1 tablespoon butter, plus more for baking dishes
1/2 cup onion, finely chopped
1 garlic clove, minced
1/2 teaspoon dried thyme
coarse salt
pepper
1 tablespoon flour
1/2 cup milk
3/4 cup coarsely grated gruyere cheese
1 cup sweet potato puree or 1 cup pumpkin puree
3 large eggs, separated

Steps:

  • Preheat oven to 375°. Butter four 3/4-cup ramekins; set aside.
  • In a medium saucepan, melt butter over medium-low heat.
  • Add onion, garlic, and thyme; season with salt and pepper.
  • Cook, stirring often, until onion is softened, about 8 minutes.
  • Stir in flour; cook, stirring, 3 minutes.
  • Gradually whisk in milk; simmer, whisking constantly, until thickened, about 2 minutes.
  • Remove from heat, and stir in 1/2 cup cheese and 1/2 teaspoon salt.
  • Whisk in sweet-potato puree, then egg yolks, one at a time.
  • In a mixing bowl, beat egg whites with a pinch of salt until stiff peaks form.
  • Whisk 1/4 of whites into cheese mixture.
  • Using a rubber spatula, gently fold in the rest.
  • Place ramekins on a rimmed baking sheet.
  • Pour mixture into ramekins; sprinkle with remaining cheese.
  • Bake until puffed and golden brown, 15 to 20 minutes.
  • You can also make this as one large souffle. Bake in a 1 quart dish for 25 to 30 minutes.

Sweet Potato Souffles image

It's a universal fact that people love puffy food, souffles being one of most versatile. As long as you don't knock all the air out of the egg whites in the batter, not much can actually go wrong. Since mashed sweet potato is the base, these souffles are even easier than the traditional method that requires a saucy base. They'll deflate quickly after exiting the oven, so hurry and snap those photos! Serve with cayenne-seasoned maple syrup if you like.

2 orange-fleshed sweet potatoes
4 large eggs, at room temperature
2 teaspoons butter, at room temperature
¼ cup milk
1 teaspoon kosher salt, or to taste
1 pinch cayenne pepper
4 fried sage leaves

Steps:

  • Place sweet potatoes on a microwave-safe plate. Prick sweet potatoes with the tip of a knife. Microwave until very soft, about 10 minutes. Let cool briefly until safe to handle.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Halve sweet potatoes and scoop flesh out into a bowl.
  • Separate egg whites and yolks into individual mixing bowls. Generously butter four 5-ounce ramekins.
  • Transfer 1 cup mashed sweet potato to the bowl of egg yolks. Pour in milk. Season with salt and cayenne. Whisk until smooth, slowly at first and faster once mixture starts to come together.
  • Add a pinch of salt to the egg whites. Beat with a clean whisk until peaks are well-defined but still soft. Transfer 1/2 of the egg whites to the sweet potato mixture. Fold in with a spatula somewhat gently until most of the white streaks disappear. Add the remaining egg whites and fold in very gently, turning the bowl and scraping the sides, until whites are mostly blended in; a few streaks should still be visible.
  • Gently spoon sweet potato mixture into the ramekins.
  • Bake in the preheated oven until fully inflated and browned, about 15 minutes. Garnish with sage. Unmold or serve in ramekins.

Gourmet Sweet Potato Souffle image

This is one of my most-requested dishes, and it's perfect for Easter, Thanksgiving, or anytime you need a fancy side dish. It looks much more difficult to make than it is, and guests are always impressed! Even people who don't like sweet potatoes ask for second helpings! I hope you enjoy it too. Maple syrup can be substituted for the vanilla extract.

3 ½ pounds sweet potatoes, peeled and diced
1 tablespoon white sugar
½ cup butter, melted
¾ cup white sugar
1 cup heavy cream
5 eggs
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
½ teaspoon ground cinnamon
1 teaspoon vanilla extract
1 teaspoon salt

Steps:

  • Bring a large pot of lightly salted water to a boil over medium-high heat. Add sweet potatoes, cover, and cook until soft, about 10 minutes. Drain, and set aside.
  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 2 quart souffle dish. Sprinkle dish with 1 tablespoon white sugar, shaking dish to evenly coat bottom and sides.
  • Place the sweet potatoes into the bowl of a food processor. Add the butter, 3/4 cup sugar, heavy cream, eggs, cloves, nutmeg, cinnamon, vanilla, and salt. Process until mixture is smooth. Pour into prepared souffle dish.
  • Bake the sweet potato mixture in preheated oven for 20 minutes. Lower oven temperature to 350 degrees F (175 degrees C).
  • Bake the sweet potato mixture until edges are slightly browned, about 40 minutes more. Serve warm or at room temperature.

2 medium sweet potatoes, pierced with the tines of a fork
1/4 teaspoon ground ginger
1/2 teaspoon pure vanilla extract
1/4 teaspoon salt
4 large eggs, separated
2 tablespoons packed light-brown sugar
1 cup whole milk
1 2-inch piece peeled fresh ginger, thinly sliced
1/4 cup unsalted butter, plus 1/2 cup melted, plus more for pan
1/4 cup all-purpose flour
1/3 cup, plus 1/4 cup granulated sugar, plus more if needed
1/2 teaspoon ground cinnamon, plus more if needed
9 sheets phyllo dough (17 by 12 inches), thawed if frozen
Pinch of cream of tartar

Steps:

  • Preheat oven to 400 degrees. Bake potatoes until tender, 1 hour to 1 hour 15 minutes. Remove from oven; let stand until cool enough to handle.
  • Peel potatoes, and press through a ricer into a large bowl (you should have about 1 cup); let cool completely. Stir in ground ginger, vanilla, salt, egg yolks, and brown sugar; set aside.
  • Meanwhile, heat milk and fresh ginger in a medium saucepan over medium heat until just under a boil. Remove from heat; let stand 30 minutes. Pour through a fine-mesh sieve into a bowl.
  • Melt 1/4 cup butter in a medium saucepan over medium-high heat. Whisk in flour; cook, whisking, 1 minute. Whisk in milk mixture. Bring to a boil. Reduce heat to medium, and cook 1 minute. Stir into potato mixture.
  • Butter a 9-inch springform pan, and place on a baking sheet; set aside. Stir 1/3 cup granulated sugar and the cinnamon in a small bowl. Brush 1 phyllo sheet with melted butter. Sprinkle lightly with cinnamon-sugar mixture. Fold in half crosswise; brush with butter. Sprinkle lightly with cinnamon-sugar mixture, and fit into prepared pan, folded side in, allowing a 2 1/2-inch overhang. Repeat, overlapping sheets to cover bottom.
  • Put egg whites into the bowl of an electric mixer fitted with the whisk attachment; beat on high speed until foamy. Add cream of tartar; beat until soft peaks form. With machine running, gradually add remaining 1/4 cup granulated sugar; beat until stiff glossy peaks form. Whisk one-third of the egg whites into potato mixture. Gently but thoroughly fold in remaining egg whites.
  • Pour over phyllo; fold overhang over filling. Sprinkle with cinnamon-sugar mixture (if needed, combine 1 to 2 tablespoons more sugar and a pinch of cinnamon). Reduce oven temperature to 375 degrees. Bake pie until puffed and just set in center, 45 to 50 minutes. Remove from oven; let stand until slightly cooled and center has fallen, about 20 minutes.
