4 pork loin (or rib chops, about 3/4-inch thick)
1 teaspoon coarse salt
1 teaspoon black pepper, (coarsely ground)
1/2 teaspoon culinary lavender, (dried*)
2 teaspoons fresh thyme (leaves, minced)
1 teaspoon fresh rosemary (leaves, minced)
1 tablespoon olive oil, (extra-virgin)

Steps:

  • In a small bowl, combine salt, pepper, lavender, thyme, rosemary, and olive oil; rub mixture onto the pork chops. Cover the pork chops with plastic wrap and let sit 1 to 2 hours at room temperature.
  • Preheat Barbecue grill. Place pork chops onto hot grill. Cover barbecue with lid, open any vents, and grill 4 to 5 minutes; turn and grill an additional 3 to 4 minutes or until the internal temperature reaches 155 degrees F. on a meat thermometer.
  • Remove from barbecue and serve.

Grilled Pork Chops are super easy to make, and the meat is always juicy and flavorful. All you need is to fire up the grill and a have a perfect family dinner in less than 30 minutes!

4 bone-in thick center cut or none in
1/2 gallon water
1/2 cup kosher salt*
1/2 cup honey
1 tablespoon apple cider vinegar
2 dried bay leaves
4 cloves garlic (peeled and smashed)
2 teaspoons whole black peppercorns
3 sprig fresh rosemary
1 lemon (sliced)
2 tablespoons extra virgin olive oil (or canola oil)
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons paprika
2 teaspoons salt
1 teaspoon black pepper

Steps:

  • Combine all the brine ingredients in a large bowl, add pork chops, cover and brine for 8 to 12 hours for best results.
  • Heat grill to about 450 degrees Fahrenheit, brush it well with olive or canola oil.
  • Discard the brine, pat dry the chops well with paper towels.
  • In a shallow bowl, combine garlic powder, onion powder, paprika, salt and pepper. Brush the pork chops with olive oil, toss into the mixture on both sides.
  • Grill the chops about 4 to 5 minutes per side or until no longer pink in the middle and the internal temperature is 145 degrees F.
  • Let rest 5 to 10 minutes before serving.

4 pork chops, boneless, center cut
3-4 clove garlic, sliced thin
1 Tbsp salt
1 tsp dill seed (not dill weed)
1 tsp paprika
1/2 tsp red pepper flakes
1 tsp garlic powder
1 tsp rosemary, dried & crushed
1/2 tsp thyme
balsamic vinegar
olive oil
horseradish sauce

Steps:

  • 1. Preheat oven to 350.
  • 2. Cut 2 slits in each chop. Slide the sliced garlic into the slits.
  • 3. Mix remaining dry ingredients. Rub onto both sides of meat.
  • 4. Place on baking sheet with a rack to keep them raised up. Sprinkle with Balsamic Vinegar & Olive Oil.
  • 5. Roast at 350 for 30-45 mins, or until done.
  • 6. Serve with a little Horseradish Sauce on the side for dipping.

These smothered pork chops are tender and juicy, with lots of savory pan sauce to spoon over your favorite side!

4 bone-in, center-cut pork chops (about 1/2 - 3/4 " thick)
3/4 teaspoon paprika
3/4 teaspoon granulated garlic
3/4 teaspoon granulated onion
Pinch white pepper
Salt
Black pepper
1/2 (heaping) cup flour, plus 2 leveled tablespoons, divided use
Avocado oil, or other "high heat" cooking oil
2 tablespoons unsalted butter
2 small onions, quartered and sliced
1/2 teaspoon Italian seasoning
1/4 cup white wine
4 cloves garlic, pressed through garlic press
2 cups chicken stock/broth
1 teaspoon thyme leaves, for garnishing

Steps:

  • Place your pork chops onto a work surface, and using a meat mallet, give each a light pounding to tenderize the meat slightly.
  • To a small ramekin, add the paprika, granulated garlic and onion, and the white pepper.
  • Season the pork chops by sprinkling over each a couple of good pinches of salt and black pepper, then sprinkle over about half of the seasoning mixture in the ramekin; flip the chops and season the other side with a couple more pinches of salt and black pepper, plus the rest of the seasoning mixture in the ramekin.
  • Add the heaping 1/2 cup of flour to a large bowl or platter, and dredge both sides of each pork chop in the flour, gently pressing, to coat; shake off any excess flour, and lay onto a plate to hold.
  • Place a large heavy bottom pan or skillet over medium high heat, and add in about 1/4 cup of oil, or enough to sear the chops; once the oil is hot, add in 2 pork chops (work in batches), and allow to sear on that first side for 4 minutes, until deeply golden-brown, then flip and sear on the second side for 3 minutes; remove from pan and place onto a plate to hold, and repeat the process with the remaining pork chops.
  • Wipe any excessively burned bits out of the pan, then add in the butter, along with about 2 tablespoons of the oil; once the butter is melted, add in the onions, along with a couple of pinches of salt and pepper, plus the Italian seasoning, and caramelize those until golden-brown, about 10 minutes.
  • Deglaze the onions with the wine (if using), and allow it to reduce for a moment; add in the garlic and stir to combine, allowing the garlic to become aromatic.
  • Next, sprinkle in the 2 tablespoons of flour and stir to combine with the onions, cooking this mixture together for about 30 seconds; next, whisk in the chicken stock/broth.
  • Reduce the heat to medium-low or low, and allow the sauce to simmer for a 30 seconds - 1 minute; then, carefully nestle each pork chop into the sauce, and insert a digital thermometer lengthwise, or horizontally, into the center of the thickest chop (the probe will go sideways rather than up and down).
  • Generously spoon some sauce over each pork chop, and allow things to gently simmer for about 5-7 minutes, or until the thermometer registers 145°; turn off the heat.
  • Allow the smothered pork chops to rest for about 10 minutes in the pan, then garnish with the fresh thyme leaves before serving with either rice or mashed potatoes

CREAMY GARLIC PORK CHOPS

These creamy garlic pork chops are smothered in a garlic cream sauce with whole garlic cloves! This recipe is quick and easy to make in about 30 minutes.

4 pork chops (see notes)
Salt & pepper (to taste)
1 tablespoon olive oil
2 tablespoons butter (divided)
1 whole head garlic (cloves peeled)
1 tablespoon flour
1/2 cup chicken broth or stock
1/2 teaspoon lemon juice
1/4 teaspoon garlic powder
3/4 cup heavy/whipping cream
Fresh parsley (chopped (optional, to taste))

Steps:

  • Take the pork chops out of the fridge 15-30 minutes prior to starting the recipe if possible. Season the pork generously with salt & pepper on both sides.
  • In a deep skillet, add the olive oil and 1 tablespoon of the butter over medium-high heat. Let the pan heat up for a few minutes, and once it's hot, cook the pork chops for 3-5 minutes/side or until golden (3 minutes for thinner chops and 5 minutes for pork chops up to 1" thick). Once the pork chops are done searing, transfer them to a plate.
  • Add the remaining butter and the garlic cloves to the skillet. Turn the heat down to medium (or medium-low if using cast iron). Cook it, stirring fairly often, for about 3 minutes or until the garlic has somewhat browned on the outside.
  • Push the garlic to one side of the pan and sprinkle the flour in (avoiding the garlic). Let it cook for around 30 seconds, and give it a stir so it's incorporated with the butter (we're making a quick roux).
  • Add in the chicken broth and lemon juice. Stir and let it cook for about a minute or until the sauce is noticeably thickened.
  • Add in the cream and garlic powder. Stir or whisk it until the garlic powder has dissolved.
  • Add the pork back in and cook for another 3-5 minutes or until the sauce has thickened up a bit (let the sauce bubble a bit but not furiously boil) and the pork chops are fully cooked through (145F minimum). Keep in mind the pork's temperature will continue to rise once you stop cooking it, so if it's close, I'd take it off the heat and let it rest for a few minutes before serving. Season the sauce with extra salt & pepper as needed and parsley if you wish.

¾ cup chicken broth

Steps:

  • Remove any excess fat from chops.
  • Sprinkle both sides of chops generously with salt, pepper and dried Italian seasoning.
  • Heat a large skillet over medium-high heat. Coat the pan with cooking spray and add a small amount of the trimmed fat from the pork chops. You want enough to render about a tablespoon of fat.
  • When the fat has rendered, add the pork chops to the pan.
  • Brown well on both sides.
  • Add the chicken broth and bring up to a boil.
  • Cover the pan and reduce the heat to low.

  • Rub pork chops with 2 tablespoons of olive oil.
  • In a small bowl mix salt, pepper and paprika and rub onto the pork chops. Set aside.
  • Place a medium skillet (to which you have a lid for) over medium-high heat. Add the remaining 2 tablespoons of oil and once it is hot add the pork.
  • Cook until golden, for about 2 to 3 minutes.
  • Flip the pork chops to the other side, cook for one minute and reduce the heat to low. Cover the skillet with a lid and cook 5 to 12 minutes (check every 2 minutes after 5 mins), or until an instant-read thermometer reads 145 degrees F when inserted into the thickest part of the chop. If you do not have a thermometer.
  • Transfer pork chops to a plate or cutting board and cover loosely with aluminum foil.
  • Let the pork rest for 5-10 minutes.
  • Using the same skillet, increase the heat to medium-high and add the cherry tomatoes, sear them until lightly charred, remove and set aside on a plate.
  • Add the chicken stock, vinegar, maple syrup, and brown sugar to the skillet, stir and add 2 sprigs of fresh rosemary.
  • Use a wooden spoon to scrape the bottom of the skillet to remove any bits that stuck to it. Bring the mixture a simmer and cook until reduced by half.
  • Taste and adjust for salt, acidity or sweetness.
  • Take the skillet off the stove, and when the sauce is no longer simmering, stir in the butter. Discard rosemary.
  • Add back the pork chops back into the pan and drizzle some of the sauce on top. Add back the tomatoes.
  • Sprinkle some chopped fresh parsley on top and garnish with a few fresh rosemary sprigs before serving.

  • Cook onion and garlic in hot drippings, stirring constantly, 1 minute. Add remaining 3/4 cup apple juice to skillet, stirring to loosen particles from bottom of skillet. Stir in rosemary, 1 Tbsp. brown sugar, 1 Tbsp. balsamic vinegar, and remaining 1/2 tsp. salt and pepper.
  • Bring onion mixture to a boil. Reduce heat to medium low, and simmer 3 to 5 minutes or until mixture is reduced by half.
