SAVORY CHICKPEA FLOUR PANCAKES
This recipe came from Indian Culinary Center. I was looking for any recipe to use my chickpea flour and I love it! It came out great, delicious.

Steps:
- Place chickpea flour in a large mixing bowl. Add 1 cup water and stir to make a smooth batter. Add salt, cayenne, onion, ginger, tomato, chiles, garlic and cilantro. Mix well and set aside por 15 minutes.
- Place 1/2 tablespoon of oil in a skillet(preferably nonstick) over medium heat. Stir once and place about 1/3 cup batter into center of skillet. Tilt pan to spread( as if making a crepe). Cover and cook for three minutes. Turn over and cook, uncovered, for one more minute; it should be golden. repeat with remaining batter, stirring before using.
- Serve hot with chutney.

- Preheat oven to 450˚F (230˚C).
- Place a 12-inch (30 cm) cast iron pan in the oven and let heat up until ready to use.
- In a bowl, add the chickpea flour, water, 2 tablespoons of olive oil, salt, and whisk to combine.
- Cover the bowl with a towel or plastic wrap and let rest at room temperature for at least 30 minutes.
- Preheat the oven to broil.
- Carefully remove the hot cast iron pan from the oven, and pour in the remaining 1 tablespoon of olive oil, swirling the pan so that the bottom is fully coated.
- Gently pour in the chickpea flour batter into the pan, swirling the pan so that the batter covers the entire pan.
- Place the cast iron pan in the oven and broil for 5 minutes.
- Remove the cast iron pan and top with marinara sauce, leaving a 1-inch (2 cm) border of the crust. Top with shredded mozzarella and red pepper flakes.
- Broil for 2-3 more minutes, until the cheese has melted.
- Sprinkle with flaky sea salt and basil.
- Enjoy!

- In a medium bowl, whisk together chickpea flour, cumin and turmeric powder, granulated garlic, paprika, salt, pepper, and baking soda. Add water and lime juice/apple cider vinegar, mix well to incorporate. The resulting mixture should be thicker than pancake batter. If it's too thick, add more water, one tablespoon at a time. If it's too thin, add more chickpea flour.
- Preheat a large nonstick/cast iron skillet. Add 1 Tbsp avocado or grapeseed oil OR spray with cooking spray. Chop up the vegetables while the skillet is heating.
- Mix the chopped vegetables into the batter mixture. It's OK if it looks like there isn't enough batter - just make sure that all veggie bits are covered.
- Spoon the batter onto the preheated skillet to form 1/2 inch-thick pancakes*. Cover with a lid, and cook over medium heat for 2-3 minutes, or until the bottom looks golden brown. Flip, cover again, and cook 2 minutes more. Repeat with the rest of the batter.

- Mix: In a medium size bowl, combine flour, water, baking soda, optional turmeric, cumin, garlic powder and salt to taste. Mix well ensuring all the flour lumps are gone. Add in lemon, stir and you will notice the batter rise and foam a bit. Add in veggies and combine thoroughly. (Note: I don’t really measure the vegetables, so this is an approximation)
- Cook: Pour 1/2 of the mixture onto the preheated griddle or skillet. You can use your spatula to move the veggies around and flatten as needed if they are piled up in areas. Also you can help make your pancake round by gently pushing in the edges where needed. There may be times when it appears that you have more veggies than batter, don’t panic….in a few minutes the batter will puff up from the baking soda and fill in making it look fluffy and full. Let cook for 5 minutes. Flip and cook another 5 – 7 minutes, making sure the batter cooks throughout.
- Serve with your choice of condiments. A thinned hummus would also be great! Pairs well with fresh fruit on the side.

- Saute veggies of your choice in a skillet over medium-high heat (or use any leftover veggies in your fridge). I sautéed mushrooms, onions, and red peppers. Then I added a handful of chopped spinach and black beans right at the end and stirred until the greens wilted. Set aside.

(I did 2 batches 3 pancakes in each - it will vary depending on how many veggies you are using).Cook until brown and crispy (3-5 minutes). Flip and cook on other side. You may need to reduce the heat to medium if the pan is running too hot.
