1 1/2 pounds lean ground beef
1 cup milk
1 tablespoon Worcestershire sauce
1 teaspoon chopped fresh sage leaves or 1/4 teaspoon dried sage leaves
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1 garlic clove, finely chopped or 1/8 teaspoon garlic powder
1 egg
3 slices bread, torn into small pieces
1 small onion, chopped (1/4 cup)
1/2 cup ketchup, chili sauce or barbecue sauce

Steps:

  • Heat oven to 350°F.
  • Mix all ingredients except ketchup. Spread mixture in ungreased loaf pan, 8 1/2x4 1/2x2 1/2 or 9x5x3 inches, or shape into 9x5-inch loaf in ungreased rectangular pan, 13x9x2 inches. Spread ketchup over top.
  • Insert meat thermometer so tip is in center of loaf. Bake uncovered 1 hour to 1 hour 15 minutes or until thermometer reads 160°F.

1 egg
1 cup fat-free milk
3/4 cup quick-cooking oats
2 slices bread, crumbled
1/2 cup finely chopped onion
1 teaspoon rubbed sage
1 teaspoon salt
1/4 teaspoon pepper
1 pound lean ground beef (90% lean)
3/4 cup ketchup
1/2 cup water
2 tablespoons brown sugar
2 tablespoons cider vinegar
1 tablespoon Worcestershire sauce

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into a loaf; place in an ungreased 11x7-in. baking dish. , In a small bowl, combine the ketchup, water, brown sugar, vinegar and Worcestershire sauce; pour over meat loaf. Bake at 325° for 1 to 1-1/4 hours or until meat is no longer pink and a thermometer reads 160°. Let stand for 10 minutes before slicing.

cooking spray
1 tablespoon olive oil
1 green bell pepper, diced
½ cup diced sweet onion
½ teaspoon minced garlic
1 pound extra-lean (95%) ground beef
1 cup whole wheat bread crumbs
2 large eggs
¾ cup shredded carrot
¾ cup shredded zucchini
salt and ground black pepper to taste
¼ cup ketchup, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Heat olive oil in a skillet over medium heat; cook and stir green bell pepper and onion in the hot oil until onion is transparent and bell pepper is softened, 5 to 10 minutes. Add garlic and cook until fragrant, 1 to 2 minutes.
  • Combine ground beef, bread crumbs, eggs, carrot, zucchini, salt, pepper, and bell pepper mixture in a large bowl; mix well using your hands. Press meat mixture into the prepared loaf pan.
  • Bake in the preheated oven until no longer pink in the center, 35 to 40 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Spread ketchup on the top of the meatloaf and continue baking until bubbling, about 5 minutes more.

Another favourite Campbell's Soup recipe. For years, I thought this soup was no longer on the market and I was so sad because this is the best meat loaf I've ever tasted. Just for the heck of it, I recently asked my mom to look for it in the big city and guess what? It IS still available, just not out in the boonies where we live! I was so excited. You can bet this will be a regular in our home once again, now that I've seriously stocked up on Golden Mushroom Soup!!!! For a slightly different flavour, substitute 1/4 cup of the water for Burgundy or other dry red wine.

2 (10 3/4 ounce) cans Campbell's Golden Mushroom soup
1 1/2 lbs ground beef
1/2 cup dry breadcrumbs
1/4 cup finely chopped onion
1 tablespoon Worcestershire sauce
1/8 teaspoon pepper
1 egg, beaten
6 medium potatoes, quartered
6 medium carrots, cut into 2-inch pieces
3/4 cup water
fluted fresh mushrooms (optional)
fresh rosemary sprig (optional)

Steps:

  • In a large bowl, mix thoroughly HALF A CUP of soup, beef, bread crumbs, onion, Worcestershire sauce, pepper and egg.
  • In a 3-quart oblong baking dish, firmly shape meat into 8x4-inch loaf. Arrange potatoes and carrots around meat loaf.
  • Bake at 375°F for 45 minutes. Spoon off fat.
  • Meanwhile, in a small bowl combine remaining soup and water. Pour soup mixture over vegetables and meat loaf.
  • Bake 30-45 minutes longer or until vegetables are fork-tender and meat loaf is no longer pink. (160-170°F internal temp.).
  • To serve, arrange meat loaf with vegetables on platter. Spoon some sauce over meat loaf; pass remaining sauce.
  • Garnish with fresh rosemary and mushrooms, if desired.

nonstick cooking spray
1 pound ground chicken
1 medium sweet onion, finely chopped
1 medium carrot, finely chopped
¼ cup grated Parmesan cheese
¼ cup whole wheat bread crumbs
1 slice whole grain bread, cut into cubes
1 large egg
3 cloves garlic, minced
2 tablespoons 1% milk
1 cube chicken bouillon, crushed
¼ teaspoon ground black pepper
⅛ teaspoon ground sage

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a 7x11-inch glass or thick metal pan with nonstick spray.
  • Combine ground chicken, onion, carrot, Parmesan cheese, bread crumbs, bread cubes, egg, garlic, milk, crushed bouillon, pepper, and sage in a large bowl. Use your hands to mix ingredients thoroughly. Form mixture into a loaf and place in the center of the prepared pan.
  • Bake in the preheated oven until an instant-read thermometer inserted in the center reads at least 165 degrees F (74 degrees C), about 45 minutes.

For the Meatloaf:
2 pounds ground beef (85% lean)
2 tablespoons grated onion
1 large egg
3/4 cup​ quick oats
3/4 cup milk
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried herb blend (fines herbes, or dried leaf sage or thyme)
Optional: 1/2 teaspoon crushed garlic
For the Mushroom Gravy:
1 tablespoon vegetable oil
1 tablespoon butter
12 to 16 ounces mushrooms, sliced
2 tablespoons all-purpose flour
1 1/2 cups beef stock
1 teaspoon gravy browning sauce (Gravy Master or Kitchen Bouquet)
1/2 teaspoon Worcestershire sauce
Salt to taste
Pepper to taste

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F. Lightly grease a 9 x 5 x 3-inch loaf pan.
  • In a large bowl, combine the ground beef, grated onion, egg, oats, milk, ketchup, Worcestershire, 1 teaspoon salt, 1/4 teaspoon pepper, herb blend, and optional garlic. Blend well.
  • Pack the meatloaf mixture loosely in the prepared loaf pan. Bake 1 1/2 hours.
  • While the meatloaf is baking, make the gravy. In a medium saucepan over medium heat, melt oil with butter.
  • Add the mushrooms and sauté, stirring, until tender and browned and the liquid has evaporated. Stir in the flour until well blended.
  • Add the beef stock and continue cooking, stirring, until thickened.
  • Add the gravy browning sauce (Gravy Master, Kitchen Bouquet, etc.) and Worcestershire sauce.
  • Continue simmering, uncovered, stirring frequently, for 3 minutes. Taste and add salt and pepper, as needed.
  • Spoon the gravy over the sliced meatloaf or serve it in a bowl on the side.
  • Enjoy.
