GRANDMA'S FALL OFF THE BONE BBQ COUNTRY STYLE PORK RIBS
My Grandma's recipe for country style pork ribs baked in the oven are literally fall-off-the-bone tender and topped with jammy sweet onions in a homemade BBQ sauce.

- Line a baking sheet with a cooling rack. Working in batches, season the pork ribs on all sides with kosher salt and black pepper and lightly toss in flour. Transfer the ribs to the baking sheet and set aside.
- Add 1 tablespoon of the oil to a large cast iron skillet or dutch oven (with a lid) over medium/medium high heat. When the oil is warm and shimmering, brown the ribs in batches, turning on all sides until golden, about 15-20 minutes per batch. Be careful not to overcrowd the pan or the ribs will steam and won't get that delicious golden crust.
- Transfer the browned ribs back to the baking sheet and wipe any burned pieces out of the pan. Add the remaining oil, and continue browning the rest of the ribs.
- While the ribs are cooking, mix the BBQ sauce ingredients together and preheat the oven to 325°F.
- Add all of the ribs back to the dutch oven, snuggling them evenly together. Scatter the tops with the sliced onions. Whisk the BBQ sauce and pour evenly over the onions and ribs.
- Cover tightly with the lid and bake for 1 1/2 to 2 hours or until the onions are soft and jammy and the pork is tender. Midway through cooking, I usually open the oven and spoon the sauce over the ribs and onions.
- Skim any excess fat from the sauce if needed (depending on how fatty the ribs are) and serve hot with au gratin or mashed potatoes with the sauce and onions spooned on top.

- Heat oven to 350°F.
- In 13x9-inch glass baking dish, mix broth, wine, tomato sauce, thyme and marjoram.
- In heavy-duty resealable plastic food-storage bag, place flour, salt and pepper; shake to mix. Add ribs; shake to coat. In baking dish, beat excess flour mixture (about 1 tablespoon) into tomato sauce mixture, using wire whisk.
- In 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium-high heat. Cook ribs in oil about 5 minutes, turning once, until brown. Place ribs in baking dish; turn to coat with sauce mixture. Add remaining 1 tablespoon oil to skillet; increase heat to high. Cook carrots, celery, onion and garlic in oil 3 minutes, stirring frequently.
- Add carrot mixture to ribs and sauce. Cover tightly with foil. Bake 1 hour 30 minutes to 2 hours or until ribs are tender.

COUNTRY STYLE RIBS WITH GRAVY

- Cut the onion into slices and place them into the bottom of a 4 quart slow cooker. Click for a 4 quart crockpot.
- Layer the country style pork ribs on top of the onions.
- Lightly sprinkle the ribs with kosher salt and black pepper.
- In a bowl, stir together the cream of mushroom soup and sliced mushrooms.
- Add the mushroom gravy over the pork ribs.
- Sprinkle the paprika over the soup.
- Cover and cook on the low setting for 8 hours, or on high setting for about 4 hours.
- Remove the pork to a serving plate and keep warm.
- Stir together the flour and water.
- Pour the flour mixture into the liquid in the crockpot to thicken the gravy. Repeat these steps for thicker gravy.
- Turn the slow cooker to the HIGH heat setting and continue cooking for about 3-5 minutes or until gravy is thickened. Serve and enjoy.

SPARERIBS WITH SAVORY SAGE RUB

OVEN-BRAISED COUNTRY STYLE PORK RIBS WITH APPLE CIDER

- Gather all ingredients.
- Heat the oven to 300 F (150 C/Gas 2).
- Sprinkle the pork ribs with kosher salt and freshly ground black pepper.
- Heat 2 tablespoons of olive oil in a large Dutch oven over medium heat. Add the ribs, in batches if necessary, and sear on all sides. Remove to a plate and set aside.
- Add the remaining 1 tablespoon of olive oil to the pan. Add the onion, carrot, and celery. Cook, stirring until onion is translucent and lightly browned. Add the minced garlic and continue cooking for 1 to 2 minutes longer.
- Add the ribs back to the pan. In a bowl, combine the cider, vinegar, chicken broth, and tomato paste; blend well. Add the bay leaves and thyme; pour over the ribs. Cover the Dutch oven and bake for 3 hours, or until very tender.
- Skim the fat from the juices and remove bay leaves. Taste and add salt and pepper, if needed. If desired, thicken the juices (see note below).

Note: To thicken the juices, combine 1 1/2 tablespoons of flour with 2 tablespoons of cold water, stirring until smooth. SAVORY GOLDEN COUNTRY RIBS WITH GUACAMOLE: CARNITAS CON GUACAMOLE

- For serving:
- Trim off all but a thin layer of fat from the pork.
- The slow-fry method: Melt the lard in a large (4-quart), heavy saucepan over medium-low heat. When it has melted but is not yet very hot, add the pork, water and lime zest. Cook with the lard at a gentle simmer, turning the pork occasionally, for about 40 minutes, until it is barely tender. Raise the heat to medium-high. If all of the water hasn't yet evaporated, the lard will come to a rolling boil, which will eventually diminish into small bubbles as the water evaporates. After the change occurs, the carnitas will need about 10 minutes to brown. Watch them carefully and remove when they are a light golden brown. Drain on paper towels and sprinkle with salt.
- The boil-then-fry method: Place the meat in a single layer in a wide, heavy saucepan, add enough water to cover the meat by 1/2-inch, measure in the salt, and set over medium heat. Simmer, partially covered, turning the pork occasionally, until the meat is barely tender, about 40 minutes. Uncover, raise the heat to medium-high, and quickly boil away the liquid.
- When you hear the meat begin to fry in its own rendered lard (once the water is gone), turn the heat down to between medium and medium-low. Let the pork fry, turning frequently, until evenly browned, about 30 minutes. Remove the ribs from the pan, drain on paper towels, and sprinkle with a little salt.
- While the meat is cooking, prepare the guacamole, scoop it into a serving bowl and garnish. Serve the crispy ribs on a warm serving platter and pass the guacamole to eat along with them. Or cut the meat off the bones and roll with the guacamole into tacos.
- In a medium-size bowl, mix the finely chopped onion and chiles with the optional tomato, garlic, and cilantro.
- Close to the time you are going to serve, halve the avocados lengthwise by cutting from the stem to flower ends, around the pits. Twist the avocado halves in opposite directions to loosen the meat from pits, then scoop out the pits, and reserve. Scrape the avocado pulp from the skins and add it to the bowl.
- Using your hand or a spoon, roughly mash the avocado while mixing in the other ingredients, making a course, thick mass. Flavor with salt, then enough lime juice to add a little zing, if you wish. Return the pits to the guacamole and cover with a sheet of plastic wrap pressed directly onto the surface of the mixture. Set aside for a few minutes to let the flavors blend.
- The guacamole is very attractive in a pottery bowl or Mexican mortar, sprinkle with chopped onion, cilantro, radish slices and/or queso fresco (cheese); radish roses really dress it up.

SAVORY COUNTRY-STYLE SPARERIBS
This recipe is a result of trying different combinations over the years. It will continue to evolve because, for me, a recipe is just a starting point when I cook. Country-style ribs are not really ribs in the true sense, they are meatier and often are boneless. But the end results are just as delicious! These are good served with a tossed green or Caesar salad and Recipe #113186.

- Preheat oven to 325°F.
- Place spare ribs in a large bowl or gallon size zip-lock bag.
- Add olive oil and zesty Italian dressing packets.
- Mix well. Refrigerate and marinade for at least 1 hour. (You can leave it in the marinade over night if you want).
- Microwave on high for 10-15 minutes, or until ribs are brown, but not cooked through. I microwave them in the bag but you can put them in a microwave safe dish if you prefer. (I use a freezer bag which is thicker and holds up to the heat. I open the seal to vent and place it in a bowl or on a plate - just in case - but have never had a problem).
- While ribs are in microwave, combine the remaining ingredients in a medium saucepan and cook over medium heat until well dissolved and heated through.
- Remove ribs from bag and place in a deep 9 x 13 pan that has been prepared with non-stick cooking spray.
- Pour sauce over ribs, covering evenly.
- Bake for 1 hour, until ribs are cooked through.
- Baste occasionally, if desired.
- NOTE:***These can also be cooked on the grill with delicious results, just baste them frequently and watch them carefully so they do not burn.
