6 medium apples
1/2 cup cooked brown rice
1 tablespoon thinly sliced green onions
1 tablespoon chopped sweet red pepper
1 tablespoon minced fresh parsley
1 tablespoon finely chopped celery
1 tablespoon chopped carrot
1 tablespoon chopped walnuts
1/2 teaspoon ground cinnamon
2 tablespoons shredded cheddar cheese
1 cup unsweetened apple juice
1 tablespoon chili sauce

Steps:

  • Core apples, leaving bottoms intact. In a medium bowl, combine the brown rice and next 8 ingredients; mix well. Fill each apple with about 2 tablespoons filling, packing it well. Place the stuffed apples in a greased 4-quart slow cooker. Pour in the apple juice and chili sauce. Cover and cook on high until the apples are soft, 1-1/2 to 2 hours. Spoon liquid over each apple serving.

Cranberry Apple Stuffed Acorn Squash is the perfect harvest inspired side dish. The pecans make for a nice crunchy topping - perfect for Thanksgiving or Christmas dinner.

3 small acorn squashes (halved lengthwise and seeded (do not peel!))
1/2 cup apple juice
4 tablespoons brown sugar (packed)
4 tablespoons dried cranberries
1/2 teaspoon ground cinnamon
pinch of nutmeg (optional)
1/4 teaspoon salt
1 teaspoon cornstarch (mixed with 1 tablespoon cold water or apple juice to make a slurry)
2 tablespoons butter
2 apples (peeled, cored and diced)
4 tablespoons chopped pecans

Steps:

  • Bake the squash: Preheat the oven to 350°F. Grease a rimmed cookie sheet. Place the acorn squash halves cut-side down on the prepared sheet and bake for 30 minutes.
  • Make the filling: Combine apple juice, brown sugar, dried cranberries, spices and salt in a medium saucepan. Bring to a simmer and cook until the dried cranberries look plump and are softened, about 10 minutes. Stir in the cornstarch slurry and simmer until sauce has thickened, about 1 minute. Stir in the butter. Stir in the apples and pecans. Set aside.
  • Fill the squash: Carefully turn the baked squash over and fill with the fruit and nut mixture. Bake for about another 15 minutes or until the squash is soft all the way through.

This is not a dessert - but a yummy side to accompany the traditional turkey or even a pork roast. Ever so slightly adapted to include my favourite stuffing aromatic - sage!

7 fuji apples
1 tablespoon olive oil
8 ounces mild sausage, casing removed
1 celery, finely chopped
1 small red onion, finely chopped
1 teaspoon chopped fresh thyme
1/2 teaspoon rubbed sage (optional)
2 tablespoons chopped fresh flat-leaf parsley
4 cups bread cubes, each 1/2-inch square, toasted
salt & freshly ground black pepper, to taste

Steps:

  • Preheat an oven to 375°F.
  • Peel, core and chop 1 apple into 1/3-inch pieces. Set aside.
  • Cut one-fourth off the top of the remaining apples and discard the tops. Using a melon baller or a spoon, hollow out the apples, leaving 1/3 inch of the flesh on the inside. Set aside.
  • In a large sauté pan over medium-high heat, warm the olive oil. Add the sausage and cook, stirring occasionally and breaking up the sausage with a wooden spoon, until browned, 3 to 5 minutes. Using a slotted spoon, transfer the sausage to a large bowl.
  • In the same pan, combine the celery, onion and chopped apple and sauté until tender, 3 to 5 minutes. Add the celery mixture, the thyme, sage, parsley and bread cubes to the bowl with the sausage, season with salt and pepper and stir to combine. Spoon the stuffing into the apples, packing it lightly. Arrange the apples in a baking dish and cover with aluminum foil.
  • Bake for 45 minutes, then remove the foil and continue baking until the apples are tender and the stuffing is golden on top, 15 to 20 minutes more. Serve immediately.

  • Preheat the oven to 400F. Then, wash the acorn squash, slice each in half from stem to end, and remove the seeds & stringy flesh inside. Add the squash halves to a baking tray covered with parchment paper and season by rubbing with olive oil, salt, & pepper. Then, flip upside down so the fleshy inside is facing down and add to the oven to bake for 40-45 minutes until cooked through. Once cooked, flip over and set aside to be filled.
  • Once the squash is in the oven, add the wild rice and vegetable broth to a small saucepan and stir together. Cover, turn on the heat, and bring to a boil. Once boiling, reduce the heat to a simmer and cook for 40-45 minutes until cooked through. Cooked wild rice will be chewy, but should be tender.
  • While the squash and wild rice are cooking, make the filling. Cut the shallots, garlic, mushrooms, apples, and kale before starting. Then, add 2 Tbsp olive oil to a large pan and heat over medium heat.
  • Once the oil is hot, add in the shallots & garlic and sauté for 3 minutes until beginning to brown and caramelize. Then, add in the chopped mushrooms, stir, and cook together for another 5 minutes until the mushrooms are beginning to brown and crisp.
