The best and easiest Italian pizza sauce recipe.

14 oz (400g) can of European tomatoes (preferably pomodoro pelato S.Marzano dell'Agro Sarnese-Nocerino D.O.P) THIS IS THE MOST IMPORTANT INGREDIENT-do not use inferior quality tomatoes
3 Tbsp good quality extra virgin olive oil
1/2 tsp sea salt
a few pinches of dried oregano
2 or 3 leaves of fresh Italian basil, torn into small pieces
(optional: a clove of fresh garlic, minced) my Italian family uses garlic, but it's only used on one type of pizza in Naples

Steps:

  • Pour the can of tomatoes into a bowl. If it is pomodorini or whole tomatoes, crush them with your hands, or you can roughly cut them with kitchen shears.
  • Add the rest of the ingredients and mix well. Taste for salt and add if needed. (Don't add a lot of sauce to the pizza dough; you don't want to drown it.)

Marinara sauce
Grated cheese (cheddar, mozzarella, jack)
Red pepper, julienned
Caramelized onions
Blanched broccoli florets
Mushrooms
Shredded carrots
Or use your favorite vegetable
Basic pizza dough, recipe follows
1 teaspoon sugar
3/4 cup warm (110 F degrees) water
1 package dry yeast
2 1/2 cups flour
1/2 teaspoon salt
1 tablespoon olive oil

Steps:

  • Add toppings to pizza dough and bake in the lowest part of the oven for approximately 15 to 20 minutes or until dough is cooked through and golden.
  • In a measuring cup, combine water and sugar. Dissolve dry yeast in warm water mixture. Set aside for about 5 minutes, allowing yeast to become active.
  • In a large mixing bowl, combine 2 cups of flour and salt. Make a depression in the flour mixture and add oil and foamy yeast mixture. Mix dough ingredients until they stay together. (Alternatively, place dry ingredients in the bowl of a food processor and pulse a few times. Add oil and yeast mixture and pulse again until dough begins to form a ball.) Turn out onto a floured surface and knead for 8 to 10 minutes. If the dough appears wet or sticky, add flour, a little at a time, to achieve a smooth consistency.
  • Oil the inside of a clean dry bowl. Place the ball of dough in the bowl and roll it around so that it is covered with a layer of oil. Cover the dough with a towel and allow it to rise for about 1 1/2 hours in a warm area free of drafts.
  • Preheat oven to 450 degrees F as you begin to roll out dough.
  • After the dough has risen, punch it down and place on a floured surface. Roll out or press out to desired shape and place on hot stone or baking sheet.

1 (6 ounce) can tomato paste
6 fluid ounces warm water (110 degrees F/45 degrees C)
3 tablespoons grated Parmesan cheese
1 teaspoon minced garlic
2 tablespoons honey
1 teaspoon anchovy paste
¾ teaspoon onion powder
¼ teaspoon dried oregano
¼ teaspoon dried marjoram
¼ teaspoon dried basil
¼ teaspoon ground black pepper
⅛ teaspoon cayenne pepper
⅛ teaspoon dried red pepper flakes
salt to taste

Steps:

  • In a small bowl, combine tomato paste, water, Parmesan cheese, garlic, honey, anchovy paste, onion powder, oregano, marjoram, basil, ground black pepper, cayenne pepper, red pepper flakes and salt; mix together, breaking up any clumps of cheese.
  • Sauce should sit for 30 minutes to blend flavors; spread over pizza dough and prepare pizza as desired.

28oz can of crushed tomatoes
3 tbsp olive oil
2 tbsp red pepper
6 cloves garlic, crushed
1 shallot, chopped
1/4 cup basil, chopped
1 carrot, chopped
2 celery stalks with leafy green tops
4 parmesan soup bones
1/2 cup red wine
Salt to taste
Black pepper, freshly ground to taste

Steps:

  • Heat olive oil over med-low heat in sauce pan Saute garlic until aromatic, approx 2:00 mins Add carrot, shallot, increase heat to medium, saute until softened Add wine, crushed tomatoes, celery, parmesan soup bones, salt, pepper, and red pepper Cover pan, leave cracked slightly, simmer 1-2hrs until sauce reaches desired consistency Remove soup bones and celery stalks Puree/blend sauce

3 garlic cloves (chopped)

1 1/2 quarts tomato juice
3/4 cup brown sugar
1/2 teaspoon salt
1 dash pepper
1/2 teaspoon oregano
1/2 teaspoon chili powder
2 tablespoons cornstarch (optional)

Steps:

  • Brown onions in oil, add garlic when onions first start to brown.
  • Once onions brown add the rest of the ingredients.
  • Cook down until sauce thickens. If you don't have time to cook it down until it thickens then cook it for 30 minutes and then add cornstarch to thicken.
