional flour for kneading
3/4 teaspoon sugar
2 teaspoons sesame oil
1 1/4 plus 1/2 teaspoon salt
1/3 cup finely minced scallions
2/3 cup vegetable oil

Steps:

  • In a medium bowl, combine flour and sugar. Stir in 2/3 cup boiling water, mixing flour and water just until flour absorbs all the water. Gradually stir in enough cold water (1/4 to 1/3 cup) so that a dough is formed and pulls away from the sides of the bowl. The dough should not be sticky.
  • Remove dough from the bowl and knead on a lightly dusted board with floured hands 3 to 5 minutes, or until the dough is smooth and elastic, adding more flour if necessary. Lightly cover with a dampened cloth and allow to rest for 1 hour.
  • Redust the surface and hands with flour, and knead again for a few minutes or until smooth. Divide the dough into 4 equal pieces. As you work, always cover any unused dough with a lightly damp cloth. Using a floured rolling pin, roll each section into a 7-inch round. Lightly brush each round with sesame oil. Evenly sprinkle 1 1/4 teaspoons salt and scallions on each round, and then tightly roll each round into a fat rope. Tightly coil each rope, pinching the end of the rope into the dough to seal. Cover with a lightly damp cloth and allow to rest 15 to 20 minutes. Redust surface with flour, and using a floured rolling pin, roll each coiled bun into 7-inch rounds.
  • In a 14-inch flat-bottomed wok or skillet, heat vegetable oil over medium-high heat until oil is hot but not smoking. Carefully add one scallion round and fry 1 to 2 minutes, until golden. Carefully turn cake over and fry 30 seconds to 1 minute, or until golden brown. As the cake fries, lightly press the center with a metal spatula to make sure center is cooked. Transfer each cake to a plate lined with several thicknesses of paper towels. Continue frying the remaining scallion rounds one at a time. Sprinkle with remaining 1/2 teaspoon salt. Set oil aside to cool before discarding. Cut cakes into 6 to 8 wedges and serve immediately.
