SAVORY PUFF PASTRY QUICHE WITH CABBAGE
This is a simple winter quiche made with puff pastry, sauteed cabbage, egg, and cheese. We make it often on weeknights.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Heat oil in a large skillet over medium heat. Add cabbage and cook for about 18 minutes. Stir in butter and season with salt. Continue cooking until cabbage is soft, about 2 minutes more.
- Roll puff pastry out on a lightly floured surface into a large square. Place into a springform pan, allowing the corners to hang over the sides.
- Beat egg and water together in a bowl and stir in Swiss cheese.
- Pour cooked cabbage into the pastry-lined pan and cover with egg mixture. Fold pastry corners over filling and punch together in the middle.
- Bake in the preheated oven until pastry is golden brown, about 25 minutes.

PUFF PASTRY QUICHE LORRAINE
Please use only Swiss cheese for this recipe, I have made the mistake of using another kind of cheese and it just doesn't work! Purchase a 14-ounce (397 gram) package of puff pastry, and use half for this recipe. The original recipe for this does not call for garlic, but I like to add it in... of course, it is optional.

Steps:
- Set oven to 425 degrees (will reduce oven temperature later).
- Prepare a 9-inch (deep-dish) pie plate.
- In a frypan, melt butter and saute onion and garlic (if using) until soft.
- In a large bowl, combine eggs, whipping cream and spices; beat until very well combined.
- Roll out pastry to fit the pie plate.
- Sprinkle the onion/garlic mixture into the bottom of the pie shell, then chopped bacon then top with grated cheese.
- Carefully pour the egg mixture on top.
- Bake at 425 degrees for 15 minutes.
- Reduce heat to 300 degrees, and bake for about another 35-40 minutes, or until a knife inserted in the middle comes out clean.

PUFF PASTRY CHEESE POCKETS
Puff Pastry Cheese Pockets are flaky, buttery, crispy miniature cheese pockets pies that are a crowd pleaser appetizer or snack. They are equally delicious when served hot or cold.

- Remove Pastry Dough sheets from the refrigerator and let them defrost at room temperature for 20-30 min.
- In the meantime, in a medium bowl, using a spatula, mix together the cheese , eggs and milk.
- Place the butter in a microwave safe bowl and melt.
- Add the butter to the mixture, using a spatula mix until well incorporated. Add the flour and continue mixing.
- Season with salt and pepper.
- Preheat oven to 350F.
- Position the Puff Pastry Dough sheets on a flat working surface and cut in squares (2-3 inches).
- Using a spoon, place the mixture (1-2 tbsp.) into the center of the squares. Make sure you have the same amount of squares without the filling, as they will be used to cover the other ones.
- After the cheese filling was distributed, take the remaining squares and place on top of the cheese filling, using your fingers to glues the two together, resulting in small cheese pockets.
- In a small bowl, whisk together the remaining 2 egg yolks and brush the top of the cheese pockets.
- Place in the oven and bake until golden, around 30 min.

This is a wonderful savory puff pastry quiche with tuna, creme fraiche, mayo, cheese, and tomatoes.

- Preheat the oven to 350 degrees F (175 degrees C). Line a springform pan with parchment paper.
- Roll out puff pastry on a lightly floured surface. Line the prepared springform pan with puff pastry and pierce all over with a fork. Add another piece of parchment paper and cover with a layer of dried beans to keep pastry flat while baking.
- Prebake pastry in the preheated oven for 10 minutes. Remove from oven.
- Spread puff pastry with a thin layer of mustard. Place tuna into a bowl and mix with mayonnaise. Season with salt and pepper. Spread mixture onto puff pastry crust.
- Combine creme fraiche and eggs in a separate bowl. Stir in Swiss cheese and season with salt and pepper. Pour over tuna mixture and cover with tomato slices.
- Bake in the preheated oven until filling has set and pastry is golden brown, 20 to 30 minutes. Sprinkle with dill before serving.
