5-Ingredient Fix Contest Entry. These cakes taste like crab cakes, but are made with tuna and shredded hashbrown potatoes! The result is a sensational new main dish!

1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
2 tablespoons mayonnaise
2 teaspoons seafood seasoning
2 eggs, beaten
1 (12 ounce) can tuna, drained and flaked

Steps:

  • Place all ingredients in a medium bowl. Mix gently until combined. Shape mixture into 8 patties.
  • Place on broiler pan. Broil for 10 minutes or until delicately browned.

10 g butter
1 small onion, chopped
300 g grated raw potatoes
350 ml fish stock or 350 ml broth
350 ml heavy cream
350 g chunk tuna, drained
1/2 teaspoon black pepper

Steps:

  • Sauté onion in butter over moderate heat for 3 minutes or until limp.
  • Add the potatoes and fish broth. Bring to a boil and cook for 5 - 7 minutes over moderate heat until the potatoes are tender.
  • Stir in heavy cream, tuna chunks broken into smaller pieces and black pepper and heat through.
  • Serve hot.

  • In a sauce pan, cover the potatoes with water and boil them until fork tender about 45 minutes. Let them cool and peel.
  • In a large bowl, mash the potatoes and add the tuna meat, green onions, egg, bread crumbs and season with salt and pepper. Stir everything until well incorporated.
  • Form a cakes with you hands, ( if the mixture gets too sticky you can oil your hands a little bit) and place it on a baking sheet. Repeat until you finished all the mixture.
  • Heat up a non stick skillet and add about 2 tablespoons of oil, just enough to barely cover the bottom of the skillet. Gently place the cakes on the skillet and cook in two or three batches (don’t crowd the skillet) cook for about 5 minutes on each side until done.
