SAVORY WINTER SQUASH PIE
Instead of using frozen winter squash, you can roast butternut or acorn squash until tender and then mash it before getting started on this recipe. The bacon roses are a fun garnish, but this winter squash pie can easily be made without them. -Erica Sinclair, Hamilton, Ontario

SAVORY SQUASH PIE
Combine Butternut or Buttercup squash with Feta cheese and leeks to make a savory winter squash pie. Using phyllo dough keeps it light but satisfying.
Provided by admin
Number Of Ingredients 9
Steps:
- Thaw phyllo dough following package directions.
- Preheat oven to 400 degrees.
- Peel and seed winter squash. Cut into 1-inch pieces.
- Place on a parchment lined baking sheet and bake in oven for about 30 minutes, or until squash is tender. Remove from oven and cool. Reduce oven temperature to 375 degrees.
- In a large bowl, mash cooked squash. Add parsley, mint, and Feta. Stir to combine.
- Wash and chop the white and light green parts of the leek. Peel and mince the garlic.
- Heat a little olive oil (about 2 teaspoons) in a small frying pan. Add the chopped leek and garlic. Cook until just tender, about 5 minutes. Remove from heat. Add to the squash mixture.
- Grease an 8-inch cake pan. Layer 7 sheets of phyllo dough, brushing each with olive oil, and overlapping each sheet until the entire cake pan is covered.
- Stir a beaten egg into the squash mixture. Spread mixture over the phyllo in the pan.
- Cover with 5 sheets of phyllo dough, once again brushing each sheet with olive oil. Tuck the edges into the side of the pan. Make a few cuts in the top with a knife.
- Bake for 45 minutes, or until the pie is golden brown. Remove from oven and serve warm or at room temperature.
- Note: This recipe will use less than one package of commercial phyllo dough. Save the remainder for another pie or refreeze for future use.
SAVORY BUTTERNUT SQUASH PIE
This is a substantial main-course vegetable pie. Use butternut or any other hard squash variety. The pie may be baked up to several hours in advance and reheated to serve. This allows flavors to meld and makes cutting the pie easier.

Steps:
- Put oil in a wide skillet over medium-high heat. Add onions, and season generously with salt and pepper. Cook, stirring, until softened and lightly browned, 5 to 7 minutes. Reduce heat if onions are browning too quickly.
- Transfer onions to a large bowl. Add squash cubes, kale, sage, thyme and garlic. Season with salt and red-pepper flakes, and toss well to coat.
- Heat oven to 350 degrees. Roll the puff pastry rounds to 12 inches in diameter (or roll and trim pastry rectangles to achieve two 12-inch rounds). Line a 10-inch pie pan or other shallow round baking dish with one 12-inch round of pastry. Add squash filling, piling it high. Sprinkle with provolone and pecorino. Lay the remaining pastry round over filling and crimp edges to seal. Paint the top of pie with beaten egg.
- Place the pie on a rimmed baking sheet to catch drips. Transfer to oven, and bake for about 1 hour, until pastry is nicely browned and squash is soft when probed with a paring knife. (Start checking at the half-hour mark and the 45-minute mark to make sure the pastry isn't browning too quickly. Tent with foil, if so.) Allow to rest at least 10 to 15 minutes before cutting into large wedges and serving.

- Whisk the flour and salt in a mixing bowl until well blended. If you do not own a pastry cutter (also called a blender) to cut the butter into the flour, try this: use a box grater to grate the butter, working quickly to prevent warming it with your hands. Add the butter to the flour mixture and use your hands to toss and separate the grated butter and coat the pieces with the flour.
- Preheat the oven to 400 degrees F. Toss the squash and onion with the olive oil, mustard, sage, salt and pepper and arrange on a sheet pan in a single layer. Roast until the onion is translucent and the squash is fork tender but has not browned, about 20 minutes. Set aside to cool.
- On a lightly floured countertop, roll out the dough into a circle about 14 inches across and 1/4 inch thick. Leaving a 3-inch edge, transfer the filling to make an even layer of squash and onions in the center of the dough. Fold the edges over the filling, pleating the dough to form a wide border. Brush the dough with the egg wash, if using.

- Irish Potato Pie. The simplicity of this pie means you can have it in the oven in less than 15 minutes. And it needs fewer than 10 ingredients! If there’s a better combination than potatoes, onion, and bacon, I don’t know what it is.
- Easy Homemade Chicken Pot Pie. This recipe uses cream of chicken soup and frozen vegetables to cut the prep time down to just 10 minutes. Some may call it cheating, but I think it’s a helpful shortcut!
- French-Canadian Salmon Pie. Salmon makes such a lovely, light pie filling. Though it’s not as common as beef or chicken, it’s definitely prettier! I love a good fish pie and grew up eating a dish that’s like a fish pot pie, with a creamy sauce and shrimp in the mix.
- Beef and Guinness Pie. As tasty as chicken and fish can be, there’s nothing more comforting than a big bowl of beef stew or pie. The dark meat paired with vegetables and a deep, rich gravy is the perfect winter warmer.
- Steak and Mushroom Pie. Steak pie is a classic pub favorite. Cooked until the beef is fork-tender, with plenty of chunky veggies and mushrooms galore, it’s rich, filling, and so delicious.
- Savory Pumpkin Hand Pies. Known as ‘pasties’ in the UK, hand pies are wonderful little snacks when served on their own or great for a filling dinner with plenty of veggies on the side.
- Easy Italian Cheese & Tomato Pie. Technically, the difference between a pie and a tart is the depth. Pies tend to be deep-dish, whereas tarts are thinner.
- Bisquick Cheeseburger Pie. This pie is such a treat to make. Much like some super fast Bisquick Desserts, this recipe has a few tricks up its sleeve. Rather than making a pie crust and rolling it out, the crust gets poured over the top of the filling.
- Tourtière (French-Canadian Meat Pie) Mixing mashed potatoes into your pie meat is such a great way to bind it together and add a creamy texture to the filling.
- Cheese and Onion Pie. You’ll find a variation of this all over the UK. Cheese and onion go hand in hand, after all. I would recommend using a strong mature cheddar for this since it’s more or less the star of the show!

- Place diced butternut squash on a rimmed baking sheet with 1 tablespoon oil and season with salt and pepper, and toss to evenly coat. Roast in the oven, tossing half way through for 30 minutes. Remove and let cool slightly.
- Roll out your pie pastry into a 11” circle. Place the pastry inside of a 9” pie pan and prick the bottoms and side with a fork to help steam escape. Crimp or decorate the edges as desired. Line the pastry with a parchment round piece of paper and then add pie weights (or dry rice or beans or lentils). Bake for 20 minutes, then remove from oven and remove the parchment and pie weights. Return to oven and bake for an additional 10 minutes. Set aside until ready to use.
