SAVORY PIE WITH SQUASH, CARROT, AND CARAMELIZED ONIONS
This vegan savory pie recipe is definitely a crowd pleaser! Serve it up at your next holiday gathering and watch everyone (including those who don't eat a vegan diet) ooh and aah over the design. They'll be even more impressed when take a bite.

Steps:
- In the bowl of a standing mixer, add the flour, small cubes of butter, 1 ½ teaspoons salt, and 2 teaspoons of sugar. Mix at medium low speed until you have a sand like texture.
- Add 4 tablespoons of ice water and mix at medium-low speed just until the dough comes together. Do not over mix.
- Form a disc with the dough and wrap in plastic. Chill for 30 minutes.
- Meanwhile, caramelize the julienned green onions. In a medium sized skillet on very low heat, add the green onions, 3 tablespoons of olive oil and a pinch of salt.
- Cook, stirring constantly, for about 20 minutes. When the onions have reduced and started to brown, add 1 tablespoon of sugar and mix evenly. Cook for another 2-3 minutes and remove from the heat.
- Using a very sharp knife or a mandolin slicer, slice the squash and small potato crosswise and the carrots lengthwise, creating ⅛ inch thick slices or less.
- Preheat the oven to 350° F/180°C.
- Take out the dough and roll on a lightly floured surface to about ⅛ inch thick. Transfer to a pie mold. Press into corners to trim excess.
- Spread mustard over the dough. Then, spread evenly the caramelized onions with all of their juices. Arrange squash, carrots and potato in concentric circles with rounded edges facing up. Have fun with the design, make it your own.
- Bruch 1 ½ tablespoons of olive oil over the vegetables. Season heavily with salt, and sprinkle garlic powder, paprika, chili flakes and freshly ground black pepper. Finish sprinkling some sugar as well.
- Bake for 1 hour and 15 minutes. By the end, the crust should be golden and the edges of the vegetables browned.
- Let cool, and enjoy!

SAVORY WINTER SQUASH PIE
Instead of using frozen winter squash, you can roast butternut or acorn squash until tender and then mash it before getting started on this recipe. The bacon roses are a fun garnish, but this winter squash pie can easily be made without them. -Erica Sinclair, Hamilton, Ontario

- In a large bowl, mix flour and salt; cut in shortening and butter until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed. Shape into a disk; wrap and refrigerate 1 hour or overnight. , Preheat oven to 375°. For optional bacon roses, brush bacon with 3 tablespoons syrup. Roll bacon strip up; for larger roses use two strips. Secure bottoms with toothpicks. Dip top of each bacon rose in 3 tablespoons brown sugar. Arrange on a foil-lined rimmed baking sheet. Bake until bacon is cooked through, 25-30 minutes., On a lightly floured cutting board, roll dough to a 1/8-in.-thick circle; cut into 1-in.-wide strips. Brush with syrup and sprinkle with brown sugar. Chill until ready to use., Meanwhile, in a large bowl, whisk eggs, squash and milk until smooth. Stir in cheeses, flour, rosemary, salt, nutmeg, thyme, pepper and cayenne. Pour into a greased 9-in. pie plate. Bake 20 minutes., Working quickly, arrange chilled dough strips over hot filling in a lattice pattern. Trim at edge of pie plate. Bake until crust is golden brown and center is set, 15-20 minutes. Cool 10 minutes on a wire rack before serving. If desired garnish with bacon roses, rosemary leaves and thyme leaves.

- On a lightly floured surface roll out dough into a 12-inch round (about 1/8 inch thick). Fit dough into an 11-inch tart pan with a removable fluted rim. Freeze shell 15 minutes.
- Preheat oven to 375°F.
- Line shell with foil and fill with pie weights or raw rice. Bake shell in middle of oven until edge is pale golden, about 20 minutes. Carefully remove foil and weights or rice and bake shell 10 minutes more, or until bottom is golden. Leave oven on. Cool shell in pan on a rack.
- Halve squash and scoop out seeds. Lightly brush each cut side with about 1 teaspoon oil and on a baking sheet roast squash, cut sides down, in middle of oven 40 minutes, or until soft.
- While squash is roasting, thinly slice onion and in a heavy skillet cook in 1/2 tablespoon butter and remaining 1 1/2 teaspoons oil over moderate heat, stirring occasionally, until soft and golden brown, about 20 minutes.
- Cool squash and scoop out flesh. In a food processor purée squash. Add whole egg, egg yolk, and cream and blend well. Transfer mixture to a large bowl and stir in cheeses, herbs, onion, salt, and pepper to taste. Pour filling into shell, smoothing top.
- In a small skillet melt remaining tablespoon butter and stir in bread crumbs until combined well. Sprinkle bread crumb mixture evenly over filling. Bake tart in middle of oven 40 minutes, or until filling is set. Cool tart in pan on rack 10 minutes and carefully remove rim.

- Preheat oven to 400°. Cut carrots in half lengthwise, then in half crosswise., In a large bowl, toss squash and carrots with brown sugar, oil, salt, cinnamon and nutmeg. SAVORY BUTTERNUT SQUASH PIE
This is a substantial main-course vegetable pie. Use butternut or any other hard squash variety. The pie may be baked up to several hours in advance and reheated to serve. This allows flavors to meld and makes cutting the pie easier.

- Put oil in a wide skillet over medium-high heat. Add onions, and season generously with salt and pepper. Cook, stirring, until softened and lightly browned, 5 to 7 minutes. Reduce heat if onions are browning too quickly.
- Transfer onions to a large bowl. Add squash cubes, kale, sage, thyme and garlic. Season with salt and red-pepper flakes, and toss well to coat.
- Heat oven to 350 degrees. Roll the puff pastry rounds to 12 inches in diameter (or roll and trim pastry rectangles to achieve two 12-inch rounds). Line a 10-inch pie pan or other shallow round baking dish with one 12-inch round of pastry. Add squash filling, piling it high. Sprinkle with provolone and pecorino. Lay the remaining pastry round over filling and crimp edges to seal. Paint the top of pie with beaten egg.
- Place the pie on a rimmed baking sheet to catch drips. Transfer to oven, and bake for about 1 hour, until pastry is nicely browned and squash is soft when probed with a paring knife. (Start checking at the half-hour mark and the 45-minute mark to make sure the pastry isn't browning too quickly. Tent with foil, if so.) Allow to rest at least 10 to 15 minutes before cutting into large wedges and serving.

SAVORY BUTTERNUT SQUASH CARROT TART - CARAMELIZED ONIONS

- Combine the whole-wheat flour, pastry flour, salt and black pepper in a food processor. Sprinkle the cubed butter on top. Pulse until large chickpea sized pieces remain (I like to keep the butter larger than peas with the food processor method because I find that otherwise the butter works into the dough too much by the time the water has been added.)
- In a small saucepan melt the butter over medium-high heat. Once your butter is melted add the sage. Continue to cook over medium-high heat, swirling occasionally, until the butter has taken on a nutty aroma and you can see little brown bits at the bottom of the pan. Pour into a bowl or the butter will continue to cook in the pan. Drizzle the browned butter over the whole tart or serve with each slice. Store extra browned butter in the refrigerator and then warm it in the microwave prior to serving.
