This is my favorite chicken recipe. It is delicious. My whole family loves it.

4 skinless, boneless chicken breast halves
ground black pepper to taste
4 slices Swiss cheese
1 (10.75 ounce) can condensed cream of chicken soup
¼ cup milk
1 cup dry bread crumbs
3 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken breasts in a 9x13 inch baking dish. Season with ground black pepper to taste. Top each breast with a slice of cheese.
  • Mix together the soup and milk and pour mixture over chicken. Sprinkle bread crumbs on top and drizzle with melted butter/margarine. Bake covered in the preheated oven for 30 minutes. Uncover and bake for another 20 minutes or until golden brown.

3 tablespoons water
4 boneless skinless chicken breast halves (6 ounces each)
2 large red potatoes, cubed
1 large onion, halved and cut into small wedges

Steps:

  • In a large bowl, combine the soup mix and water. Add the chicken, potatoes and onion; toss to coat. Transfer to a greased 13-in. x 9-in. baking dish. , Bake, uncovered, at 350° for 40-45 minutes or until vegetables are tender and a thermometer reads 170°, stirring occasionally.

This oven-baked chicken has a golden brown crunchy coating made with Parmesan cheese mixed with bread crumbs.

1/2 cup dried bread crumbs
1/4 cup grated Parmesan cheese
2 tablespoons finely chopped fresh parsley
1/2 teaspoon pepper
1/4 teaspoon salt
1/2 cup Land O Lakes® Butter melted
2 teaspoons finely chopped fresh garlic
6 (4-ounce) boneless skinless chicken breasts

Steps:

  • Heat oven to 375°F.
  • Combine bread crumbs, Parmesan, parsley, pepper and salt in shallow bowl; set aside.
  • Combine melted butter and garlic in 9-inch pie pan. Dip 1 chicken breast at a time into butter mixture; place into bread crumb mixture, turning to coat evenly. Place chicken breasts into ungreased 13x9-inch baking pan. Drizzle with any remaining butter mixture.
  • Bake 25-35 minutes or until internal temperature of chicken reaches at least 165°F, is lightly browned and juices run clear when pierced with fork.

1/4 cup milk

1 cup frozen cut green beans, thawed
1 1/4 cups Original Bisquick™ mix
1/4 cup cold butter or margarine, cubed
1 teaspoon dried sage leaves
1 egg, slightly beaten

Steps:

  • Heat oven to 400°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In baking dish, mix chicken, soup, milk, cheese and green beans.
  • In medium bowl, mix Bisquick mix, butter and sage with fork or pastry blender until crumbly. Stir in egg. Sprinkle over chicken mixture.

1/4 cup Dijon mustard
3/4 cup Original or Reduced Fat Bisquick™ mix
1 1/2 lb small red potatoes, cut into fourths
1 medium bell pepper, cut into 1/2-inch pieces
1 medium red onion, cut into 16 wedges
Cooking spray
1/4 cup grated Parmesan cheese
1 teaspoon paprika

Steps:

  • Heat oven to 400°F. Spray 15x10x1-inch pan with cooking spray.
  • Brush chicken with 2 tablespoons of the mustard, then coat with Bisquick mix. Place 1 chicken breast in each corner of pan. Place potatoes, bell pepper and onion in center of pan; brush vegetables with remaining 2 tablespoons mustard. Chicken and red potatoes baked in a savory sauce. This is a fast and easy dinner. I found this recipe in Taste Of Home Quick Cooking 2005. My future hubby and I really enjoyed this dish we thought it was so tasty. When I made this I made several minor changes to the recipe. I used 3 chicken quarters (bone-in) that I cut into pieces to make a thigh and leg, 8 small red potatoes and 2 small onions. Next time I make this I plan to bump up the onions as we enjoy baked onions. I may add some sliced carrots to the mix.
