SAVORY TOMATO AND OLIVE OATMEAL
Who says oatmeal has to be sweet? I love this savory oatmeal recipe because it starts my day in a healthy, fulfilling way. The fresh garlic, tomatoes and basil are bright notes in a breakfast that keeps me satisfied until lunch. - Heat the butter and oil in a saucepan.
- Add the onion and garlic and fry until golden.
- Stir in the tomatoes, tomato purée, stock, mace and herbs.
- Bring to the boil, stirring.
- Reduce heat and cover.
- Simmer gently for 20 minutes.

- In a medium saucepan place the olive oil and heat it on medium high until it is hot. Add the onions, garlic, and shallots. Saute the ingredients for 3 to 4 minutes, or until the onions are translucent.
- Add the basil and rosemary, and sauté them for 1 minute. Add the remainder of the ingredients. Cook the sauce slowly on medium low heat for 15 minutes.
