This Breakfast Casserole with Bacon is a classic baked egg casserole loaded with savory rich flavors. - Preheat the oven to 350˚F.
- In a large bowl, mix the eggs, heavy cream, 1/2 cup cheddar, salt and pepper together. Then pour the mixture in a greased 9x13" casserole dish.
- Drop the cubes of cream cheese evenly throughout the egg mixture.
- Bake for 35 minutes, then sprinkle the remaining cheddar cheese and bacon over the top of the casserole and then return to finish baking 10-20 minutes or until the center is just set and springs back when touched.

- Preheat oven to 325 degrees.
- Cook the breakfast sausage as directed on the package. Crumble and drain.
- In a large bowl combine the eggs, milk, dry mustard, pepper, and salt. Mix thoroughly.
- Lay half the bread cubes in the bottom of a greased 9 x 13 casserole dish.
- Add half the cheese and sausage to the casserole dish along with half of any of the optional ingredients if desired.
- Repeat layer of bread, cheese, sausage, and optional ingredients if used.
- Pour egg mixture over the top of the casserole.
- Bake for about an hour or until eggs are set. Cover with foil if top browns too quickly.
SAVORY EGG CASSEROLE
My parents always served this egg casserole for special occasion breakfasts, and it remains one of my favorites. In the summer, they often served it along with tomatoes from the garden or fresh fruit and in the winter we often served it with hearty bread or grits and juice. Delicious!

- Preheat oven to 350 degrees and spray a large rectangular glass baking dish (9×13) with cooking spray.
- Open and drain each can of chiles. Stuff each chili with finger sized pieces of monterey jack cheese and arrange in the bottom of the baking dish.
- Sprinkle 1 ½ cups of shredded cheddar colby jack over chiles.
- In a separate medium size mixing bowl combine eggs, flour, milk, salt, and dry powdered mustard and whisk until most of the clumps are gone (some may remain).
- Pour egg mixture over chiles.
- Bake uncovered for 40 minutes. Add remaining cheese to the top of the casserole and return to 350F degree oven for an additional 5 minutes or until firm.
- Remove and allow to sit for 5 minutes before serving.

- Bring water to a boil in a saucepan. Add oats, reduce heat to medium-low, and cook until tender, 10 to 15 minutes, adding more water if oats get too dry.

- In a medium bowl beat the eggs and the half and half with salt, pepper, paprika and garlic. Set aside.
- Spray an oven safe 7-inch dish that fits inside your Instant Pot with non-stick cooking spray.
- Lightly sprinkle with salt and pepper the hashbrowns and add them to the prepared pan.
- Then layer on the spinach, green onions, bacon bits, and cheddar cheese.
- Pour the egg mixture on top of everything.
- Add 1 cup of water to the bottom of the Instant Pot.
- Place a trivet inside the pot.
- Cover the casserole dish loosely with foil. Use a foil sling to lower the pan into the Instant Pot, onto the trivet.
- Secure and lock the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 22 minutes on high pressure.
- After pressure cooking, let the pressure release naturally for 10 minutes and then move the valve to venting to quick release the remaining pressure.
- Open the pot and carefully remove the pan. Discard the foil. Optionally, sprinkle some cheese on top and place the casserole under your oven's broiler for a couple minutes.
- Serve.
