MY FAVORITE CHICKEN SALAD
I'm a huge fan of chicken salad and have tried so many different variations over the years, but this one is by far my favorite. Simple, refreshing flavors and great texture make it wonderful on a sandwich or just served over a bed of lettuce!

Steps:
- Stir chicken, celery, pecans, mayonnaise, yellow onion, relish, mustard, pepper, dill, lemon juice, sugar, salt, garlic powder, and paprika in a bowl until well combined. Refrigerate at least 1 hour before serving.

CHICKEN SALAD SANDWICH
Steps:
- Put chicken in a bowl and use a fork to shred it up (if using canned chicken).
- Add the rest of the ingredients. If necessary, add additional mayonnaise or seasoning to taste.
- Chill well. Serve on bread of your choice as a sandwich or use as a dip with crackers.
- Note: This chicken salad can be made a day or two ahead of time.

Steps:
- Add the raw chicken breast to the bottom of a large pot.
- Add the salt, peppercorns, smashed garlic cloves, and bay leaves.
- Cover the chicken with cold water.
- Place the lid on the pot, and bring the water to a boil.
- Reduce to a low boil or rapid simmer, and cook for 20-25 minutes or until the internal temperature of the chicken reaches 165F.
- Remove the chicken to a cutting board to cool.
- Chop or shred the chicken.
- Yields 6 cups of cooked chicken. You can skip this altogether and purchase cooked chicken breast instead.
- Chop the onion, celery, scallions, and parsley.
- Combine the yogurt and mayo in the bottom of a large mixing bowl. Add the lemon juice, dijon, celery seed, poppy seeds, and salt, and whisk together to form a dressing.
- Fold in the cooked chicken and the diced onion, celery, scallions and parsley.
- Taste for seasoning.

- Peel papaya. Cut flesh into a fine julienne. Discard seeds. Reserve.
- With a mortar and pestle, pound chilies and garlic together to form a chunky paste.
- Add peanuts, dried shrimp, tomatoes, and beans. Mix to incorporate.
- Add fish sauce, palm sugar, and lime juice.
- Add shredded papaya, fold it in.
- Put on a serving platter and garnish with red cabbage, fresh bean sprouts and long beans.

MY FAVORITE SAVORY CHICKEN SALAD
This is for people who cringe at the thought of fruit in their chicken salad! There are no raisins... no grapes... no pineapple bits... nothing sweet in this recipe!! I grew up on the salty flavors of the chicken salad from the New York Deli in Boulder, CO. It was delicious! They closed many years ago - and that drove me to make my own version. Here it is! Serve on a toasted bagel (my favorite) or stuff in a pita, or in a croissant - fancy! Always delicious!

- Cut of your cooked chicken into small, bite size pieces (or you can shred your chicken). Mix all ingredients together in a medium bowl, combine well. That's it!
- TIPS:.
- Watch your mayonnaise as you go -- we like ours on the dry side -- if you love mayo - you can always add more -- but it's really hard to take out if you add too much. Be careful people! I recommend Hellmans Brand mayo -- good flavor.
- You could add some slivered almonds - if you like that kind of thing.
- Also - you can use any kind of cooked chicken: baked, boiled, sauteed, crock pot -- a roasted chicken from the grocery store! It all works and tastes great!
- Take a little nibble of your mixture and see how it tastes. Adjust seasonings to taste. My mom always said that if your recipe doesn't taste quite right -- add a little more salt. That was her secret -- and she was right!
- Slather your chicken salad on your favorite bread of choice and enjoy!
