CHINESE SCALLION PANCAKES RECIPE
These Chinese scallion pancakes are savory, chewy, crispy from the outside, and flaky from the inside. Serve as an appetizer, or for a delicious quick lunch!

- In a large bowl, mix the flour with salt, then add the hot water. Using your hands, keep mixing the dough then knead it until you get a smooth dough ball. What hot water dough is "kill" the flour, which helps create the layers that are flaky and chewy rather than soft and fluffy. Add more flour and cold water as needed. Lightly brush the dough with oil, cover it and let it rest for half an hour (or overnight in the fridge).
- Divide the dough into 4 pieces. This portion will make four 7-inch pancakes.
- Roll out the dough into a rectangle about 3mm (⅛" inch) thick. Brush with oil (or sesame oil), and sprinkle with thinly sliced scallions and seasonings if using.
- Roll the full length of the dough to create a long sausage shape, then coil into pinwheels tucking the loose end underneath.
- Flatten each pinwheel using the palm of your hands, and you can even roll it out using a rolling pin into a 7-inch pancake. Heat oil in a flat bottomed pan, and fry for 2-3 minutes on each side.
- Keep flipping the pancake to ensure that it does not burn. Drain on kitchen paper towels, cut into quarters, and serve.

SPINACH-CHEDDAR PINWHEELS

- Pat one 8-ounce tube crescent-roll dough into an 8-by-12-inch rectangle, pressing the seams. Brush with dijon mustard; top with 1/2 cup each thawed frozen chopped spinach (squeezed dry) and grated cheddar, and 1/4 cup chopped scallions, leaving a border. Season with salt. Starting with a short side, roll into a log; pinch the edge. Slice into 8 pinwheels. Bake at 350 degrees F on a parchment-lined baking sheet, 16 to 20 minutes.
PEPPERMINT PINWHEELS

- Whisk the flour, baking powder and salt in a medium bowl. Beat the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes. Add the egg and vanilla and peppermint extracts and beat until combined. Reduce the mixer speed to low and beat in the flour mixture, then increase the speed to medium high and beat until well combined.
- Divide the dough into 3 pieces. Return 1 piece to the bowl; beat in the red food coloring with the mixer until the color is fully incorporated. Beat the green food coloring into another piece of dough. Leave the last piece of dough plain. Place each piece of dough on a separate sheet of plastic wrap and pat into a 4-inch square. Wrap and refrigerate until firm, at least 1 hour.
- Lightly flour 1 piece of dough; roll out between 2 sheets of parchment paper into a 9-by-12-inch rectangle. Repeat with the remaining dough. Refrigerate the dough rectangles until firm, about 30 minutes.
- Carefully remove the top piece of parchment from each piece of dough. Flip the plain dough on top of the red dough; remove the parchment. Flip the green dough on top of the plain dough; remove the parchment. Cut the stack in half crosswise. Roll up each half lengthwise into a tight log, using the parchment to help you. Transfer to a baking sheet, cover loosely with plastic wrap and refrigerate until firm, at least 1 hour.
- Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Trim the ends of each log; slice into 1/4-inch-thick rounds and divide between the prepared baking sheets. Sprinkle with coarse sugar. (If the dough is too soft to slice, refrigerate until firm, 15 to 30 minutes.) Bake, switching the pans halfway through, until the cookies are just firm, 12 to 15 minutes. Let cool 10 minutes on the baking sheets, then transfer to racks to cool completely.
MUFFULETTA PINWHEELS
All the flavors of a favorite New Orleans sandwich, rolled up and sliced into party-sized bites. Taking advantage of how soft and malleable white bread is (remember those squishy PB&Js in your lunchbox?), we turned several slices into one large "sheet" of bread, flattened it with a rolling pin, covered it with the fillings, then rolled it all up. Make it the night before, then slice and serve on game day!

- Pulse the olives in a food processor until finely chopped; transfer to a small bowl (be sure to scrape out every last bit). Wipe out the food processor bowl. Pulse the giardiniera in the processor until finely chopped; transfer to a medium bowl, add the mayonnaise and stir to combine.
- Put an 18-inch-long piece of plastic wrap on the counter. Arrange 9 slices of the bread on the plastic in a 3-piece-by-3-piece square, overlapping the pieces by 1/4 inch. Press the overlapping parts together firmly with your fingers so they stick together. Cover the bread with another 18-inch-long piece of plastic wrap, and roll over the bread several times with a rolling pin, pressing to adhere and flatten the bread. Remove the top piece of plastic, and spread half the giardinera mayonnaise over the bread in an even layer.
- Fold half the mortadella slices in half, and place them on the bottom third of the bread square. Place half the salami slices on the mortadella, then add half the provolone slices (overlap the slices in each row). Spread half the chopped olives evenly over the cheese.
- Tightly roll up the bread and filling, starting at the bottom, using the plastic wrap to keep it together and tucking the filling in tightly as you go. Tighten the plastic wrap at the ends and pinch the ends together until you have made a very tight roll. Repeat with the remaining 9 slices of bread and fillings. Refrigerate for at least 2 hours up to overnight.
- Unwrap the logs, and slice each into twelve 3/4-inch slices.
KIELBASA AND HONEY MUSTARD PINWHEELS
This is a unique spin (or spiral!) on pigs in a blanket, the classic appetizer that's perfect for any occasion. We've swapped in diced kielbasa for the usual hot dogs, and baked honey mustard into the swirls of puff pastry. The best part: You can assemble the three-ingredient apps ahead of time and then cook them off just before your guests arrive.

- Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment.
- Unfold the puff pastry onto a lightly floured work surface. Using a rolling pin, gently roll the dough out to a 10-by-15-inch rectangle. With a small offset spatula, spread the honey mustard evenly over the dough, making sure to go all the way to the edges, then sprinkle the kielbasa pieces over the mustard.
- Starting at a long side, roll the dough into a log as you would a jelly roll, then pinch the seam shut and place onto the prepared baking sheet, seam-side down. Refrigerate the log until slightly firm, at least 30 minutes; this will make it easier to cut it into rounds. (See Cook's Note)
- Cut the chilled puff pastry log into 1/2-inch-wide slices (you should get 20 to 22 slices) and place the slices cut-side down onto the baking sheet. If needed, adjust the slice shape to form a circle. Bake until puffed and golden brown, about 18 minutes. Let cool 5 minutes before serving.

- Brush pizza dough with sesame oil. Liberally spread scallions. Salt and white pepper the pizza dough.
- Cut pizza dough into 6 x 10 inch (15 x 25 cm) pieces. Roll and coil. Rest covered with a damp towel for an hour.
- After an hour, flatten each coil of dough, roll out as flat as possible. Fry on medium heat until both sides are golden brown (5 minutes). Then cut into quarters.
- Mix the ingredients for the dipping sauce into a small bowl. Serve.

- Preheat oven to 375°F
- Do not separate dough into triangles. Gently press or roll seams to seal, but do not flatten.
- In small bowl, mix cream cheese, parmesan cheese, and rosemary.
- Spread mixture over dough.
- Roll up dough from the long side. Slice into 1/2 inch rolls.
- Please pinwheels flat onto cookie sheet or baking stone.

SOUTHWESTERN PINWHEELS
These appetizers really look and taste great! And they're really simple to make as well. The recipe can easily be doubled or tripled depending on how big a crowd your are making it for. Try using both green and red tortillas for a nice colorful platter. Cook time is for the filling's chill time.

- In a bowl, combine cream cheese, shredded cheese, scallion, salsa, cilantro and cumin and mix well.
- Spread mixture evenly over the two flour tortillas- be sure to reach to the ends.
- Place a single layer of the baby spinach leaves evenly over the crem cheese mixture.
- Roll the tortillas tightly.
- This step is important and will give the"pinwheel" look to your appetizers.
- Wrap each roll in plastic wrap, and chill for at least an hour, or up to 8 hours.
- After rolls are chilled, unwrap and cut each one in half.
- Begin from the smooth half, and cut roll into 1 inch circles.
- You should get 4 to 5 circles from each tortilla half depending on how well you tortilla"ends" hold together.
- Arrange your pinwheels cut side up on your serving platter.
- Cover and chill for up to one hour before serving.
