HOMEMADE WINE
This is an easy recipe for homemade wine. You can choose whatever flavor you like but my favorite is the red. You will need a sterile milk jug, a large latex balloon and a rubber band to complete the project. This Wine is a bit stronger than regular table wine. Its great for cooking as well as drinking.

Steps:
- Combine the yeast, sugar and juice concentrate in a gallon jug. Fill the jug the rest of the way with cold water. Rinse out a large balloon, and fit it over the opening of the jug. Secure the balloon with a rubber band.
- Place jug in a cool dark place. Within a day you will notice the balloon starting to expand. As the sugar turns to alcohol the gasses released will fill up the balloon. When the balloon is deflated back to size the wine is ready to drink. It takes about 6 weeks total.

SAWINE (VERMICELLI KHEER)
Kheer is a sweet dessert-like dish. In Trinidad, we eat sawine every Eid. In India, kheer is eaten as a regular dessert.

Steps:
- Heat ghee in a saucepan over medium heat. Add vermicelli; cook and stir until golden brown, 2 to 3 minutes. Pour evaporated milk and water over vermicelli; bring to a boil.
- Stir sweetened condensed milk and cinnamon into vermicelli mixture; cook, stirring occasionally, until vermicelli is cooked and milk is thickened, 5 to 10 minutes.
- Stir raisins into vermicelli mixture; cook until raisins are plump and mixture is thickened, about 5 minutes. Remove from heat and cool slightly. Serve garnished with almonds.

SAWINE
Sawine is a Muslim sweet for Eid from Trinidad and Tobago. I got that recipe from a sister from Trini. I haven't tried it yet but God Willing I will this year. There are also rice vermicelli available on the market, for those who eat Gluten-free.

Steps:
- 1) In a heavy skillet, parch vermicelli until golden brown. (It helps to break the vermecelli into small pieces and parch with some butter or ghee).
- 2) In a large deep pot bring water, cinnamon and salt to a boil.
- 3) Add vermicelli and cook on low heat until most of the water has evaporated and vermicelli is tender.
- 4) Add milk, sugar to taste, almond, raisins and cherries and cook for a minute or two.
