TANGY GINGER SLAW
Crunchy and tart with an Asian twist, this fresh-tasting slaw is just the thing for a picnic basket or lunch box. Joanna Trupiano of Gloucester, Massachusetts submitted the recipe.

Steps:
- In a small bowl, combine the cabbage, carrot, onion and radishes. In another bowl, whisk the vinegar, lime juice, oil, garlic, ginger, sugar, salt and pepper flakes. Pour over cabbage mixture; toss to coat. Cover and refrigerate for at least 1 hour. Sprinkle with sesame seeds just before serving.

CREAMY GINGERED PINEAPPLE SALAD DRESSING
A quick an easy salad dressing. This is wonderful over grilled pork or a green salad with fresh citrus; as well as grilled chicken and seafood. The pineapple juice is just from a can of sliced pineapple (unsweetened), and I will use the pineapple as a garnish, often grilling it. Fresh ginger and the honey dijon mustard really makes a difference in this dressing.

- Option -- You can use a mix of orange juice and pineapple rather than all pineapple if you think pineapple is too sweet. I happen to love it with the mustard and ginger. But you can mix the two if you prefer.
- Dressing -- Just add all the ingredients and whisk well to combine. Chill at least 30 minutes.
- Serve -- ENJOY! Serve over your favorite greens, pork, chicken, or seafood.

SHREDDED CABBAGE SLAW WITH GINGER VINAIGRETTE
An Asian twist on classic coleslaw, this bright salad combines red and green cabbage varieties and gets its tang from yuzu-infused rice-wine vinegar, a generous squeeze of lime, and freshly grated ginger.

- Whisk together vinegar, lime juice, ginger, and sugar. Whisk in oil; season with salt and pepper. Toss in a large bowl with cabbages and carrots. Top with sesame seeds.
SAVOY SLAW WITH GINGER PINEAPPLE DRESSING

- To make the dressing, puree the dressing ingredients in a blender or food processor until smooth. Cut the water chestnut slices into thin strips. To make the salad, toss the coleslaw mix, water chestnuts, carrots, half of the candied ginger, and the dressing in a serving bowl. Allow to rest for 20 minutes before serving. This is a light, non-mayonnaise based, slaw that's a little different than the ordinary cole slaw. It's especially good when paired with bbq food or fish and chips.

- Chill cabbage, carrots, onions and cilantro.
- Combine and wisk lime juice, sugar, oil, ginger, salt and pepper to taste and red pepper (optional) in a small bowl.
- Place all other ingredients in a large bowl.
- Toss the salad with the dressing.
- Refrigerate salad 10 minutes before serving.
