WINE COOKIES / CIAMBELLE AL VINO
Steps:
- Pre-heat oven to 350° (180° celsius)
- In a medium mixing bowl add wine, oil, sugar, salt and baking powder (add anise seeds if using) mix well, gradually add flour, a little at a time, until it all comes together.
- Transfer to a slightly floured flat surface and knead lightly approximately 10 times. Dough will be soft, so don't work it too much.
- Cut off a little dough at a time, roll into a small chubby rope (about 5 inches (13 centimeters long) and bring ends together to form a circle. Dip in sugar and and place on parchment covered cookie sheets, bake for approximately 25-30 minutes, or golden in colour. Enjoy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine the flour, baking powder and sugar. Add the wine and oil. Mix with a large fork and then with your hands.
- Roll small pieces of dough between hands to make "logs" then shape into circles. The circles should be no bigger than the 2 inches in diameter. Roll cookies in extra sugar and place on cookie sheet.
- Bake at 350 degrees F (175 degrees C) for 25 minutes or until slightly brown. After cookies cool they should be hard and crisp.

EASY SAVOURY MINCE
Savoury mince just the way your grandmother made it - warming, comforting and delicious, it's a taste of home to treasure.

- Heat the oil in a shallow casserole dish or saute pan that has a tightly fitting lid. Add the onion and cook for a fry for a few minutes, then add the garlic and cook for another minute or so, until starting to turn golden.
- Add the mince to the onion to cook. It's best to do this in stages so that the mince has enough room in the pan to fry, rather than steam. Cook until all the meat is browned and there is no liquid left in the pan.
- Add the flour and stir in. Continue to cook, stirring all the time. Make sure nothing sticks to the bottom of the pan and burns.
- Add herbs, tomato puree and beef stock, together with wine and yeast/beef extract/ soy sauce / Worcestershire sauce if used. Stir briefly, and bring to a gentle simmer.
- Turn the heat right down and cover with the lid. The dish should be on a very gentle simmer. Leave for 20 minutes.
- After 20 minutes, it should be dark and glossy, with a rich, thick gravy. Add the frozen vegetables and cook for a further 5-8 minutes.
- Serve with potatoes, rice, pasta or on toast as a sloppy joe. Or allow to cool and freeze.

SAVOURY RED WINE COOKIES
A flavorful "cookie" to enjoy with that special glass of Wine. Recipe came from the magazine distributed at the liquor store. Great for making up a batch and giving to holiday hosts with a bottle of red. (recipe calls for 2 kinds of paprika, I only used regular paprika, old white cheddar cheese, hard margarine in place of butter, and an all-purpose gluten free flour blend) Dough and baked cookies both freeze well

- use hands, mixer or food processor to combine all ingredients except the tomatoes.
- Mix to blend and form into a supple dough.
- Remove the dough to counter and knead in tomatoes.
- Shape into a log and wrap tightly in foil or plastic wrap and chill at least 30 minutes.
- Preheat oven to 400°F
- Use a sharp, thin knife to slice the dough into 1/4' rounds.
- Arrange on greased cookie sheet and bake 10-15 minutes or until golden.
- Cool and store in an airtight container.

From Jo Ann Shirley's 1978 Cakes and Cookies cookbook. These use sweet wine to flavor the dough and are cut into little rounds. You could leave the nuts off the top if you want to cut down the preparation time or if you just don't like nuts.

- Sift together flour and salt. Add alternately with wine. Mix well. Chill.

- Preheat the oven to 350°F
- Stir the first four dry ingredients together in a large bowl.
- Stir in the oil and wine until well combined.
- Roll the dough into a ball, cover with plastic wrap and let rest for 30 minutes.
- Take a golf ball-sized piece of dough and roll it out until it's about 3/8 inch (1 centimeter) thick. Cut off into 4 inch (10 centimeter) lengths.
- Shape each length into a circle, overlapping the ends. Usually the circles are slightly oblong. No need to dust the rolling surface: the oil keeps the dough from sticking to your hands or work surface.
- Dust the ciambelline abundantly in granulated sugar on both sides and place on a cookie sheet.
- Bake the ciambelline for 20 minutes, or until they are a rich golden color and the sugar on the bottom of the ciambelline is just beginning to caramelize.
- Cool the ciambelline thoroughly, then store in an airtight container.

- In a 4 quart dutch oven (or oven proof stock pot), on high heat add olive oil and butter until butter is melted. Sear seasoned short ribs 1 minute on each side in a single layer (3 ribs at a time) until all of the ribs are browned. Set aside.
- Reduce heat to medium high and add sliced onions to sauté for 3 minutes until soft and translucent (not browned). Add minced garlic and stir to combine.
