SAVORY ITALIAN SAUSAGE SAUCE
This is a great homemade sauce. It's savory and spicy, as well as thick and chunky. The secret is the combination of Italian sausage, green onions, red wine and red pepper flakes. Easily double or triple amount and top on anything! Even better the next day. Enjoy.

- Heat olive oil in a large skillet over medium-high heat. Saute garlic until browned. Add sausage and cook for 4 minutes, breaking apart with a spoon. Add green onions and cook until sausage is evenly browned, about 10 minutes.
- Stir in mushrooms, basil and oregano; cook for 5 minutes. Stir in tomato sauce, stewed tomatoes, and tomato paste. Add water, red wine, red pepper flakes, and sugar. Season with salt and pepper to taste. Reduce heat to low and simmer for at least 1 hour.

- In a large skillet, add 2 tablespoons of olive oil. Then bring the heat to medium-high heat.
- Add in 1 cup of finely chopped yellow onion and 2 minced garlic cloves. Stir until the onion becomes translucent.
- Then add 8 oz of sliced baby Bella mushrooms and stir until they become tender (about 2-3 minutes).
- Then pour in 2 cups puréed San Marzano tomatoes and 1 cup heavy whipping cream. Let the sauce simmer over low heat for about 5 minutes with stirring occasionally.
- In the meantime, cook 18 oz of sausage ravioli in a pot of salted boiling water. Cook al dente.
- Now remove the sauce from the heat and stir in 1 cup of grated Parmesan cheese. Then season with salt (to taste).
- Lastly, stir in the cooked sausage ravioli and garnish with 3 chopped basil leaves. Serve warm.

- Place a large Dutch oven or heavy bottom saucepan over medium-low heat. Render some fat from the ground beef and sausage, allowing a thin layer to form on the bottom of the pan while using a spatula to break the meat into small pieces, 1-2 minutes. Turn the heat up to medium and brown the meat until it’s no longer pink, 3-5 minutes. Drain through a colander and discard the fat. Set the meat aside.
- Wipe down the pot briefly to remove any excess fat, but don’t clean it. Heat the olive oil over medium heat, then add the onion along with a pinch of salt. Cook for 3-5 minutes, stirring, until soft. Add the garlic and cook for an additional minute while stirring.
- Return the meat to the pan. Add the tomato paste, crushed and diced tomatoes, basil, oregano, and brown sugar, stirring to combine. Bring to a simmer, then reduce the heat to low and cover, leaving the lid slightly ajar to let steam escape. Simmer, stirring occasionally, for 60-90 minutes (longer will give the flavors more time to mingle, but 60 minutes will do the trick).

- Start by making the sauce. Place all of the ingredients except for the pasta, sausage, and 1/2 of the can of diced tomatoes in a large pot. - Remove the Italian sausage from the skins and cook in a skillet on medium high until done. Set aside. Boil the pasta shells for about 9 minutes or until almost al dente. Drain the water and lay the shells on a flat surface to dry and cool.

- Start by putting your pork shoulder, a large metal or glass mixing bowl, meat grinder with course plate and sausage stuffer into the freezer for 1-2 hours.
- While items chill, toast fennel seeds in a small frying pan over low heat. Continuously stir until seeds are fragrant and lightly browned. In a small mixing bowl combine salt, garlic, parsley, white pepper, cayenne, fennel seed, crushed red pepper, paprika and onion powder. - While in the freezer you can start to prepare your sausage casings (if you are using sausage casings). They look fragile and thin, but they are hearty and tough! It will take a lot to rip one, so there is no need to be delicate. Remove about 12-15 feet of sausage casings and place into a bowl of lukewarm water. Rinse well, drain water. Repeat until water is clear. Carefully run water through the inside of each casing. Cover casings with fresh water and set aside.
