2 cups cooked rice
2 scallions, chopped
1 tablespoon ginger, minced
1 tablespoon garlic, minced
1 or 2 eggs
2 teaspoons soy sauce

Steps:

  • Cook coarse-chopped slab bacon in neutral oil until done; add cooked rice, chopped scallions, minced ginger and garlic; cook until rice begins to brown. Crack in 1 or 2 eggs, and continue to stir; finish with soy sauce.

Egg & Scallion Fried Rice image

Mad craving that came out insanely tasty. Ingredients are approximate because I didn't measure much which is why most things say 'to taste,' lol. I didn't include cooking or cooling time for the rice. Cooking time will depend on your method of cooking & cooling will depend as well. I set mine in my cool basement for 1/2 hour or so. I say 8-10 servings because my family of 4 each had 2nds. But each serving was probably 1c or more. ;)

2 cups white rice
3 cups water
4 tablespoons oil, divided
1 small onion, chopped
8 eggs, beaten
2 -4 tablespoons soy sauce, divided, to taste
1/2 teaspoon black pepper, to taste
sesame seeds, to taste
2 bunches scallions, chopped
1 tablespoon toasted sesame oil, to taste
salt

Steps:

  • Cook rice. I used a rice steamer. If you use a different method, the ratio may be different. When rice is cooked, spread it out on a large baking sheet & let cool completely.
  • Prep everything.
  • Chop onions & scallions.
  • Beat eggs, add 1TB soy sauce & pepper.
  • Heat wok until it is HOT. Add 1TB oil - vegetable/canola/sesame(NOT toasted!) & swirl to coat sides. Add egg mixture, swirl to coat sides. Scrape pan to cook it all quickly, scraping as you go. This will take 2-3 minutes. When all get is cooked, not just set, scrape into a bowl & set aside.
  • Add 2TB oil to hot wok. Add chopped onions. Cook until browned & softened, 3-5 minutes.
  • Add cooled rice. Every few minutes, scrape up from the bottom, so that the rice on the bottom & sides get a bit crispy. When it starts looking crispy, not burned, add soy sauce along top rim of rice & stir fry/stir up well. Keep turning up from bottom as you go along. I added another TB or so oil along the top rim of rice -- it goes down the sides coating the rice & helps to crisp it up. This will take 5 minutes or more. Take the time to let it cook & get a bit crispy.
  • Sprinkle on enough sesame seeds to make you happy & stir that in, continuing to stir up from the bottom.
  • Add 1TB (or more) toasted sesame oil to the top rim of the rice & continue to stir it from the bottom.
  • Chop up scrambled egg w/spoon & add to rice. Continue to stir from the bottom.
  • Add chopped scallions & continue to stir --.
  • Season with salt to taste, stirring well between each addition to check seasoning.
  • Add more soy sauce and/or sesame oil if it suits you. :).

Banana Leaf Wrapped Bass with Scallion-Ginger Fried Rice image

Grapeseed oil, for cooking
4 large eggs, beaten
Kosher salt and freshly ground black pepper
1 tablespoon minced garlic
4 tablespoons sliced scallions
2 tablespoons minced fresh ginger
4 cups cooked rice, hot
1 tablespoon tamari
1 teaspoon sesame oil
One 1-pound package banana leaves
Four 6-ounce pieces fresh bass or freshest fish, skin off
1 bunch fresh Thai or regular basil
1/2 cup loose tea leaves (any type)
1/4 cup extra-virgin olive oil

Steps:

  • Add water to a medium pot, fitted with a steamer insert, and bring to a boil.
  • Coat a large wok heavily with 2 tablespoons grapeseed oil and heat until the oil is almost smoking. Meanwhile, season the eggs with salt and pepper. Add the eggs to the heated oil and stir vigorously until puffed and cooked through, about 2 minutes. Remove from the wok and set aside in a bowl. To the same wok, add another 2 tablespoons grapeseed oil and heat until hot, then add the garlic, 2 tablespoons scallions and 1 tablespoon ginger and saute for 1 minute. Add the rice and eggs back in, mixing gently. Season with the tamari and sesame oil. Mix well to combine. Remove from the heat and let cool slightly.
  • Lay a banana leaf on your work surface. Place about 1/4 cup cooled rice in the middle. Sprinkle a piece of fish on both sides with salt and pepper and place on top of the rice. Top with a few Thai basil sprigs. Fold the banana leaf and wrap tightly, similar to wrapping a sandwich in foil or plastic wrap. Repeat with the remaining fish. Carefully place each piece of wrapped fish in a steamer insert, seam-side down. Add the tea leaves to the simmering water and set the filled steamer insert over the water and cover. Steam until the fish is cooked through, about 12 minutes.
  • Meanwhile, when is the fish has about 3 minutes left, heat the olive oil in a small saucepan.
  • Cut the fish packets open with scissors, then top each pieces of fish with the remaining 2 tablespoons scallions and tablespoon ginger. Spoon the hot olive oil over the top of each piece of fish and serve.

Ginger, Scallion, and Teriyaki Fried Rice image

A simple and easy yet super tasty and flavour-packed Ginger, Scallion, and Teriyaki Fried Rice! This is also a perfect way to use up whatever leftover veggies you have lying in your fridge!

220 g block extra firm tofu or other protein of choice (1/2 lb)
1 tbsp ginger scallion oil* ((see notes))
1 tbsp ginger scallion sauce*
1-2 tbsp teriyaki sauce
Pinch of salt and pepper
1/2 cup peas
1 small red bell pepper (diced)
3 cups leftover rice (I used white rice)
3 tbsp teriyaki sauce (or more! Feel free adjust according to desired taste)
3 tbsp ginger scallion sauce* (see notes)
1/8 tsp white pepper or black pepper
1 tsp dark soy sauce (for colour)

Steps:

  • Press the tofu. You can wrap the tofu in towels and place a plate on top of it until excess liquid is absorbed by the towels. You can also opt to use a tofu press.
  • Afterwards, slice them into small 1/2" (1.25cm) cubes.
  • Heat a large pan or wok over medium high heat.
  • Once hot, add in the ginger scallion oil. I like to add in the oil from the jar for extra fragrant, but you can also just use regular oil.
  • Add in the onions and sauté until translucent.
  • Add in the ginger scallion sauce. Sauté for 1 minutes until really fragrant.
  • Add in the tofu cubes and then turn up the heat.
  • Add in the teriyaki sauce. Sprinkle some salt and pepper, to taste. Mix well.
  • Leave the tofu to cook over medium high heat for it to turn lightly brown and crisp. I usually do so by leaving the tofu untouched for 1-2 minutes at a time before moving around to cook the other sides.
  • Once the tofu is cooked to your liking, add in the peas and bell pepper or other veggies of choice.
  • Leave the veggies to cook for a few minutes until tender.
  • Add in 1 tbsp (or more) of the ginger scallion sauce.
  • Add in the leftover rice.
  • Pour in the teriyaki sauce.
  • Mix the rice well and feel free to add more teriyaki sauce if needed.
  • Add in the pepper and mix well. And if using, add in the dark soy sauce, for colour.
  • Add in the remaining ginger scallion sauce and then cook down the fried rice for 2 to 3 more minutes over medium high heat. Taste the rice and feel free to season it more as needed.
  • Turn off the heat and serve the rice in a bowl! Feel free to top with some fresh scallions and more ginger scallion sauce if desired. Enjoy!!

1 tablespoon plus 1 teaspoon canola oil, divided
2 large cloves garlic, minced
4 scallions, greens included, rinsed, trimmed and thinly sliced
1 tablespoon minced ginger
4 cups leftover cooked brown rice
3/4 cup finely diced red pepper
3/4 cup cooked, shelled edamame
1/2 cup fresh or frozen, thawed, corn
6 ounces firm tofu, cut into 1/4-inch cubes
2 eggs, beaten
3 tablespoons low-sodium soy sauce

Steps:

  • Heat 1 tablespoon of oil in a wok or large skillet until very hot. Add the garlic, scallions and ginger and cook, stirring, until softened and aromatic, about 2 to 3 minutes. Add the rice, red pepper, edamame, corn and tofu and cook, stirring, until heated through, about 5 minutes. Make a 3-inch well in the center of the rice mixture. Add 1 teaspoon of canola oil, then add the eggs and cook until nearly fully scrambled. Stir the eggs into the rice mixture, then add soy sauce and incorporate thoroughly. Serve hot.

3/4 teaspoon sherry vinegar
3/4 teaspoon kosher salt, or more to taste

Steps:

  • Mix together the scallions, ginger, oil, soy, vinegar, and salt in a bowl. Taste and check for salt, adding more if needed. Though it's best after 15 or 20 minutes of sitting, ginger scallion sauce is good from the minute it's stirred together up to a day or two in the fridge. Use as directed, or apply as needed.

2 tablespoons corn or safflower oil

Steps:

  • Finely chop enough scallions to measure about 3 cups. Rinse bean sprouts and trim stringy root ends if desired.
  • Make seasoning liquid:
  • In a small bowl stir together seasoning liquid ingredients.
  • Spread rice in a shallow baking pan and separate grains with a fork.
  • In a deep 12-inch heavy non-stick skillet heat corn or safflower oil over moderately high heat until hot but not smoking and stir-fry scallions and gingerroot until fragrant, about 20 seconds. Add bean sprouts and rice wine or sake and stir-fry until sprouts begin to soften, about 1 minute. Add rice and cook, stirring frequently, 2 to 3 minutes, or until heated through. Stir seasoning liquid and add to fried rice, tossing to coat evenly.

  • Boil a big pot of water ( 2 litres) until hot and bubbling. Switch off the flame and add in the dried noodles to the hot water. Make sure the noodles is fully immersed.
