Steps:
- In a small skillet, saute onion and garlic in oil until tender. In a 2-qt. baking dish coated with cooking spray, combine the squash, tomatoes, carrots and seasonings. Stir in the onion mixture., Cover and bake at 350° for 60-70 minutes or until squash is tender. Serve over rice if desired.

ITALIAN SAUSAGE STUFFED ACORN SQUASH RECIPE
Savory Stuffed Acorn Squash with Sausage, Mushrooms, Spinach & Cheese

- Preheat oven to 425°F (220°C).
- Using a serrated knife, cut open acorn squashes. (Can poke holes around the outside and microwave for ~5 minutes to soften, if needed.)
- Scoop out seeds from inside squash so you have a "bowl."
- Brush the inside of each squash half with avocado oil and sprinkle with salt. Place face down on a lined baking sheet and roast 25-30 minutes (depending on size), until fork tender.
- In a skillet over medium high heat, add a drizzle of oil and cook onion and mushrooms for 3-4 minutes. Add sausage and cook until no longer pink, 5-7 minutes. Add garlic, rosemary, thyme, onion powder and spinach, stirring to integrate. Cover and cook 1-2 minutes, until spinach is wilted.
- Stir in chopped Sunsweet® Amaz!n™ Prunes. Add salt if needed. (Sausage typically has enough salt added already, but season to your preference.)
- Place squash "bowls" on baking sheet and fill with sausage mixture. Sprinkle with cheese, or stop here if you don't want cheese.
- Broil until cheese is melted, 2-5 minutes. Watch it so it doesn't burn!
- Sprinkle with red pepper flakes, serve, and enjoy!

- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Place each squash half in the baking dish, cut side down.
- Bake squash in the preheated oven for 30 minutes. Flip squash over and place 1 tablespoon butter and 1 teaspoon garlic into each squash. Season with salt and pepper.

- Preheat oven to 400°F.
- Place acorn squash (cut into 1-inch cubes) onto a baking sheet.
- Drizzle squash with olive oil and sprinkle with seasonings and grated parmesan. Toss with hands until evenly coated. Arrange in a single layer.
- Roast squash for 20 minutes. Remove from oven and (using a spatula) turn pieces over. Return to oven for another 15-20 minutes or until squash cubes are tender and crispy brown to your preference.

SAVORY BUTTERNUT SQUASH CASSEROLE

- Preheat the oven to 400°F. Set out a large rimmed baking sheet, a 9 x 13 inch baking dish, and a large skillet. Grease the baking dish and set aside.
- Place the chopped butternut squash onto the rimmed baking sheet. Drizzle with olive oil. Then salt and pepper liberally. (This is the only time salt is added to the recipe due to the use of bacon, saltine crackers, and Parmesan cheese, so be generous.)
- Spread the cubed butternut squash out into a single layer. Roast in the oven for 30+ minutes until the squash is soft and toasted around the edges.
- Meanwhile, place the skillet over medium heat. Brown the chopped bacon in the skillet. Once crispy, add in the onions and garlic. Sauté for 3 to 5 minutes to soften the onions. Then stir in the chopped pecans, sage, and thyme. Sauté another 1 to 2 minutes, then turn off the heat.
- Crush the sleeve of saltine crackers with your hands. In a small mixing bowl whisk the half-and-half and eggs together.
- Once the butternut squash comes out of the oven, move it to the greased baking dish. Add in the bacon and onion mixture, and the crushed crackers. Toss well to mix, then spread out and an even layer.
- Pour the egg mixture evenly over the casserole. Sprinkle the Parmesan cheese evenly over the top.
- Bake for 20 to 25 minutes until the top is crispy. Serve warm.
