The BEST Mashed Butternut Squash image

Here is the BEST Mashed Butternut Squash recipe ever! Fluffy, perfectly roasted butternut squash, that comes out so creamy and buttery, finished off with fresh chives. Easy to make, and it's both vegan and gluten-free!

Provided by Amy Estes

Categories     Side Dish

Time 1h20m

Number Of Ingredients 9

1 Butternut squash (3-4lbs in size)
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 tablespoon vegan butter or regular butter if you do not need to keep this recipe vegan
2 cloves of garlic - peeled and minced
1/8 cup non-dairy milk of choice
2 tablespoons freshly chopped chives
Fresh rosemary for garnish

Steps:

  • Slice the ends off of the squash about 3/4 inch below the stem.
  • Stand the squash upright on a clean kitchen towel. Use a sharp kitchen knife and slice it down the middle.
  • Use a spoon to scoop out the seeds in each half of squash.
  • Preheat the oven to 350 degrees F and spray a baking sheet with cooking spray.
  • Place both halves of squash, cut side up onto the baking sheet. Brush each with olive oil and sprinkle with salt and pepper. Bake in the oven for 1 hour and 10 minutes, until fork-tender.

Blue Hubbard Squash Soup image

Provided by Krystelle

Categories     Soups, Stews and Chili Recipes     Soup Recipes     Vegetable Soup Recipes     Squash Soup Recipes

Time 1h30m

Yield 6

Number Of Ingredients 13

1 large Blue Hubbard squash
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
1 (2 inch) piece ginger, peeled and minced
1 teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground black pepper
1 pinch red pepper flakes
3 cups vegetable broth
1 (14 ounce) can full-fat coconut milk
1 tablespoon lemon juice

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Cut the squash in half. Remove the seeds and place the squash cut side-down on a baking sheet.
  • Roast in the preheated oven until you can pierce a fork through the flesh of the squash, about 40 minutes. Do not overcook it so it becomes mushy. Set aside.
  • Heat olive oil in a large pot over medium heat. Add onion and cook until translucent, about 3 minutes. Add garlic, ginger, salt, cinnamon, nutmeg, black pepper, and red pepper flakes. Cook and stir for 2 minutes more.
  • Peel off the skin from the squash or use a spoon to scoop out the flesh. Add squash to the pot, cover with vegetable broth, and bring to a boil. Reduce heat to low, cover, and cook, about 15 minutes.
  • Turn off heat and remove the lid. Stir in coconut milk and lemon juice and allow to cool slightly, 3 to 5 minutes. Transfer to a blender in batches, or use an immersion blender, to blend the soup until it is silky smooth.

  • Heat the oven to 400°. Put the squash slices in a large bowl, season with salt and black pepper, and drizzle with enough olive oil to coat. Toss the squash with your hands to distribute the seasoning, then transfer to two baking sheets and spread out the slices. Roast until the squash is cooked through and the edges are browned here and there, about 15 minutes. (You can roast the squash up to 3 hours in advance and hold it at room temperature.)
  • Arrange the squash on a warm platter or on individual plates, then quickly make the brown butter sauce: Melt the butter in a small skillet over medium-high heat. Add the crushed red pepper and sage, season with a little salt and black pepper, and whisk the butter and aromatics as the butter begins to bubble and brown. When the butter is foamy and nutty-smelling, in a minute or so, spoon it over the squash. Garnish with a few arugula leaves or chopped parsley and use a sharp vegetable peeler to shave Parmesan over the squash. Serve with lemon wedges.
