BRAISED WHITE CABBAGE

The combo of sliced white cabbage, bacon and fresh thyme is a total classic and has bags of lovely flavour.

565 ml organic chicken or vegetable stock
6 rashers of higher-welfare smoked streaky bacon
a few sprigs of fresh thyme
1 white cabbage
1 small knob of unsalted butter
extra virgin olive oil

Steps:

  • Pour the stock into a large pan, then add bacon and pick in the thyme leaves. Place over a medium heat and bring to the boil.
  • Meanwhile, discard the tatty outer leaves from the cabbage, then halve and very finely slice the rest, discarding the tough core.
  • Once boiling, add the cabbage to the stock, mix well, pop the lid on and boil furiously for 5 minutes.
  • Turn the heat down to a simmer and continue to cook until the cabbage is a pleasure to eat, topping up with a little extra stock or water, if needed.
  • Add the butter and a good lug of extra virgin olive oil, season to taste with sea salt and black pepper, then serve immediately.

1 leek
750 g carrots
4 cloves of garlic
25 g toasted almonds, plus extra to serve
a few sprigs of fresh dill
50 g feta cheese
2 tablespoons olive oil, plus a drizzle extra
1 teaspoon cumin seeds
8 big savoy cabbage leaves

Steps:

  • Preheat the oven to 180ºC/gas 4.
  • Trim and finely chop the leek, chop the carrots, and peel and finely chop the garlic. Chop the almonds, plus a few extra to serve, then toast until golden. Pick the dill, then cube the feta.
  • Heat the oil in a pan over a low-medium heat, and sauté the leek and carrots for a few minutes. Add the garlic, cumin seeds and a splash of water, season, then cover and gently cook until the veg is soft, about 5 minutes. Stir often, adding water if it catches.
  • Blanch the cabbage leaves in boiling salted water for 2 to 3 minutes, drain and lay out on a board. Fold most of the almonds, the dill and feta into the veg mix, then spoon 3 tablespoons into the centre of each leaf.
  • Roll up and place, seam-side down, in a baking dish. Drizzle with oil, cover and bake for 15 minutes. Serve with a the reserved almonds on top.

I love savoy cabbage and we serve it as a side to almost anything. This is one of my favorite ways to make it, quick and easy with a little butter and cream.

1 head savoy cabbage, sliced
3 tablespoons butter
¼ cup heavy whipping cream, or to taste
salt and freshly ground black pepper to taste
⅛ teaspoon ground nutmeg, or to taste

Steps:

  • Place savoy cabbage in a pot, cover with cold water, and bring to a boil. Cook for 1 minute, remove from heat, and drain. Rinse under cold water. Squeeze savoy cabbage as dry as possible with your hands.
  • Melt butter in a pot and add savoy cabbage. Add cream and season with salt, pepper, and nutmeg. Cook until cabbage is soft and creamy, 2 to 4 minutes.

FARFALLE WITH SAVOY CABBAGE, PANCETTA, THYME, AND MOZZARELLA



Farfalle with Savoy Cabbage, Pancetta, Thyme, and Mozzarella image

10 rashers pancetta, thinly sliced
Olive oil
1 clove garlic, finely chopped
1 good handful thyme
1/2 large Savoy cabbage, halved and finely sliced
Handful Parmesan cheese, grated
1 pound dried farfalle
Seasoning: salt and freshly ground black pepper
1/2 pound buffalo mozzarella, diced into 1-inch pieces
Pine nuts, toasted

Steps:

  • In a pan fry off pancetta in a little olive oil until lightly golden. Add garlic and thyme and soften. Place in Savoy cabbage with the Parmesan then stir around and put the lid on the pan. Cook for a further 15 minutes, shaking every now and again, while you cook farfalle in salted boiling water until al dente. When the cabbage is nice and tender, season and loosen with some nice peppery extra virgin olive oil. Toss the drained farfalle into the cabbage and at the last minute mix in mozzarella and pine nuts. Serve immediately.;

This comforting recipe for savoy cabbage curry with black kale and potato from Meera Sodha's celebrated Fresh India cookbook makes a wonderfully simple vegetarian main dish, perfect for a flavour-packed midweek meal.

Steps:

  • Lightly grind the coriander and cumin seeds with a pestle and mortar. Put the oil into a large lidded frying pan over a medium heat and, when hot, add the curry leaves and mustard seeds. When they crackle, add the onion. Cook for around 10 minutes, until golden and sweet, stirring occasionally. Add the crushed coriander and cumin, followed by the potatoes. Cook for 10 minutes, turning every now and then until crispy. Add a couple of tablespoons of water, cover with the lid and cook for a further 5 minutes, until the potatoes are tender and no longer resist the point of a knife. Finally, add the shredded cabbage and black kale to the pan with a couple of tablespoons of water and stir-fry for 3 minutes. Add the salt, chilli and turmeric, mix well, cover with the lid, reduce the heat to low and cook for another 4 minutes, or until the cabbage and black kale have wilted. Serve with a fiery pickle, hot chapattis and a dollop of yoghurt, or alongside dal and rice.
