1 tablespoon olive oil
4 scallions, thinly sliced
1 1/2 cups long-grain rice
1 can (14.5 ounces) reduced-sodium chicken broth
Coarse salt and ground pepper
2/3 cup chopped (packed) fresh cilantro leaves

Steps:

  • In a large saucepan, heat olive oil over medium. Add scallions; cook, stirring occasionally, until fragrant, 3 to 5 minutes.
  • Stir in rice, chicken broth, and 1 cup water. Season with 1 teaspoon salt and 1/4 teaspoon pepper.
  • Bring to a boil; reduce to a simmer. Cover; cook until rice is tender and has absorbed liquid, about 20 minutes. Remove from heat; let stand, covered, 10 minutes more.
  • Fluff with a fork; fold in cilantro.

1 tablespoon plus 1 teaspoon canola oil, divided
2 large cloves garlic, minced
4 scallions, greens included, rinsed, trimmed and thinly sliced
1 tablespoon minced ginger
4 cups leftover cooked brown rice
3/4 cup finely diced red pepper
3/4 cup cooked, shelled edamame
1/2 cup fresh or frozen, thawed, corn
6 ounces firm tofu, cut into 1/4-inch cubes
2 eggs, beaten
3 tablespoons low-sodium soy sauce

Steps:

  • Heat 1 tablespoon of oil in a wok or large skillet until very hot. Add the garlic, scallions and ginger and cook, stirring, until softened and aromatic, about 2 to 3 minutes. Add the rice, red pepper, edamame, corn and tofu and cook, stirring, until heated through, about 5 minutes. Make a 3-inch well in the center of the rice mixture. Add 1 teaspoon of canola oil, then add the eggs and cook until nearly fully scrambled. Stir the eggs into the rice mixture, then add soy sauce and incorporate thoroughly. Serve hot.

1/2 Pound Laura's Lean Ground Beef
3 Tablespoons Vegetable oil or butter
2 Large eggs
8 Scallions
2 Cups Brown or white rice
1 Cup Green peas
2 Tablespoons Soy sauce

Steps:

  • In a skillet, over medium heat, brown the beef until cooked. Set aside.
  • In the same skillet, over medium-low heat, heat 1 tablespoon oil or butter. Scramble the eggs. When cooked add to the dish with the beef.
  • In the same skillet, over medium heat, melt 2 remaining tablespoons butter. Add the sliced white parts of the onion and cook for 5 minutes until soft and translucent. Add the rice and stir to coat with butter and onion. Let cook for 5 minutes until the rice is hot and even a bit crispy.
  • Add the peas and sliced green parts of the onion. Cook stirring for 5 minutes to soften the onion and cook the peas.
  • To finish, add the reserved cooked beef, scrambled eggs, and soy sauce. Cook stirring to heat the beef and eggs for about 2 minutes.

Mad craving that came out insanely tasty. Ingredients are approximate because I didn't measure much which is why most things say 'to taste,' lol. I didn't include cooking or cooling time for the rice. Cooking time will depend on your method of cooking & cooling will depend as well. I set mine in my cool basement for 1/2 hour or so. I say 8-10 servings because my family of 4 each had 2nds. But each serving was probably 1c or more. ;)

2 cups white rice
3 cups water
4 tablespoons oil, divided
1 small onion, chopped
8 eggs, beaten
2 -4 tablespoons soy sauce, divided, to taste
1/2 teaspoon black pepper, to taste
sesame seeds, to taste
2 bunches scallions, chopped
1 tablespoon toasted sesame oil, to taste
salt

Steps:

  • Cook rice. I used a rice steamer. If you use a different method, the ratio may be different. When rice is cooked, spread it out on a large baking sheet & let cool completely.
  • Prep everything.
  • Chop onions & scallions.
  • Beat eggs, add 1TB soy sauce & pepper.
  • Heat wok until it is HOT. Add 1TB oil - vegetable/canola/sesame(NOT toasted!) & swirl to coat sides. Add egg mixture, swirl to coat sides. Scrape pan to cook it all quickly, scraping as you go. This will take 2-3 minutes. When all get is cooked, not just set, scrape into a bowl & set aside.
  • Add 2TB oil to hot wok. Add chopped onions. Cook until browned & softened, 3-5 minutes.
  • Add cooled rice. Every few minutes, scrape up from the bottom, so that the rice on the bottom & sides get a bit crispy. When it starts looking crispy, not burned, add soy sauce along top rim of rice & stir fry/stir up well. Keep turning up from bottom as you go along. I added another TB or so oil along the top rim of rice -- it goes down the sides coating the rice & helps to crisp it up. This will take 5 minutes or more. Take the time to let it cook & get a bit crispy.
  • Sprinkle on enough sesame seeds to make you happy & stir that in, continuing to stir up from the bottom.
  • Add 1TB (or more) toasted sesame oil to the top rim of the rice & continue to stir it from the bottom.
  • Chop up scrambled egg w/spoon & add to rice. Continue to stir from the bottom.
  • Add chopped scallions & continue to stir --.
  • Season with salt to taste, stirring well between each addition to check seasoning.
  • Add more soy sauce and/or sesame oil if it suits you. :).

2 tablespoons olive oil
1 tablespoon toasted sesame oil
1 bunch scallions. (chopped)
1 2 inch piece ginger root, peeled and finely chopped
1 garlic clove. (roughly chopped)
2 teaspoons kosher salt. (divided)
3 cups cooked brown rice
1 bunch swiss chard. (stems finely chopped and leaves cut into 1-inch pieces)
4 cups baby kale. (chopped)
1 avocado. (pitted and sliced)
1/2 English cucumber. (peeled and julienned)
Toasted sesame seeds. (optional garnish)

Steps:

  • Heat a large skillet over medium-high heat. Add the olive oil and 1 tablespoon sesame oil to the pan and continue to heat for an additional minute. Add the scallion, ginger, garlic and 1/2 teaspoon salt to the pan. Cook, stirring often for about 2 minutes or until fragrant. Add the rice and toss to coat. Spread the mixture evenly over the bottom of the pan and allow to cook undisturbed for 2 minutes. Using a wooden spoon, scrape the crispy rice from the bottom of the pan and stir well to distribute.
  • Repeat this step to create layers of crispy, golden brown rice. Add the stems of the swiss chard and repeat that step one more time. Add all of the greens along with 1 teaspoon kosher salt. Carefully start to stir in the greens. It will get easier as they wilt. Cook until fully wilted and incorporated into the rice about 5 to 8 minutes. Season with the remaining 1/2 teaspoon of salt. Serve topped with sliced avocado, julienned cucumber and a sprinkling of toasted sesame seeds if desired.

Steps:

  • Finely chop enough scallions to measure about 3 cups. Rinse bean sprouts and trim stringy root ends if desired.
  • Make seasoning liquid:
  • In a small bowl stir together seasoning liquid ingredients.
  • Spread rice in a shallow baking pan and separate grains with a fork.
  • In a deep 12-inch heavy non-stick skillet heat corn or safflower oil over moderately high heat until hot but not smoking and stir-fry scallions and gingerroot until fragrant, about 20 seconds. Add bean sprouts and rice wine or sake and stir-fry until sprouts begin to soften, about 1 minute. Add rice and cook, stirring frequently, 2 to 3 minutes, or until heated through.   • It's generally best to prepare the rice the day before, although you can also do it the same day. The best way to do this is to follow the directions on your rice cooker and use a little bit less water so the rice comes out just slightly drier than usual. Let the rice cool uncovered and use a fork to break it up and fluff it. You can also refrigerate it the night before and when you're ready to use it the next day, rinse your hands in water and carefully break up the clumps of rice. The water should prevent or minimize the rice sticking to your hands.
  • Heat your wok until it just begins to smoke and add 1 tablespoon oil. Throw in the scallops and sear (without moving them) 60 seconds until they get some good color. Toss them around until they're just opaque and set aside on a plate. Beat the eggs with shaoxing wine and salt and set aside.
  • Wash and dry your wok and heat it over low heat, with 2 tablespoons oil. Add the garlic and spread it around evenly. Let the garlic fry very slowly until they just turn golden. If it goes brown, it's already burned and bitter, so keep a constant watch on it! It should take about 5 minutes for the garlic to get crispy and just start to turn light golden. When they are ready, transfer the crispy garlic to a paper towel to drain and set aside.
  • Leave the infused oil from the garlic in the wok, and raise the heat to medium high. Add the diced onions and stir-fry until translucent. Add in the rice to the onion mixture, and then pour the egg mixture evenly over all the rice. Immediately begin stirring constantly in a scoop and lift motion. This will leave all your rice coated in a thin layer of scrambled egg. After about 90 seconds of stirring, mix in the XO sauce. Season with salt and pepper to taste, and then add in the scallops and scallion. Toss for 30 seconds and serve with the fried garlic sprinkled over the top!
