Simple and simply fabulous, this favorite side dish is a no-brainer. For best results, use a 12-inch cast iron skillet.

1 pound mixed mushrooms (baby bella/cremini, oyster and shiitake mushrooms work well)
4 tablespoons good salted butter (see note)
Fine sea salt and freshly ground black pepper
Minced flat-leaf parsley to garnish, optional

Steps:

  • Preheat a 12-inch cast iron skillet on the stovetop for five minutes over high heat. Meanwhile, wipe any dirt off the mushrooms with a paper towel and, if you like (and your mushrooms are whole), rinse under running water and spin dry. Remove stems from shiitakes and oyster mushrooms and trim a slice of the stem end off the baby bellas. Slice baby bellas and shiitakes about 1/4-inch thick and cut oyster mushrooms into small bite-sized pieces.
  • Add butter to pan. When melted and bubbly, add mushrooms and toss to coat. Cook, stirring only occasionally, for about 10 minutes, until well browned in plenty of spots. Stir in salt and pepper to taste and garnish with parsley if you like.

1 onion (chopped)
3 tablespoons butter
1 tablespoon garlic
1 tablespoon cooking sherry
1 tablespoon soy sauce
salt and pepper

Steps:

  • Add sliced white mushrooms, chopped onions, butter and minced garlic to a large cast iron skillet.
  • Heat mushrooms over medium heat, stirring ingredients frequently until onions and mushrooms are soft and tender, which takes about 6-8 minutes.
  • Add 1 tablespoon of cooking sherry and 1 tablespoon soy sauce and mix well.
  • Continue to heat mushrooms and onions for 2 minutes, until mushrooms are caramelized and excess liquid is burned off.
  • Season mushrooms and onions with sea salt and cracked pepper.
  • Serve hot either as a side, on a burger, chicken, pork, or even as a savory topping to an omelet.

2 cloves garlic (minced)
4 cups medium shrimp (raw, shelled and deveined)
1/2 tsp salt
1/4 tsp cayenne pepper
1/4 tsp paprika
1 Tbsp fresh basil leaves
1/4 cup Parmesan cheese
cracked pepper

Steps:

  • Heat olive oil in sauté pan and add garlic. Sauté until garlic begins to color then add shrimp.
  • Toss in salt, cayenne pepper and paprika and cook 1-2 minutes.
  • Add basil when shrimp just starts to turn pink. Sauté shrimp until shrimp turns pink and is firm to the touch.
  • Toss in parmesan cheese then pour into bowl for serving.
  • Add fresh ground pepper to taste.

1 pound button mushrooms, sliced
1 clove garlic, thinly sliced
1 tablespoon red cooking wine
1 tablespoon teriyaki sauce, or more to taste
¼ teaspoon garlic salt, or to taste
freshly ground black pepper to taste

Steps:

  • Heat olive oil and butter in a large saucepan over medium heat. Cook and stir mushrooms, garlic, cooking wine, teriyaki sauce, garlic salt, and black pepper in the hot oil and butter until mushrooms are lightly browned, about 5 minutes. Here the broccoli is cooked in 2 batches to extract maximum flavor, yet preserve its lively brightness. Chinese cuisine inspired the combination of broccoli, garlic shrimp, and mushrooms.

2 tablespoons butter
2 medium onions, sliced thin
1 pound broccoli, sliced thin
10 cloves Oven-Roasted Garlic
3½ cups Chicken Stock or low-salt canned chicken broth
1 cup heavy cream or half and half
Kosher salt and freshly ground black pepper
1 tablespoon pure olive oil
12 ounces shiitakes, caps only
12 large shrimp, deveined, butterflied, and tail left on

Steps:

  • In a large skillet, melt the butter over medium heat and sauté the onions until transparent, 5 to 8 minutes. Add half the broccoli and the roasted garlic and sauté until soft, 8 to 10 minutes. Add the stock and bring to a boil. Reduce the heat and simmer gently for 10 minutes.
  • Add the remaining broccoli and the cream. Bring to a boil and cook until the newly added broccoli is tender, about 10 minutes. Puree in a blender and strain through a coarse strainer. Season with salt and pepper and keep hot.
  • For the shrimp and mushrooms:
  • Preheat the oven to 200°F. In a large skillet, heat the olive oil over medium-high heat until shimmering. Add the mushroom caps and sauté until soft, about 6 minutes. Remove from the skillet. Add the shrimp to the skillet and sauté until medium-rare, 1 to 2 minutes each side. Keep warm in the oven.
  • To serve:
  • Put the mushrooms and shrimp in 8 warm bowls and ladle the soup over.
  • Variations:
  • Instead of sautéing the shrimp and mushrooms, grill the mushroom caps until golden and the shrimp until medium rare, 1 to 2 minutes each side.
  • For chicken stock substitute half chicken, half lobster stock.
