THE BEST SPINACH ARTICHOKE DIP



The Best Spinach Artichoke Dip image

This is our best version of the classic party dip. It's savory and creamy with a slight tang from sour cream and Parmesan -- so hard to resist. We like to use frozen whole leaf spinach and chop it ourselves for more control over the finished texture of the dish.

Nonstick cooking spray
8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/4 cup mayonnaise
1 clove garlic, grated
One 10-ounce box frozen leaf spinach, thawed, drained, squeezed dry and coarsely chopped (see Cook's Note)
One 14-ounce can artichoke hearts, drained well and coarsely chopped
1/2 cup shredded whole-milk mozzarella
3/4 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper
Crackers, chips or toasted bread, for serving

Steps:

  • Position a rack in the upper third of the oven and preheat to 350 degrees F. Spray a 1-quart baking dish with nonstick cooking spray.
  • Put the cream cheese, sour cream, mayonnaise and garlic in a large bowl. Mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and 1/2 cup of the Parmesan, mixing to combine. Season with salt and pepper. Transfer the mixture to the prepared baking dish and top with the remaining 1/4 cup Parmesan.
  • Bake until the dip begins to bubble, 20 to 25 minutes. Turn the oven to broil and continue to cook, keeping an eye on it so it doesn't burn, until the top is golden brown, about 5 minutes. Serve warm with crackers, chips or toasted bread.

1 (6 ounce) jar marinated artichokes, chopped
1/2 onion, finely chopped
1/2 cup butter
8 ounces Philadelphia Cream Cheese
8 ounces sour cream
3/4 cup parmesan cheese, shredded
8 ounces monterey jack cheese, shredded
1 teaspoon red pepper flakes (or to taste)

Steps:

  • 1) in a medium-large pot, melt butter over med-high heat.
  • 2) add onions to butter and saute.
  • 3) reduce heat to medium.
  • *** mixing continuously, add ingredients in the following order:.
  • a) thawed spinach.
  • b) cream cheese.
  • c) sour cream.
  • d) monterey jack.
  • e) chopped artichoke hearts.
  • f) red pepper.
  • 4) remove from heat and slide dip into a serving crock.
  • 5) top with parmesan cheese and a spinkle of red pepper flakes.
  • 6) serve with hot tortilla bread or chips.
  • (my personal preference is the tortilla bread).

1/2 cup reduced-fat sour cream
1 1/2 cups plain fat-free yogurt
2 teaspoons chopped fresh tarragon leaves or 1/2 teaspoon dried tarragon leaves
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1 garlic clove, crushed
1 can (8 ounces) water chestnuts, drained and finely chopped
1 cup finely chopped green onion (9 medium)
Rye crackers, rice crackers or raw vegetables for dipping, if desired

Steps:

  • Cook spinach as directed on package. Cool slightly; squeeze to drain well.
  • Meanwhile, in large bowl, mix sour cream, yogurt, tarragon, salt, mustard, pepper and garlic. Stir in cooked spinach, water chestnuts and green onions.
  • Cover and refrigerate 1 hour to blend flavors. Serve with crackers.

1 Reynolds® Oven Bag, Large Size
1 tub (10 oz.) cooking crème
2 jars (6.5 oz. each) marinated artichoke hearts, drained and chopped
1 package (10 oz.) frozen chopped spinach, thawed and drained
1 cup shredded Pepper Jack cheese
1 cup shredded Parmesan cheese
1/4 cup mayonnaise
1 tablespoon flour
1/2 teaspoon garlic powder
Smoked paprika (optional)
Pita chips, tortilla chips or crackers

Steps:

  • Preheat oven to 375°F. Place Reynolds® Oven Bag in 13x9x2-inch pan. Spray inside of bag with cooking spray.
  • Add cooking crème, artichokes, drained spinach, cheeses, mayonnaise, flour and garlic powder to oven bag. Gently squeeze bag to blend ingredients. Arrange ingredients in an even layer in bag.
  • Close oven bag with nylon tie. Cut six 1/2-inch slits in top. Tuck ends of bag in pan.
  • Bake 20 minutes or until mixture starts browning and is bubbly. Carefully cut bag open.
  • Spoon dip into serving dish; sprinkle with ground paprika, if desired. Serve warm with pita chips, tortilla chips or crackers.
