Made in one dish with tomatoes, olives and onions, this Mediterranean Baked Cod is an easy and healthy weeknight dinner!

1 ½ pounds cod fillet
1 small red onion (OR large shallot, sliced)
3 cloves garlic (crushed)
1 pound cherry tomatoes (halved)
¼ cup sliced black olives
1 tablespoon olive oil
1 teaspoon Italian seasoning
salt & pepper (to taste)
¼ cup white wine (OR water)
4 tablespoons butter (chopped)

Steps:

  • Prep: Preheat the oven to 400°F. Lightly grease a rectangular baking dish that will comfortably hold all your cod pieces and tomatoes and place the fish inside.
  • Add vegetables: Scatter the onion, garlic, tomatoes and olives around the fish.
  • Season: Drizzle the olive oil all over the ingredients in the dish. Sprinkle with Italian seasoning and season with salt and pepper.
  • Finish and bake: Pour the water into the dish. Scatter the butter evenly over the dish. Bake for 15-20 minutes, or until the tomatoes and fish are cooked.

½ cup uncooked orzo pasta
1 tablespoon butter, divided
1 (12 ounce) can stewed tomatoes
1 (12 ounce) can low-fat cream of celery soup
1 ½ tablespoons capers
1 tablespoon olive oil
2 (6 ounce) fillets cod fillets
salt and ground black pepper to taste
½ cup shredded Cheddar cheese

Steps:

  • Bring a pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until cooked through but firm to the bite, about 11 minutes. Drain.
  • Preheat oven to 425 degrees F (220 degrees C). Grease a 13x9-inch baking dish with some of the butter.
  • Stir tomatoes, cream of celery soup, and capers together in the prepared dish.
  • Bake tomato mixture in preheated oven for 10 minutes. Stir orzo into the tomato mixture.
  • Melt remaining butter with olive oil in a skillet over medium-high heat. Season cod with salt and pepper; fry in the butter mixture until browned, about 90 seconds per side. Transfer browned cod to the baking dish. Pour any drippings from the skillet over the cod fillets. Sprinkle Cheddar cheese over the cod.
  • Bake in the preheated oven until the fish flakes easily with a fork, about 20 minutes.

1 lb. cod (1/2 lb per person)
1/4 c. extra virgin olive oil
4 cloves garlic, sliced thinly
1 can diced tomatoes (28 oz)
1/3 lb pitted cured black olives * see note above
1 1/2 t assorted dried herbs such as herbes de provence, thyme, oregano, basil...
fresh ground pepper to taste

Steps:

  • gently wash fish in cold water, pat dry with paper towels. heat olive oil over medium heat in med/lg. stainless brasier or dutch oven that can be covered and transfered to oven from stove top. add garlic and tomatoes with juice and reduce for 3-4 minutes. stir in olives and herbes. pepper to taste. turn off heat. when ready to place in oven, gently place cod fillets on top of tomato/olive mixture. drizzle top of fish with olive oil. cover and place in oven. bake 12-15 minutes. serve immediately. i like to serve over rice, preferably a nutty brown rice blend.

Add tomatoes, olives, red pepper flakes, half the herbs, water, and a pinch salt and pepper if desired; cook 1-2 minutes. Reduce heat to medium; return fish to pan, gently nestling the pieces among tomato mixture so they touch pan bottom. Cover; cook until fish is just opaque in center and tomatoes are heated through, 2-3 minutes. Sprinkle with remaining herbs; serve immediately with optional lemon wedges.
