Sage and thyme really perk up these mouthwatering muffins made with handy baking mix. I like to keep a few in the refrigerator because the pork sausage and Swiss cheese make them perfect for breakfast in a hurry.-Patsy Spires, Cheshire, Ohio

Yield 9 muffins.

Number Of Ingredients 7

8 ounces pork sausage
1-3/4 cups biscuit/baking mix
3/4 teaspoon rubbed sage
1/4 teaspoon dried thyme
1 egg
1/2 cup milk
1/2 cup shredded Swiss cheese

Steps:

  • In a small skillet, cook sausage over medium heat until no longer pink; drain. Meanwhile, in a large bowl, combine the baking mix, sage and thyme. In another bowl, combine the egg and milk; stir into dry ingredients just until moistened. Fold in the cheese and sausage. , Fill greased muffin cups two-thirds full. Bake at 375° for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Refrigerate leftovers.

1 pound bulk spicy pork sausage
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1/2 cup whole milk
2 to 3 teaspoons rubbed sage
3 cups biscuit/baking mix

Steps:

  • In a skillet over medium heat, cook sausage until no longer pink; drain. In a bowl, combine soup, milk, sage and sausage. Stir in the biscuit mix just until moistened. Fill greased miniature or regular muffin cups two-thirds full. Bake at 400° for 15-20 minutes or until muffins test done.

1/2 pound bulk spicy pork sausage
1/4 cup chopped green onions
1/4 cup chopped sweet red pepper
3/4 cup all-purpose flour
1/2 cup cornmeal
1 tablespoon minced fresh cilantro
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1 egg, lightly beaten
1 cup buttermilk
3/4 cup shredded sharp cheddar cheese

Steps:

  • In a large skillet, cook sausage, onions and red pepper over medium heat until meat is no longer pink; drain and set aside. In a large bowl, combine the flour, cornmeal, cilantro, baking soda, salt and thyme. , In another bowl, combine egg and buttermilk. Stir into dry ingredients just until moistened. Fold in cheese and sausage mixture. , Fill greased muffin cups two-thirds full. Bake at 375° for 25-30 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Refrigerate leftovers.

1/2 lb ground pork sausage
12 eggs
4 oz can green chilis
1 tsp garlic salt
8 oz reduced-fat sharp cheddar (shredded from the block)
1/2 tsp black pepper
non-stick olive oil spray (for greasing the muffin pan)

Steps:

  • Preheat the oven to 350 degrees F. and spray a muffin pan with non-stick spray.
  • Brown the pork sausage in a medium-size skillet until browned and crumbled, stirring often, about 10 minutes.
  • In a large bowl, beat the eggs and stir in the green chilis, garlic salt, pepper, cooked sausage, and shredded cheese.
  • Pour egg muffin mixture into 12 greased muffin cups (cups will be full).
  • Bake for 20-25 minutes until a toothpick in the center comes out clean. Mine were perfectly done at 25 minutes. Oven temps can vary, so check muffins at 20 minutes for doneness.

2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
⅓ cup reduced-calorie margarine, melted
½ cup egg substitute
1 cup nonfat buttermilk
3 meatless breakfast patties, cooked and crumbled
2 teaspoons grated Parmesan cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 12 cup muffin tin, or line with paper liners.
  • In a large bowl, stir together the flour, oats, baking powder, baking soda, salt, garlic powder, and onion powder. In a separate bowl, mix together the melted margarine, egg substitute, and buttermilk. Add the wet ingredients to the dry, and mix until just blended. Fold in the crumbled patties and Parmesan cheese. Spoon into the prepared muffin cups.
  • Bake for 8 to 12 minutes in the preheated oven, or until the top springs back when lightly touched. Cool in muffin tins on a wire rack.
