I love making this dish when I can pick the beans right out of the garden and put them into the pot. The fresh taste is unbeatable. I've also made it with beans purchased at the store. 4 bacon strips
2 cups fresh or frozen cut green beans (1-1/2-inch pieces)
1 cup water
1/2 cup chopped onion
2 tablespoons minced fresh basil or 2 teaspoons dried basil
1 bay leaf
1/4 teaspoon dill seed
1/4 teaspoon garlic powder
1/8 to 1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a skillet, cook bacon until crisp. Remove bacon; crumble and set aside. Drain, reserving 1 tablespoon drippings. Add beans, water, onion and seasonings to drippings; bring to a boil. Cook, uncovered, until beans are tender, 15-20 minutes. Discard bay leaf. Stir in bacon.

1 ½ pounds fresh green beans, rinsed and trimmed
3 ounces coarsely chopped pancetta
1 shallot, thinly sliced
salt and black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the green beans and boil 3 to 4 minutes until just tender. Drain beans and immediately plunge into ice water. Allow to sit in ice water until cold, then drain well, and set aside.
  • Cook pancetta in a large skillet over medium-high heat until crispy, then set aside. Reduce heat to medium, stir shallots into the pancetta fat, and cook gently until the shallots have turned dark golden brown, about 10 minutes. Place pancetta and green beans in skillet; toss and cook until warmed through, about 2 minutes. Season to taste with salt and pepper before serving.

1/4 cup oil
1 teaspoon chopped garlic
1 tablespoon soy sauce
1/4 teaspoon hot pepper sauce
2 tablespoons stock
1 teaspoon sugar
1 tablespoon sherry wine
1 tablespoon toasted sesame seeds

Steps:

  • Toast sesame seeds until they are golden.
  • Pan fry beans at medium heat until they are wrinkled. Remove from pan and drain on paper towels.
  • Pour off most of the oil from the pan, add the garlic. Cook until it becomes fragrant.
  • Add the green beans and the sauce ingredients. Allow to cook until most of the liquid has dried up.
  • Sprinkle with sesame seeds.

1 cup onion (about 1/2 large onion)
1 Tbsp garlic (minced (about 2 large cloves))
2 cups beef (or chicken broth)
6 cups green beans (fresh or frozen (heaping in the measuring cup))
1 tsp salt
½ tsp black pepper

Steps:

  • Preheat Dutch oven or heavy pot on low-medium heat for 5 minutes.
  • Cut bacon into pieces. Add bacon to the pot and stir.
  • Cook for 10 minutes, then add the onion and garlic.
  • Cook uncovered for another 10 minutes (still on low-medium heat).
  • Add green beans, broth, salt, and black pepper and stir.
  • Increase heat and bring to a boil.
  • Reduce heat to low-medium, cover, and simmer for 30 minutes, stirring occasionally.
  • Uncover and test for doneness and salt level. Add more salt if desired. Cook more if needed.

1 ½ lb chicken breast (sliced into ¼ inch thick pieces)
2 cups green beans (cut into 2 inch pieces)
1 small onion (chopped)
2 tablespoons vegetable oil
2 tablespoon soy sauce
2 tablespoons rice wine
2 teaspoons cornstarch
1 teaspoon brown sugar
4 tablespoons chicken broth
1 tablespoon oyster sauce
2 tablespoons soy sauce (low sodium)
1 tablespoon brown sugar
1 teaspoon cornstarch
1 teaspoon rice vinegar
1 teaspoon sesame oil
2 cloves garlic (minced)
1 teaspoon fresh ginger grated
1 teaspoons hot chili sauce (optional)
½ teaspoon chili pepper flakes (optional)

Steps:

  • In a medium size bowl, combine the ingredients for the marinade and add in the thinly sliced chicken.
  • Marinate in the fridge for at least 30 minutes or overnight if you have time.
  • Add all the SAUCE ingredients to a bowl, stir and set aside.
  • Heat a wok or large pan over high heat and add the 2 tableespoons of oil. When its shimmering, add the chicken in a single layer, without the marinade, and ser it well until golden-brown, 1-2 minutes per side. Remove the chicken from the pan and set aside, repeat with the remaining chicken. Set aside.
  • Add the green beans and onion to the pan and saute for 2 - 3 minutes.
  • Lower the heat to medium and add back the chicken.
  • Stir and add in the sauce. Saute everything for 1 - 2 minutes, or until the sauce has thickened.
  • Top with sesame seeds. Serve immediately.

  • Pan fry the string beans at medium heat until the skin becomes wrinkled. Remove the beans and set aside to drain. Pour off most of the oil, leaving about 1 T in the wok.
  • Stir fry the chopped garlic until it releases its fragrance, return the fried string beans to the wok, pour in the sauce mixture and allow to cook until the liquid has almost dried up. Turn off the heat, mix in the sesame seeds and serve
