- Step 1 Heat oil in medium saucepan over medium-high heat. Add tomato sauce, garlic, sofrito and sazon, cook until fragrant, about 1 minute. Step 2 Transfer liquid from can red beans to measuring cup; add enough water to measure 3½ cups. Add liquid to pot; bring to boil. Add beans, rice and sugar; stir. Bring rice mixture to a boil; reduce heat to medium low and cook, covered, until water is absorbed, about 20 min. Step 3 Remove rice from heat. Let sit until rice becomes tender, 5 minutes. Steps:
- Start the rice cooking if you want to serve it over rice.
- saute onions, garlic and peppers until tender in olive oil in a pan large enough to simmer all ingredients (about 5 minutes).
- Add everything else except cilantro and lime wedges and simmer for 8 minutes.
- Sprinkle with cilantro and serve with lime wedges.
SAZON RICE
Goes great with Mexican food. I can't remember where I picked this recipe up, but originally I found it on the internet. Unfortunately, I didn't have the url on the printout I had laying around. Originally it called for 1 packet of Sazon seasoning, but I used dry Sazon instead. If you don't have that, you might try using some Mexican seasoning blend with perhaps a little bit of annato.

- Combine all ingredients in a small saucepan and bring to a boil.
- Reduce heat, cover, and simmer for about 15-20 minutes or until water is absorbed and rice is tender.
- Allow to sit 5-10 minutes undisturbed, then remove lid and fluff rice with a fork before serving.
RED BEANS AND RICE
This is an authentic Puerto Rican recipe for rice & beans. You can also substitute other beans in place of the kidney beans, such as pinto beans or navy beans.

Steps:
- In a large heavy pot, with a tight fitting lid, put the 2 and 1/2 cups water, the tablespoon of vegetable oil and 1/2 teaspoon of salt.
- Bring to a boil and stir in the rice.
- Bring to a boil again over medium high heat.
- Stir.
- Boil for about 1 minute and then put on the lid and reduce the heat to medium low.
- Cook for about 20 minutes WITHOUT LIFTING THE LID.
- After the 20 minutes or so, take off the lid and with a large spoon begin lifting the rice from the bottom and bringing it to the top.
- Check for doneness.
- If not quite done, put the lid back on for another 10 minutes and check again.
- When done, put the lid back on and reduce heat to low for another 5-10 minutes and then turn off the heat.
- (The best type of pan to use for this is a heavy cast aluminum dutch oven type pan--do not try to use stainless steel pans for this).
- Beans: In a medium saucepan put the can of beans, the tomato sauce, salt, Goya Sazon con Achiote, Goya Sofrito, garlic powder, and the cubed cooked potato.
- Place over medium low heat and cook stirring occasionally without a lid until it is thickened and hot.
